Ethyl 2-methylvalerate (systematically ethyl 2-methylpentanoate, commonly referred to as manzanate) is the organic compound with the formula CH3CH2CH2(H3C)CHCO2CH2CH3. [1] This colorless liquid has a fruity apple smell and with aspects of cider and sweet pineapple. [2] It is commonly used as a flavoring agent, but has a wide range of applications. [3] 2-Methylpentanoic acid esters have at least 2 enantiomers. It is common for enantiomers to have distinct or similar smells. [4]

Production and synthesis

It is commonly produced in the esterification of 2-methylpentanoic acid by dry ethyl alcohol, with mineral acids catalyzing the reaction.

It can be obtained by vacuum distillation from the reaction between sodium salt of the respective acid with diethyl sulfate.

Ethanethiol, commonly known as ethyl mercaptan, is an organosulfur compound with the formula CH3CH2SH. is a colorless liquid with a distinct odor. Abbreviated EtSH, it consists of an ethyl group (Et), CH3CH2, attached to a thiol group, SH. Its structure parallels that of ethanol, but with sulfur in place of oxygen. The odor of EtSH is infamous. Ethanethiol is more volatile than ethanol due to a diminished ability to engage in hydrogen bonding. Ethanethiol is toxic in high concentrations. Cholesterol total synthesis in chemistry describes the total synthesis of the complex biomolecule cholesterol and is considered a great scientific achievement. The research group of Robert Robinson with John Cornforth published their synthesis in 1951 and that of Robert Burns Woodward with Franz Sondheimer in 1952. Both groups competed for the first publication since 1950 with Robinson having started in 1932 and Woodward in 1949. According to historian Greg Mulheirn the Robinson effort was hampered by his micromanagement style of leadership and the Woodward effort was greatly facilitated by his good relationships with chemical industry. Around 1949 steroids like cortisone were produced from natural resources but expensive. 2-Methylbutanoic acid, also known as 2-methylbutyric acid is a branched-chain alkyl carboxylic acid with the chemical formula CH3CH2CH(CH3)CO2H, classified as a short-chain fatty acid. It exists in two enantiomeric forms, (R)- and (S)-2-methylbutanoic acid. (R)-2-methylbutanoic acid occurs naturally in cocoa beans and (S)-2-methylbutanoic occurs in many fruits such as apples and apricots, as well as in the scent of the orchid Luisia curtisii.
