Purezza is a vegan pizzeria operating in Brighton, London and Manchester. It is Europe's first all-vegan pizzeria, [1] opening its first branch in Brighton, UK, in November 2015.

The company also manufactures its own vegan cheese, dubbed "Mozzarella 3.0", and it has set up a factory to mass produce it for foodservice and retail. [2] [3] [4] The cheese is made with aquafaba.

History

Purezza, meaning 'Purity' in Italian, was founded by Tim Barclay and Stefania Evangelisti, who were inspired by the lack of vegan Italian options. [5] Their second restaurant was announced in November 2017, [6] and opened in Camden in March 2018. [7] Purezza tripled the sized of its Camden branch in February 2020. [8] [9] A Manchester branch opened in June 2021. [10] [11]

In August 2019, Purezza was mistakenly caught up in a drugs bust at Gatwick Airport, when ingredients for its food were seized by police. [12] [13] [14]

The company received an initial £35,000 investment to open its vegan cheese factory in July 2018 at an investment pitching event in London, with a view to raising additional capital through Crowdcube. [15] Purezza has stated that the cheese will be free from major allergens and palm oil. [2]

In 2023, Purezza acquired a majority stake in La Fauxmagerie. [16]

Food

Purezza specialises in vegan pizza, but also provides a range of vegan alternatives to other Italian dishes such as lasagne, macaroni cheese, and tiramisu. [17] [18] They are also known for a range of raw food dishes, including raw cheeses and a raw pizza. [19] In addition to its plant-based menu, Purezza also has an extensive gluten free menu, [20] for which it has won a Silver Award from the Free From Eating Out Awards. [21] During Christmas 2023, the restaurant in Brighton was reported to have been serving a vegan Christmas dinner menu with Christmas calzones and turkey dinners. [22]

Awards

Purezza took part in the National Pizza Awards 2018, [23] National Pizza of the Year 2018 in the UK with the Parmigiana Party pizza. [24] [25] [26]

They also won UK's Best Vegan Restaurant 2018 according to Vegfest UK. [27]

Purezza's head chef, Filippo Rosato, won Best Pizza from Abroad 2018 in the #pizzAward 2018 competition held in Naples. [28]

The team also won an award at the World Pizza Championship for the Pizza Classica category. The winning pizza was titled "The Promised Land" and used cavolo nero, tempeh, pioppini mushrooms, and a borlotti bean sauce. The dough was infused with BrewDog Punk IPA. [29] [30] [31]

The World Pizza Championship is an event held annually for three days in April since 1991 in Salsomaggiore Terme (Parma), Italy, although several other cities likewise claim to be the home of the ultimate international pizza games including Naples and Paris. Organized by Pizza E Pasta Italiana magazine, the 30th edition of the competition was held from April 18-20, 2023. More than 700 chefs from 52 countries compete in 12 categories. The World Pizza Championship includes six categories in the baking competition, three categories in the pizza game competition, the pizza team award, the Heinz Beck trophy awarded to pizzeria chefs, and the triathlon award given for the highest average score in 3 separate categories. All culinary scores are figured from 800 as perfect, with each contestant rated by cooking prowess, sanitation, presentation, taste, and knowledge of the pizza. It is the largest pizza show in the world with over 6,500 independent chain and franchise owners from all around the world attending. The winners are inducted into their Hall of Fame and are sometimes invited back to judge the next World Pizza Championship.

VegfestUK is an annual vegan food festival held each year in various cities including London, Brighton and Bristol, starting in 2013. The 2019 festival in London included around 370 stalls. Vegfest is one of the biggest Vegan/Vegetarian festivals in the world, with 14,500 visitors at the 2018 London Vegfest (compared to on average 8,000 visitors at VeggieWorld.

Duane Sorenson opened Roman Candle in 2013, with a menu offering wood-fired pizza and other Italian cuisine, including sandwiches, breads, green salads, pastries, and baked potatoes. Dan Griffin and Joshua McFadden served as the baker and chef, respectively. The bakery started supplying select menu items to Sorenson's Stumptown Coffee Roasters locations in late 2015. Roman Candle received a generally positive reception, with the pizzas and kouign-amann receiving the most praise. The restaurant closed in April 2018 for renovations, ahead of a rebrand as a gluten-free and vegan cafe called Holiday, which Sorenson launched one month later.
