Bundobust in an Indian Street Food restaurant, with venues in Leeds, Manchester and Liverpool. It started in Leeds in 2014 by Mayur Patel and Marko Husak from Bradford. [1] . [1] [2] .
It specialises Indian Street Food and sharing spreads, inspired by Gujarat and beyond, alongside craft beer brewed at their very own Bundobust Brewery in Manchester.
By 2026, Bundobust was operating 4 restaurants across Leeds, Liverpool & Manchester. The company has gained recognition in the UK food scene, being named in the Observer Food Monthly's "OFM 50" list of top food and drink businesses, featured on Rick Stein's BBC show "Yorkshire Food Stories", and shortlisted for a Deliveroo Restaurant Award in 2025. [3] [4] [5]
In past years picked up national awards like ‘Best Innovation’ at The Casual Dining Awards ‘UK’s Best Taproom’ at the SIBA Awards, Best Food Offering at Leeds Oliver Awards – all while trying to be a positive force for independent hospitality.
Each venue has its own distinct character ranging from beer hall to modern taproom to cosy pub, all with Bundo’s signature casual, lively vibe and service. Tables are available to book for food, but all venues are welcoming to anyone who wants to come in for a quick drink, or to take away food.
The food is accessible, approachable but definitely not your average ‘Pint and a Curry’ - still the same great atmosphere of going to your local curry house, with great quality ingredients and fast service, all paired with an unbeatable selection of award-winning Bundobust Brewery beers… and always pushing the boundaries of what Indian food can be by innovating their menus and experimenting with fusion cuisines, collaborations with local restaurants or brands, and playing around with menus aligned with events and celebrations in the upcoming yearly calendar.
Made for sharing, Bundobust encourage you to mix and match dishes with your table - to get a mix of hot, cold, crunchy, crispy, dippy, drizzly textural flavour free-for-all.
The menu is split up into sections, helping you build the best spread - including Chatpat dishes that are fresh, zesty & palate cleansing - like the Bundo Chaat, Farsan which is crispy, crunchy and ideal for dipping - like the Okra Fries, and Shaak, which is saucy & spicy for pouring onto rice or scooping up with bread - like their Tarka Dhal & Rice.
Fan favourites include the Paneer Tikka, Bhel Puri, Gobi Manchurian and Raghda Pethis - as loved by Rick Stein.
Special menus include Indo-Mexican, [6] - combining two iconic street-food cultures, Indo-Chinese menu - inspired by Kolkata's China Town, and Oktoberfest, bringing Munich's beer festival to inspire the beer and food at Bundobust.
Previously they have collaborated with Nells Pizza in Manchester, Madre in Liverpool and many more local independent restaurants. They have also collaborated with brands like Tofoo and Oatly.
Bundobust's menu is 75% vegan, and 57% gluten free too, which means they offer a really accessible selection for both people with dietary restrictions and allergies, as well as all budgets. We make sure this is reflected across all limited-edition specials and one-off menus as well as our year-round offering. [7]
Emerging from the days of the Leeds street food and craft beer boom of early 20-teens, Bundobust started as a tweet from Mayur Patel at renowned Bradford Indian restaurant Prashad, as mentioned in Ramsay's Best Restaurant - to local craft beer upstart Marko Husak of The Sparrow in Bradford with one radical idea: having a beer with a curry.
The name Bundobust comes from an Anglo-Indian word meaning "binding" or "coming together," reflecting the founders' idea of combining Indian street food with craft beer. It's a blend of Indian flavors and British craft beer culture, originating from a collaboration between Mayur Patel and Marko Husak, who merged their expertise in Indian cooking (from his family's restaurant, Prashad) and craft beer.
Bundo grew from a supper club to a street food stall at local beer, music, and food festivals and in 2014, its first venue down an overlooked street at the bottom of Leeds next to a kebab shop.
The first permanent Bundobust opened in Leeds in 2014, followed by a restaurant in Manchester Piccadilly in 2016, and a branch in Liverpool in 2019, and Bundobust Brewery in Manchester in 2021.
In September 2021, Bundobust launched the Bundobust Brewery inside the Grade II-listed St James Building on Oxford Street, Manchester. Previously a car mechanics, many of the old buildings designs can be found on the walls.
the Brewery, which can be found inside the restaurant, produces a core range of beers designed to complement Bundobust's food, including PYTHON Premium Lager and PEELA Hazy Pale Ale, alongside limited-edition beers throughout the year, brewed with seasonal flavours - available only at Bundobust venues. The brewery has also released collaborations with breweries such as Northern Monk, Deya, and Sureshot Brewery, just to name a few. [8] [9]
The site functions both as a restaurant and a 150-seat taproom, housing a 10-hectolitre brewery capable of producing up to 20,000 pints per month. [10] The brewery is headed by Dan Hocking, formerly of Uiltje Brewery in the Netherlands. [11]
Each venue has a line-up of taps featuring both the latest Bundobust Brewery beers, alongside local beers on kegs and cask - as well as a big selection of cans and bottles in the fridge.
