Ron miel ("Honey rum") is a variety of rum made from liquor or cane molasses, typical from the Canary Islands. [1] It is known as honey rum because the final product incorporates an amount of at least 2% honey of the total volume.

Its alcoholic graduation ranges from 20 to 45%. It is of intense and sweet flavor, and its color goes from the old gold to the intense mahogany. It's mostly consumed through shots, often with a sprinkle of lime juice

In 2005 the Ministry of Agriculture of the Government of the Canary Islands created a specific Geographical Denomination for the honey rum under the name "Ronmiel de Canarias". [2]

Xtabentún is an anise liqueur made in Mexico's Yucatán region from anise seed, and fermented honey produced by honey bees from the nectar of xtabentún flowers. Rum is then added to the anise and honey mixture. Because of the rum content, the xtabentún liqueur is sometimes called a "distilled honey" beverage, which is misleading, because the honey alcohol is fermented, not distilled. It is, nonetheless, a spirit beverage, since rum, a distilled product, is added. Distilleries still survive today in the Yucatán that produce the liqueur.

Gofio is a sort of Canarian flour made from roasted grains or other starchy plants, some varieties containing a little added salt. Gofio has been an important ingredient in Canarian cooking for some time, and Canarian emigrants have spread its use to the Caribbean and the Western Sahara. There are various ways to use it, such as kneading, dissolving in soup, and baking. It can also be used as a thickener. It is also found in Argentina, Uruguay, and Chile, where it is known as harina tostada and is employed in a wide variety of recipes. The gofio commercially available in the Canary Islands is always finely ground, like ordinary flour, despite the definition given in the Spanish Dictionary of the Royal Academy. It can't be seen at shops other than the Canary Islands.

Canarian cuisine is influenced by other cultures, especially that of the aboriginal inhabitants of the islands (Guanches), and has influenced Latin American cuisine.
