Early life and education

Spence was born in Manchester, Jamaica [3] in 1951 and was raised in Kingston [1] by her adoptive parents. [4] Her passion for chemistry began at age 13. Spence attended the University of the West Indies, graduating with First Class Honors in 1972. She earned her master's degree in analyticial chemistry at the University of Loughborough in England. [1]

Career

Spence started as a research and development chemist at Tia Maria, then was hired by J. Wray and Nephew Ltd., a rum company. In 1981, the rum distillery Appleton Estate, which was owned by Wray and Nephew, hired Spence as its chief chemist. [1]

At Appleton, Spence worked with Owen Tulloch, the master blender at the time, who recognized Spence's ability to identify and differentiate between smells, describing it as an "organoleptic talent". [5] After working with Tulloch for 17 years, Spence was promoted to master blender on Tulloch's retirement. Her first creation as the master blender was a special rum to celebrate the 250th anniversary of Appleton Estate, which received high praise in the industry. [1] Spence has also created special rum blends for select customers, such as Ronald Reagan, Prince William, and Prince Harry. [4]

At Appleton Estate, Spence serves as a brand ambassador, travelling about 40% of the time, [5] and is also the general manager for technical and quality service. [2] . For her service to the rum industry, Jamaica awarded Spence the Order of Distinction in the class of Officer in 2005. [1]

Spence was instrumental in achieving geographical indication for Jamaican rum, which was awarded in 2016. [1] [6]

In 2017, Appleton Estate released the Joy Anniversary Blend of rum to commemorate her 20 years as their master blender. The Joy Anniversary Blend was named Rum of the Year in 2017 by Distiller.com. [7] [1] Her 40th year at Appleton Estate was marked by the release of the Ruby Anniversary Edition in 2022. [8]

In 2017, Tales of the Cocktail gave Spence the Grand Dame Award as "the most influential woman in the cocktail and spirits industry". [1] The Prime Minister's Medal for Science and Technology (now known as the National Medal for Science and Technology) was awarded to Spence in 2018. [9] The Distilled Spirits Council of the United States awarded Spence their Lifetime Achievement Award in 2022. [10]

Tours of the Appleton Estate distillery are named The Joy Spence Appleton Estate Rum Experience. [6]

Spence was awarded the Musgrave Gold Medal in 2022. [11]

<span class="mw-page-title-main">Canadian whisky</span> Whisky produced in Canada

Canadian whisky is a type of whisky produced in Canada. Most Canadian whiskies are blended multi-grain liquors containing a large percentage of corn spirits, and are typically lighter and smoother than other whisky styles. When Canadian distillers began adding small amounts of highly-flavourful rye grain to their mashes, people began demanding this new rye-flavoured whisky, referring to it simply as "rye". Today, as for the past two centuries, the terms "rye whisky" and "Canadian whisky" are used interchangeably in Canada and refer to exactly the same product, which generally is made with only a small amount of rye grain.

<span class="mw-page-title-main">Whisky</span> Distilled alcoholic beverage

Whisky or whiskey is a type of liquor made from fermented grain mash. Various grains are used for different varieties, including barley, corn, rye, and wheat. Whisky is typically aged in wooden casks, which are typically made of charred white oak. Uncharred white oak casks previously used for the aging of port, rum or sherry are also sometimes used.

A master blender is an individual who develops specific blended spirits using a combination of spirits with different characteristics. For example, in the Scotch whisky industry, master blenders choose which single malts and grain whiskies to combine to make particular brands of blended whisky. A master blender is not the same thing as a master distiller, although one person may do both jobs at small craft distilleries. As the name suggests, the blender creates blends using spirits from different casks and is responsible for making sure the product remains consistent across different batches, while the distiller is either directly responsible for the mashing and distilling of spirits or simply holds the title as the administrative and marketing figurehead of the company.

<span class="mw-page-title-main">Indian whisky</span> Type of distilled liquor produced in India

As of 2006 most distilled spirits labelled as "whisky" in India were a form of Indian-made foreign liquor, commonly blends based on neutral spirits that are distilled from fermented molasses with only a small portion consisting of traditional malt whisky, usually about 10 to 12 percent. Outside India, such a drink would more likely be labelled a rum. According to the Scotch Whisky Association's 2013 annual report, unlike in the European Union (EU), "there is no compulsory definition of whisky in India, and the Indian voluntary standard does not require whisky to be distilled from cereals or to be matured. Very little Indian 'whisky' qualifies as whisky in the EU owing to the use of molasses or neutral alcohol, limited maturation and the use of flavourings. Such spirits are, of course, considerably cheaper to produce than genuine whisky." Such molasses-based blends made up 90 percent of the spirits consumed as "whisky" in India in 2004, although whisky wholly distilled from malt and other grains, was also manufactured and sold. By 2004 shortages of wheat had been overcome and India was one of the largest producers. Amrut, the first single malt whisky produced in India, was launched in Glasgow, Scotland in 2004. After expanding in Europe it was launched in India in 2010.
