Upsaaru, also known as Uppesaru, a kind of sambar in South India mainly in southern part of Karnataka state. [1] It is a traditional food of South Karnataka.
Sambar, also spelled sambaar is a lentil-based vegetable stew or chowder, cooked with tamarind broth, originating from South India. It is popular in South Indian and Sri Lankan cuisines.
Upsaaru word is formed with combination of two words, namely uppu (salt) and saaru (soup) and main ingradients of Upsaaru are salt, water and small quantity of chilly powder. It is being prepared for long time in villages and is used to swallow Raagi mudde. [2]
Ragi Mudde, Ragi Sangati or kali and colloquially simply referred to as either 'Mudde' or 'Hittu' - i.e. flour); is a wholesome meal in the state of Karnataka and the Rayalaseema region in Andhra Pradesh. It is mainly popular with the rural folk of Karnataka. In Tamil Nadu, especially in Western Tamil Nadu it is called Ragi Kali. Ragi is grown in Odisha as well where it is called Mandya, but these days people prefer rice. Similar variation known as Dhindo is also eaten in Northeast India, Nepal and Bhutan.
