Coolea is a type of cow's milk cheese that consists of a smooth, Gouda-like texture with rich, sweet, caramelly flavours. Like Gouda, Coolea cheese is covered in a thick, solid wax rind which contributes to the cheese's flavour and texture.[ citation needed ]

Since the late 1970s, Coolea has been made from an old Dutch Gouda recipe by the Willems family in the Coolea area of County Cork in Ireland. [2] It has won a number of awards both nationally and internationally. [3]

There are many different types of cheese. Cheeses can be grouped or classified according to criteria such as length of fermentation, texture, methods of production, fat content, animal milk, and country or region of origin. The method most commonly and traditionally used is based on moisture content, which is then further narrowed down by fat content and curing or ripening methods. The criteria may either be used singly or in combination, with no single method being universally used.

Prima Donna is a Dutch cheese brand of Vandersterre Groep. It competes with Parrano, a trademarked brand of Vandersterre's competitor Uniekaas Groep. Like Parrano it combines the flavour of aged Italian Parmesan with the pliant texture of Dutch Gouda cheese.
