Elderberry wine

Elderberry wine is an type of wine made from elderberry (Sambucus sp.). [1] The berries to make the wine should be picked when fully ripe. [2]

Recipe

This is the recipe for elderberry wine: [3]

  1. Freeze the berries as this makes the juice to run more freely
  2. Put the berries in a fermenting bucket and crush.
  3. Whack in the sugar and pour over a liter of boiling water and stir until the sugar has fully dissolved.
  4. Syphon it into a demijohn leaving the lees behind. This process should be repeated 1-3 times.
  5. When the air-lock stops bubbling, the wine is ready.
