The first Happy Chef Restaurant opened in 1963 in Mankato. The chain eventually grew to 65 restaurants across the Midwest, employing nearly 3,000 people. [1] However, as consumers increasingly patronized competitors and tastes changed to favor restaurants that offered alcohol and televisions, Happy Chef's owner leased or sold off all the restaurants but one—the original location in Mankato, which still operates today. The Mayo Clinic Health System Event Center is a 5,280-seat multi-purpose arena in Mankato, Minnesota, built in 1994 and opened in early 1995. It is home to the Minnesota State Mavericks men's ice hockey team and women's ice hockey team, and also hosts musical performances, conventions and other events. Prior to its construction, the team played their home games at All Seasons Arena, which is now their main practice facility.
Minneopa State Park is a state park in the U.S. state of Minnesota. It was established in 1905 to preserve Minneopa Falls, a large waterfall for southern Minnesota, and was expanded in the 1960s to include the lower reaches of Minneopa Creek and a large tract of prairie. Minneopa is Minnesota's third oldest state park, after Itasca and Interstate. Two park resources are listed on the National Register of Historic Places: the 1862 Seppman Mill and a district of seven Rustic Style structures built by the Works Progress Administration in the late 1930s. The park is located almost entirely on the south side of the Minnesota River, three miles (4.8 km) west of Mankato. In 2015 the state reintroduced American bison to the park in a 330-acre (130 ha) fenced enclosure, through which visitors can drive in their vehicles.
Little Chef was a chain of restaurants in the United Kingdom, founded in 1958 by entrepreneur Sam Alper, who was inspired by American diners. The chain was famous for the "Olympic Breakfast" – its version of a full English – as well as its "Early Starter" and "Jubilee Pancakes". The restaurants were mostly located on the roadside near A roads, often paired with a Travelodge motel, a Burger King and a petrol station. The chain was also located along motorways in Moto Services, for a time.

Lake Washington is a lake in Le Sueur County, Minnesota and Blue Earth County, Minnesota, in the United States. The lake has a regional park, located on the northwest shore, which was acquired in two phases in 1971 and 1978. The park serves as a campgrounds area. The first structure on the lake was built in 1898. The lake has a summer camp for children on the lake, Camp Patterson, which hosts an average of 2,500 kids throughout the summer.

The Mankato Marathon is an annual marathon race in Mankato, Minnesota, that was first run in 2010. The race weekend now brings nearly 5,000 runners to the city for several races: the marathon, a marathon four-person relay, a half marathon, a 10K run, a 5K run, children's runs. The race course is certified by the USATF, making it a qualifying race for the Boston Marathon.
