The five-second rule, or sometimes the three-second rule, [1] is a food hygiene urban legend that states a defined time window after which it is not safe to eat food (or sometimes to use cutlery) after it has been dropped on the floor or on the ground and thus exposed to contamination.

There appears to be no scientific consensus on the general applicability of the rule, [2] and its origin is unclear. [3] [4] [5] It probably originated succeeding[ clarification needed ] germ theory in the late 19th century. The first known mention of the rule in print is in the 1995 novel Wanted: Rowing Coach. [6]

History

The origins of the five-second rule is unclear. In the book Did You Just Eat That?: Two Scientists Explore Double-Dipping, the Five-Second Rule, and other Food Myths in the Lab food scientist Pawl Dawson and microbiologist Brian Sheldon trace the origins to legends surrounding Genghis Khan in the 15th century. Supposedly, the Mongol ruler is rumoured to have implemented the "Khan Rule" at his banquets. "If food fell on the floor, it could stay there as long as Khan allowed," and the idea was that "food prepared for Khan was so special that it would be good for anyone to eat no matter what." [7]

Research

The five-second rule has received some scholarly attention. [8] It has been studied as both a public health recommendation and a sociological effect.

University of Illinois

In 2003, Jillian Clarke of the University of Illinois at Urbana–Champaign found in a survey that 56% of men and 70% of women surveyed were familiar with the five-second rule. She also determined that a variety of foods were significantly contaminated by even brief exposure to a tile inoculated with E. coli . [9] On the other hand, Clarke found no significant evidence of contamination on public flooring. [9] For this work, Clarke received the 2004 Ig Nobel Prize in public health. [10] A more thorough study in 2007 using salmonella on wood, tiles, and nylon carpet, found that the bacteria could thrive under dry conditions even after twenty-eight days. [11] Tested on surfaces that had been contaminated with salmonella eight hours previously, the bacteria could still contaminate bread and baloney lunchmeat in under five seconds. But a minute-long contact increased contamination about tenfold (especially on tile and carpet surfaces). [12]

Rutgers University

Researchers at Rutgers University debunked the theory in 2016 by dropping watermelon cubes, gummy candies, plain white bread, and buttered bread from a height of five inches (13 cm) onto surfaces slathered in Enterobacter aerogenes . The surfaces used were carpet, ceramic tile, stainless steel and wood. The food was left on the surface for intervals of 5, 30 and 300 seconds. The scientists assessed the amount of E. aerogenes transferred between surface and food. Since bacteria tended to be attracted to moisture, wet food had more risk to have bacteria transferred than dry food. To the surprise of the researchers, carpet transferred fewer bacteria than steel or tile. Wood was hard to pin down as it showed a large variation. "The five-second rule is a significant oversimplification of what actually happens when bacteria transfer from a surface to food," Donald Schaffner, a Rutgers University biologist and an author of the research, stated in the Washington Post, "Bacteria can contaminate instantaneously." [13]

A pediatrician criticized the study for discounting the danger in consuming food after one touches other surfaces like refrigerator handles, light switches, and wallets, which have been found to be similarly contaminated with bacteria. [14]

Other

A 2006 study at Clemson University was unable to verify the rule, when looking at tile, wood, and carpet floors. It indicated that bacteria can survive on the ground for a long time. [15]

A 2014 study by biology students at Aston University in England suggested that there may be a basis for the five-second rule. [16] Anthony Hilton, head of microbiology at Aston University, indicated in 2017 that food dropped on a seemingly clean floor for a few moments can be eaten with minimal risk. [17] According to Hilton, moist foods that are left on the floor for more than 30 seconds are contaminated with 10 times more bacteria than food that has been left on the floor for 3 seconds. [18]

Informal

The five-second rule was featured in an episode of the Discovery Channel series MythBusters , which discovered that there was no significant difference in the number of bacteria collected. The aspects that affect the contamination process is the moisture, surface geometry and the location. [19] An episode of Food Detectives found that bacteria will cling to food immediately. [20]

Salmonellosis is a symptomatic infection caused by bacteria of the Salmonella type. It is the most common disease to be known as food poisoning, these are defined as diseases, usually either infectious or toxic in nature, caused by agents that enter the body through the ingestion of food. In humans, the most common symptoms are diarrhea, fever, abdominal cramps, and vomiting. Symptoms typically occur between 12 hours and 36 hours after exposure, and last from two to seven days. Occasionally more significant disease can result in dehydration. The old, young, and others with a weakened immune system are more likely to develop severe disease. Specific types of Salmonella can result in typhoid fever or paratyphoid fever. Typhoid fever and paratyphoid fever are specific types of salmonellosis, known collectively as enteric fever, and are, respectively, caused by salmonella typhi & paratyphi bacteria, which are only found in humans. Most commonly, salmonellosis cases arise from salmonella bacteria from animals, and chicken is a major source for these infections.

