David Shalleck [1] is a fine dining Chef, culinary producer, and author working in the United States and abroad. For over two decades, he has cooked in restaurants and for special events in New York, San Francisco and in California's Napa Valley as well as abroad in London, Provence and throughout many of Italy's most famous regions. With a specialization in authentic coastal Italian, French and Western Mediterranean cuisine[ citation needed ], Shalleck has been called to work on the television sets of internationally recognized and celebrated chefs such as Jacques Pépin and Iron Chef Cat Cora. His culinary travel memoir, Mediterranean Summer: A Season on France's Cote d'Azur and Italy's Costa Bella was released in 2007.

Chef & Culinary Producer

With a BFA degree in Set and Lighting Design from Syracuse University, [2] Shalleck started his career in New York City as an associate designer at Imero Fiorentino Associates, a television and stage lighting design firm. At the same time, he also worked under Chef Larry Forgione at An American Place restaurant during the early 1980s while the American food revolution was emerging. After a move to San Francisco, he then became the Culinary Director for retail and media company, NapaStyle, based in the Napa Valley, California. It was from this position he was able to create VOLOCHEF Culinary Solutions in 2003.

Television shows

Shalleck has worked in culinary production services for over 250 television shows including the PBS series Jacques Pépin: More Fast Food My Way (based on the 2004 book of the same name) and Essential Pépin both of which were produced by KQED-TV in San Francisco (currently broadcast on PBS Create Channel) as well as José Made in Spain with Chef José Andrés and for Chef's Story at the French Culinary Institute. He has also appeared with Cat Cora on the Food Network's Iron Chef America.

Author

Shalleck is also the author of the culinary travel memoir and a 2007 New York Times summer reading pick, [3] Mediterranean Summer. New York Times literary critic Janet Maslin ranked Mediterranean Summer number 4 (of 11) on her “Hot List" [4] Maslin wrote that it "is a book-sized vacation." [5] Co-written by Erol Munuz, the book chronicles David's work as a Chef while aboard an Italian sailing yacht from Saint-Tropez in France to Positano on Italy's Amalfi Coast. The culinary travelogue / memoir was published by Broadway Books, an imprint of Random House, Inc. and features a foreword by Mario Batali, as well as numerous recipes and wine pairing recommendations by Sergio Esposito, owner of Italian Wine Merchants. The book received accolades from literary critics, [6] [7] chefs, magazines and bloggers [8] alike. The paperback edition, now in its seventh print, has been published in several foreign languages and is also available in several e-Book editions.

Awards & honors

In 2008 Mediterranean Summer won the Cordon d'Or Culinary Academy Awards in the Literature/Memoir category. [9] It also caught the attention of the USA Book News Awards where it won best Travel Essay in 2007. [10]

Today

David Shalleck continues to oversee his company VOLOCHEF. He is also active in several professional and charitable organizations. Shalleck is the exclusive culinary consultant to Windstar Cruises where he has designed Mediterranean-inspired menus for its flagship restaurant Degrees on the MSY Wind Surf. [11] He is also the American spokesperson for the French professional cookware line; Mauviel. Shalleck serves on the Culinary Advisory Board for the Mediterranean Food Alliance. He is also a member of the Chef's Council for the Center for Culinary Development and a speaker on the food & culture circuit.In addition, Shalleck is a Taste Guru for local San Francisco e-commerce start-up that sells artisanal food, Delicious Karma where he shares his opinions and reviews on the products. He lives in San Francisco.

After having been the personal chef of French President Charles de Gaulle, he moved to the US in 1959 and after working in New York's top French restaurants, refused the same job with President John F. Kennedy in the White House and instead took a culinary development job with Howard Johnson's. During his career, he has served in numerous prestigious restaurants, first, in Paris, and then in America. He has appeared on American television and has written for The New York Times, Food & Wine and other publications. He has authored over 30 cookbooks, some of which have become best sellers. Pépin was a longtime friend of the American chef Julia Child, and their 1999 PBS series Julia and Jacques Cooking at Home won a Daytime Emmy Award. He also holds a BA and a MA from Columbia University in French literature.

<i>Salade niçoise</i> French salad with anchovies or tuna

Salade niçoise, salada nissarda in the Niçard dialect of the Occitan language, insalata nizzarda in Italian, is a salad that originated in the French city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil, or in some historical versions, a vinaigrette. It has been popular worldwide since the early 20th century, and has been prepared and discussed by many chefs. Delia Smith called it "one of the best combinations of salad ingredients ever invented" and Gordon Ramsay said that "it must be the finest summer salad of all".

Ron Siegel is an American chef who formerly worked in San Francisco. In August 2012, it was announced he was joining San Francisco restaurant, Michael Mina, as executive chef. He had been Chef of the Dining Room at the Ritz-Carlton Hotel, taking over for Chef Sylvain Portray in 2004. Siegel is perhaps best known for his 1998 appearance on Iron Chef, becoming the first ever U.S. citizen to win in Kitchen Stadium. His cooking style is known for blending haute French cuisine with subtle Japanese touches.

Copia: The American Center for Wine, Food & the Arts was a non-profit museum and educational center in downtown Napa, California, dedicated to wine, food and the arts of American culture. The center, planned and largely funded by vintners Robert and Margrit Mondavi, was open from 2001 to 2008. The 78,632-square-foot (7,305.2 m2) museum had galleries, two theaters, classrooms, a demonstration kitchen, a restaurant, a rare book library, and a 3.5-acre (1.4 ha) vegetable and herb garden; there it hosted wine and food tasting programs, exhibitions, films, and concerts. Chris Cosentino is an American celebrity chef and reality television personality known as the winner of Top Chef Masters, a competitor on The Next Iron Chef and for his appearances on Iron Chef America. He is known for his haute cuisine offal dishes, and was chef-partner at Incanto in San Francisco. Forbes Traveler called Incanto "perhaps America's most adventurous nose-to-tail restaurant … On offer are lamb's necks, pig trotters and a five-course nose-to-tail tasting menu perhaps including venison kidneys and chocolate-blood panna cotta." Incanto closed on March 24, 2014. In December 2014, he opened Cockscomb, a restaurant centered around his updated interpretations of classic San Francisco dishes.

Alessandro Stratta is a celebrity chef and restaurateur of mixed Italian and French heritage. Stratta played the role of Iron Chef Italian on the television show Iron Chef USA. He was the recipient of the James Beard Foundation award for Best Chef Southwest in 1998 and was executive chef and owner of his famous namesake restaurant, Alex, in Las Vegas until its closure on January 15, 2011. He was later diagnosed with colon cancer and became a cancer survivor. He was the executive chef and owner of "Tapas by Alex Stratta" in the Las Vegas suburb of Summerlin, until it closed in 2015. In 2016, Stratta became executive chef de cuisine at Prado restaurant at the Omni Hotel in Paradise Valley, Arizona.
