ST. ALi is a privately owned group of cafes, retailers and specialty coffee roaster founded and based in Melbourne, Australia in 2005. [1] As of October 2009 ST. ALi had cafes in Melbourne, and was credited with being a contributor to the third wave of coffee movement in Melbourne. [2]
ST. ALi's South Melbourne cafe was founded in 2005 by Mark Dundon. [3] It was bought by Salvatore Malatesta in 2008. [4] A second cafe opened in December 2012. [5]
From January - September 2014 ST. ALi operated a pop-up location on Collins Street, Melbourne alongside other restaurants. [6]
In February 2014, ST. ALi set up a pop up cafe and coffee masterclasses at Coffee Workers in Seoul, Korea. [7] [8] Also that year, ST. ALi ran a pop up cafe at the London Coffee Festival. [9] This was followed by a cafe installation in Milan at the design festival Ventura Lambrate as part of an Australian design contingent called ‘The Other Hemisphere'. [9] [10]
ST. ALi established a pop up cafe in Jakarta, Indonesia in September 2014. [11] A permanent Jakarta location was opened in 2015. [12]
In November 2016 ST. ALi purchased North Melbourne cafe auction rooms from its founder Andrew Kelly. [13]
In January 2022 ST. ALi offered two free rapid antigen tests for COVID-19 with orders over $159.99 as part of a promotional offer during shortages of the tests in Melbourne. The company apologised after backlash. [14]
ST. ALi coffee beans are sourced through direct trade with the coffee growers themselves. [15] [16] ST. ALi's coffee beans are all purchased green, and small batch roasted in Melbourne using Brambati roasters. [17]
As well as engaging in direct trade coffee sourcing, ST. ALi is a supporter of local and community initiatives, including a barista challenge run in conjunction with Melbourne City Mission, to teach disadvantaged youth work experience and barista training. [18] [19]
ST. ALi has been nationally and internationally recognised for the quality of its coffee and locally for its food. ST. ALi South was awarded "Best Food Cafe" in Melbourne in 2013 by The Age Good Cafe Guide. [20]
ST. ALi's head of coffee, Matthew Perger, won first place at the 2012 World Brewers Cup, and has won two Australasian Specialty Coffee Association (AASCA) Detpak Australian Barista Championship titles, and also placed third at the 2011 World Barista Championship that took place in Colombia and the second place in 2013 World Barista Championship. Roasting coffee transforms the chemical and physical properties of green coffee beans into roasted coffee products. The roasting process is what produces the characteristic flavor of coffee by causing the green coffee beans to change in taste. Unroasted beans contain similar if not higher levels of acids, protein, sugars, and caffeine as those that have been roasted, but lack the taste of roasted coffee beans due to the Maillard and other chemical reactions that occur during roasting.

Stumptown is owned by Peet's Coffee, which in turn is owned by JAB Holding Company. The company was an early innovator with cold brew coffee in nitro cans and have continued to develop other cold brew product innovations.
Gimme! Coffee is a coffee roaster and third-wave coffee shop, based in New York, with espresso bars in Ithaca and Trumansburg. In response to the COVID-19 pandemic, Gimme! announced the permanent closure of the Manhattan and Brooklyn based locations and also began an Ithaca-area delivery service. Gimme! Coffee also has a wholesale service that caters to coffee and espresso establishments. In January 2020, Colleen Anunu replaced founder Kevin Cuddeback as CEO after he served 20 years in the role. Anunu then transitioned the company into a worker-owned cooperative, which it remains since July 25, 2022. A focus at Gimme is to form relationships with farmers who grow coffee. As part of this bond between consumer and producer, the farmer may receive a price premium, which in turn, can help them improve their operations.

It is headquartered in New Delhi, India, and maintains outlets across India, and in other regional countries such as Sri Lanka, and Maldives. It is the oldest coffee house chain in India and is currently India's second-largest coffee chain with over 350 outlets as of May 2022. It also sells a number of FMCG products through Modern & General Retail stores across multiple locations.
Intelligentsia Coffee is an American coffee roasting company and retailer based in Chicago, Illinois. Founded in 1995 by Doug Zell and Emily Mange, Intelligentsia is considered a major representative of third wave coffee. In 2015, Peet's Coffee & Tea acquired a majority stake in the company.
Third-wave coffee is a movement in coffee marketing emphasizing high quality. Beans are typically sourced from individual farms and are roasted more lightly to bring out their distinctive flavors. Though the term was coined in 1999, the approach originates in the 1970s, with roasters such as the Coffee Connection.
James Alexander Hoffmann is an English barista, YouTuber, entrepreneur, coffee consultant, and author. Hoffmann first came to prominence after winning the World Barista Championship in 2007 and has since been credited as a pioneer of Britain's third-wave coffee movement. Hoffmann has published three books, including The World Atlas of Coffee, amassed a significant following on YouTube, started several businesses, including the specialty coffee roaster Square Mile Coffee Roasters, and consulted for several coffee ventures.

Union Hand-Roasted Coffee is a privately owned British coffee roasting business based in East London, United Kingdom. The company was founded in 2001 by Jeremy Torz and Steven Macatonia. Coffee House says the company "effectively bridges the definitions of independent and mainstream" as they work according to craft principles while still selling their products in supermarkets.
Lit Espresso Bar is a Toronto based cafe that was founded in 2008, by Joe Angellotti. The business started out with one cafe located in the neighborhood retreat of Roncesvalles Avenue. His sister Nicole Angellotti joined her brother when the college and Ossington location was created soon after the first location met success. Joe has recently moved on to start his new venture, Pig Iron Roasters, which is the roaster who supplies all of the Lit Espresso Bar Cafes.
The World Brewers Cup is an annual international coffee brewing competition organized by World Coffee Events, an organization founded by the Specialty Coffee Association. The stated goal of the competition is to showcase the craft and skill of filter coffee brewing by hand, promoting manual coffee brewing and quality of service. Contestants qualify for the international competition by winning their respective national championships. As of 2019, there were approximately 40 participating national organizations. The annual location of the event is determined by the World Coffee Events organizing committee, and is typically held in conjunction with the World Barista Championship, the World Coffee Roasting Championship, and the World Latte Art Championship. The first World Brewers Cup was held in 2011 in Maastricht, Netherlands. The 2022 WBrC was held in Melbourne, VIC, Australia.
Colectivo Coffee Roasters is a specialty coffee roaster based in Milwaukee, Wisconsin. Until July 2013, the company was known as Alterra Coffee Roasters. Colectivo roasts its coffee and makes all its food products in Milwaukee and is known nationwide as a wholesale coffee supplier.

Morgan Eckroth, also known by their username MorganDrinksCoffee, is an American online content creator and barista. A resident of Portland, Oregon, Eckroth maintains a popular TikTok account and YouTube channel along with participating in barista competitions. After competing in nationals and qualifiers for the United States Barista Championship in 2019 and 2020 respectively, Eckroth became the United States Barista Champion in 2022, thereby qualifying to represent the US in the 2022 World Barista Championship (WBC). Eckroth placed second at the WBC, where they were sponsored by Onyx Coffee Lab, an Arkansas-based coffee roaster where they also serve as the content marketing specialist.
