Les Trois Chevaux is a fine dining restaurant in New York City. Owned and run by Angie Mar, it opened in July 2021 and serves French cuisine.

Description

The interior was designed by Brenda Bello and Joel Medina, while the staff's uniforms were designed by Christian Siriano. The restaurant's dress code mandates that male diners must wear jackets—an homage to Mar's father, who always wore one when dining out—and prohibits blue jeans, shorts, and sneakers. [1] [2] The main dining room can seat 37 diners, while the bar can accommodate nine more. [3] The menu contains modern French cuisine, with dishes such as frog legs, sweetbreads, foie gras, and pigeon breast. [4] A predominantly French and American wine list is also available. [3]

History

Angie Mar owned and ran The Beatrice Inn in New York City from 2016 till December 2020, when high rent and the COVID-19 pandemic led to the restaurant's closure. Mar initially announced that the restaurant would be reopening right next door at West 12th Street in Greenwich Village and renamed The Beatrice. [5] However, at the start of 2021, she decided to open a completely new restaurant instead, named Les Trois Chevaux or "The Three Horses". [6]

While The Beatrice Inn was a steakhouse, Les Trois Chevaux would not have steak on the menu and would focus on French cuisine instead. [7] According to Mar herself, she had been inspired by "great French restaurants of eras past" including La Côte Basque and Lutèce. [8] The menu was developed in consultation with Jacques Pépin, who also suggested the restaurant's name. [9] Les Trois Chevaux opened on July 8, 2021. [4] [10]

La Caravelle was a restaurant in New York City, specializing in French cuisine. It opened on September 21, 1960, at 33 West 55th Street in Manhattan. The restaurant was established by Fred Decré and Robert Meyzen, with Roger Fessaguet as head chef, and took its name from the type of sailing ships Christopher Columbus sailed on his voyages to the New World. Like most European restaurants, La Caravelle had a menu that changed daily. This made the restaurant popular with new customers and also brought them back regularly. Salvador Dalí, John Lindsay, Leland Hayward, Walter Cronkite and Dorothy Kilgallen often dined at the restaurant in its early years. President John F. The Beatrice Inn was a restaurant and former nightclub in New York City. It opened in the 1920s as a speakeasy which became an Italian restaurant from the 1950s. From 2006 to 2009, it was a prominent nightclub but was shut down by law enforcement and reopened as a Spanish restaurant a year later. In 2012, Vanity Fair editor Graydon Carter assumed ownership of The Beatrice Inn. Carter sold the business to the restaurant's executive chef Angie Mar in 2016. The restaurant closed in December 2020.
