The Treaties of Tilsit, also collectively known as the Peace of Tilsit, were two peace treaties signed by French Emperor Napoleon in the town of Tilsit in July 1807 in the aftermath of his victory at Friedland, at the end of the War of the Fourth Coalition. The first was signed on 7 July, between Napoleon and Russian Emperor Alexander I, when they met on a raft in the middle of the Neman river. The second was signed with Prussia on 9 July. The treaties were made at the expense of King Frederick William III of Prussia, who had already agreed to a truce on 25 June after the Grande Armée had captured Berlin and pursued him to the easternmost frontier of his realm.

Signatories demanded unification of Lithuania Minor and Lithuania Proper into a single Lithuanian state. This would mean detaching the northern areas of East Prussia, inhabited by Prussian Lithuanians, from the German Empire.

Cheese is a type of dairy product produced in a range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk. During production, milk is usually acidified and either the enzymes of rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout.

A Franco-Persian alliance or Franco-Iranian alliance was formed for a short period between the French Empire of Napoleon I and Fath Ali Shah of Iran against Russia and Great Britain between 1807 and 1809. The alliance was part of a plan to gather extra aid against Russia and by Persia's help, having another front on Russia's southern borders, namely the Caucasus region. The alliance unravelled when France finally allied with Russia and turned its focus to European campaigns.

Washed-rind or smear-ripened cheeses are cheeses which are periodically treated with brine or mold-bearing agents. This encourages the growth of certain bacteria on their surface which give them distinctive flavors. There are hard and soft washed-rind cheeses. The softer ones are sometimes distinguished as "smear-ripened". Conversely, the term "washed rind" is sometimes reserved only for the hard ones.

Johanne (Hanne) Ane Margrethe Nielsen was a Danish farmer who may have invented Havarti cheese. In the 1800s, Nielsen traveled around Europe to learn about cheesemaking. Her farm was named Havarthigaard and was close to Copenhagen. After returning from her travels, she developed the technique to create a new type of cheese. She was also a teacher, writer, and an accountant for the profit made from her butter and cheese. Her butter and cheese were served to royal families, including a cheese made with cumin that was served to King Christian IX of Denmark. She was denied membership of the Royal Danish Agricultural Society although she had sought the assistance of dairy scientist Thomas Segelcke. Despite being skeptical of female accountants, Segelcke included her accounting method in a book he published.
