Jake Bickelhaupt is an American chef based in Chicago, Illinois. His two-Michelin-star [1] restaurant 42 Grams was the subject of a 2017 documentary of the same name. [2] [3] The film focuses on Bickelhaupt and his then-wife, Alexandra Welsh, as they turned an illegal restaurant operating out of his home into the brick-and-mortar 42 Grams [4] [5] in less than a year. In 2018, 42 Grams closed [1] after Bickelhaupt pleaded guilty following domestic abuse charges filed by Welsh. [6] As of 2018, Bickelhaupt runs the underground restaurant Konro. [7]

Beverly Kim is a James Beard Award-winning chef and restaurateur who was a contestant on Top Chef in 2011 and co-owns the Michelin-starred Parachute in Chicago. In 2019, Kim opened neighboring restaurant Wherewithall with her husband Johnny Clark.

It is known for not taking reservations which creates long lines, such that a nearby bar's top cocktail is called 'Waiting for Rose's' and line waiters are reported to make up to thirty dollars an hour waiting in line. President Barack Obama celebrated his 54th birthday at Rose's after First Lady Michelle Obama previously ate at the restaurant. The opening of Rose's Luxury in 2013 was the subject of a documentary, New Chefs on the Block. Chef Aaron Silverman had prior experience at Momofuku. It opened a fine dining restaurant next door to Rose's Luxury named Pineapple & Pearls in 2016. Silverman has been the subject of a profile in The Washington Post, which characterized his work as mastery of 'the art of serious play'.

Quince is a restaurant in the Jackson Square neighborhood in San Francisco, California. Opened in 2003 by chef Michael Tusk and his wife, Lindsay, in Pacific Heights, the restaurant moved to their current location in Jackson Square, which is next door to sister restaurant, Cotogna. The Tusks partner with Fresh Run Farms of Bolinas, CA in sourcing exclusive produce for a $275 per diner tasting menu in the California tradition.