The contagion heuristic is a psychological heuristic which follows the law of contagion and the law of similarity, leading people to avoid contact with people or objects viewed as "contaminated" by previous contact with someone or something viewed as bad—or, less often, to seek contact with objects that have been in contact with people or things considered good. For example, people tend to view food that has touched the ground as contaminated by the ground, and therefore unfit to eat, or view a person who has touched a diseased person as likely to carry the disease.

Reports of <i>Streptococcus mitis</i> on the Moon Bacteria found on Surveyor 3 lunar probe

As part of the Apollo 12 mission in November 1969, the camera from the Surveyor 3 probe was brought back from the Moon to Earth. On analyzing the camera, it was found that the common bacterium Streptococcus mitis was alive on the camera. NASA reasoned that the camera was not sterilized on Earth before the space probe's launch in April 1967, two and a half years earlier. However, later study showed that the scientists analysing the camera on return to Earth used procedures that were inadequate to prevent recontamination after return to Earth, for instance with their arms exposed, not covering their entire bodies as modern scientists would do. There may also have been possibilities for contamination during the return mission as the camera was returned in a porous bag rather than the airtight containers used for lunar sample return. As a result, the source of the contamination remains controversial.

In 1984, 751 people suffered food poisoning in The Dalles, Oregon, United States, due to the deliberate contamination of salad bars at ten local restaurants with Salmonella. A group of prominent followers of Rajneesh led by Ma Anand Sheela had hoped to incapacitate the voting population of the city so that their own candidates would win the 1984 Wasco County elections. The incident was the first and is still the single largest bioterrorist attack in U.S. history.

Adulteration is a legal offense and when the food fails to meet the legal standards set by the government, it is said to have been Adulterated Food. One form of adulteration is the addition of another substance to a food item in order to increase the quantity of the food item in raw form or prepared form, which results in the loss of the actual quality of the food item. These substances may be either available food items or non-food items. Among meat and meat products some of the items used to adulterate are water or ice, carcasses, or carcasses of animals other than the animal meant to be consumed. In the case of seafood, adulteration may refer to species substitution (mislabeling), which replaces the species identified on the product label with another species, or undisclosed processing methods, in which treatments such as additives, excessive glazing, or short-weighting are not disclosed to the consumer.

<i>Salmonella enterica <span style="font-style:normal;">subsp.</span> enterica</i> Subspecies of bacterium

Salmonella enterica subsp. enterica is a subspecies of Salmonella enterica, the rod-shaped, flagellated, aerobic, Gram-negative bacterium. Many of the pathogenic serovars of the S. enterica species are in this subspecies, including that responsible for typhoid.

Ground turkey, or minced turkey, is a mixture of dark and light turkey meat with remaining skin and visible fat processed together until a "ground" form emerges. The turkey meat, skin, and fat is taken off the bone and processed with additives. The final product has specific characteristics that appeal to customers, including a non pink color and non crumbly texture. The composition of ground turkey is driven by market demand, availability, and meat prices. The 2012 outbreak of Salmonella took place in 15 places worldwide with over 2,300 strains identified.

Food safety in Australia concerns the production, distribution, preparation, and storage of food in Australia to prevent foodborne illness, also known as food safety. Food Standards Australia New Zealand is responsible for developing food standards for Australia and New Zealand.

Salmonellosis annually causes, per CDC estimation, about 1.2 million illnesses, 23,000 hospitalizations, and 450 deaths in the United States every year.

<span class="mw-page-title-main">Infant food safety</span>

Foodborne illness is any illness resulting from the food spoilage of contaminated food, pathogenic bacteria, viruses, or parasites that contaminate food. Infant food safety is the identification of risky food handling practices and the prevention of illness in infants. Foodborne illness is a serious health issue, especially for babies and children. Infants and young children are particularly vulnerable to foodborne illness because their immune systems are not developed enough to fight off foodborne bacterial infections. In fact, 800,000 illnesses affect children under the age of 10 in the U.S. each year. Therefore, extra care should be taken when handling and preparing their food.

<span class="mw-page-title-main">2018 American salmonella outbreak</span>

The 2018 American salmonella outbreak was an American foodborne disaster that started in Iowa, spreading to 7 other states, sickening as many as 265 people, killing one, with 94 hospitalized. Ready-to-eat chicken salad was produced by Iowa-based Triple T Specialty Meats Inc. between January 2 and February 7 for distribution in Fareway grocery stores. Salad was sold in containers of various weights at Fareway stores deli from January 4 to February 9. Total of approximately 20 630 pounds of chicken were deemed contaminated with Salmonella Typhimurium at the time of recall on February 21.
