Francis Cardenau

Francis Cardenau (born 1957) is a Denmark-based French chef and restaurateur. He achieved two Michelin stars as head chef at restaurant Kommandanten in Copenhagen and was a co-founder of the restaurant chain MASH.

Biography

Cardenau was born and raised in Lourdes. He was educated as a chef north of Paris. He moved to Copenhagen in the 1990s where he achieved two stars in the Guide Michelin in 1997. In 1997, together with Jesper Boelsskifte and Erik Gemal, he founded Le Sommelier and left Kommandanten in 1999 to work full-time as head chef at the restaurant. [1] In May 2005,Cardenau, Boelsskifte and Gemal opened French-Japanese restaurant Umami. In 2009, they opened the first MASH steak house. In January 2017, it was announced that he had sold his share of the company. [2]

Francis Cardenau lives with his Danish wife, Henriette Bych Cardenau, on a small farm close to Hillerød in North Zealand

The Restaurant Marco Pierre White, also known as The Restaurant, Restaurant Marco Pierre White and later Oak Room Marco Pierre White, was a restaurant run by chef proprietor Marco Pierre White. The Restaurant was opened at the Hyde Park Hotel, London, on 14 September 1993, after White left his previous restaurant, Harveys. Following the move, the kitchen staff was more than doubled in number, and White used Pierre Koffmann's La Tante Claire as a template to pursue his third Michelin star. This was awarded in the 1995 Michelin guide. White then moved the restaurant to the Le Méridien Piccadilly Hotel, London, in 1997, taking on the listed Oak Room as the main dining room. He sought a further rating of five red forks and spoons in the guide, to gain the highest possible rating for the restaurant. It gained this award in the following guide.

Paul Cunningham is an English chef working in Denmark. He was awarded a Michelin star at The Paul and as of 2017, has two stars at Henne Kirkeby Kro.

Esben Holmboe Bang is a Danish chef and restaurateur. He is co-owner and head chef at the three Michelin star restaurant Maaemo in Oslo, Norway.
