Bundobust runs Indian restaurants in Leeds, Manchester, Birmingham and Liverpool. It started in Leeds in 2014. It specialises in vegetarian dishes, Gujarati street food, served in compostable paper tubs and plates and craft beer. The beer is brewed in one of the Manchester restaurants. There are now two restaurants in Manchester.

It was founded in 2014 in Leeds by Mayur Patel and Marko Husak. [1] [2]

In 2025 it announced a new Indo-Mexican menu. [3]

History

Bundobust was founded in 2014 in Leeds by Mayur Patel, owner of the vegetarian Indian restaurant Prashad, and Marko Husak, co-founder of The Sparrow Bier Café in Bradford. [1]

The first permanent Bundobust opened in Leeds in 2014, followed by a restaurant in Manchester (Piccadilly) in 2016, and a branch in Liverpool in 2019. In September 2021, the company launched the Bundobust Brewery inside the Grade II-listed St James Building on Oxford Street, Manchester. The site functions both as a restaurant and a 150-seat taproom, housing a 10-hectolitre brewery capable of producing up to 20,000 pints per month. [4]

The brewery is headed by Dan Hocking, formerly of Uiltje Brewery in the Netherlands. [5] It produces a core range of beers designed to complement Bundobust's food, including Peela (hazy pale ale), Chaitro (chai porter), Dhania Pilsner, and Cartway Lager. The brewery has also released collaborations with breweries such as Northern Monk, Deya, and North Brewing Co. [6] [7]

By 2025, Bundobust was operating two Manchester restaurants in addition to its Leeds, Liverpool and Birmingham branches. [8] The company has gained recognition in the UK food scene, being named in the Observer Food Monthly's "OFM 50" list of top food and drink businesses, and shortlisted for a Deliveroo Restaurant Award in 2025.
