The dietary energy supply is the food available for human consumption, usually expressed in kilocalories or kilojoules per person per day. It gives an overestimate of the total amount of food consumed as it reflects both food consumed and food wasted. [1] It varies markedly between different regions and countries of the world. It has also changed significantly over the 21st century. Dietary energy supply is correlated with the rate of obesity. [2]

Food security is the availability of food in a country and the ability of individuals within that country (region) to access, afford, and source adequate foodstuff. The availability of food irrespective of class, gender or region is another element of food security. Similarly, household food security is considered to exist when all the members of a family, at all times, have access to enough food for an active, healthy life. Individuals who are food secure do not live in hunger or fear of starvation. Food insecurity, on the other hand, is defined as a situation of " limited or uncertain availability of nutritionally adequate and safe foods or limited or uncertain ability to acquire acceptable foods in socially acceptable ways." Food security incorporates a measure of resilience to future disruption or unavailability of critical food supply due to various risk factors including droughts, shipping disruptions, fuel shortages, economic instability, and wars.

A saturated fat is a type of fat in which the fatty acid chains have all single bonds. A fat known as a glyceride is made of two kinds of smaller molecules: a short glycerol backbone and fatty acids that each contain a long linear or branched chain of carbon (C) atoms. Along the chain, some carbon atoms are linked by single bonds (-C-C-) and others are linked by double bonds (-C=C-). A double bond along the carbon chain can react with a pair of hydrogen atoms to change into a single -C-C- bond, with each H atom now bonded to one of the two C atoms. Glyceride fats without any carbon chain double bonds are called saturated because they are "saturated with" hydrogen atoms, having no double bonds available to react with more hydrogen.

A 2021 meta-analysis that did not include food lost during production, by the United Nations Environment Programme found that food waste was a challenge in all countries at all levels of economic development. The analysis estimated that global food waste was 931 million tonnes of food waste across three sectors: 61 percent from households, 26 percent from food service and 13 percent from retail.

The Western pattern diet is a modern dietary pattern that is generally characterized by high intakes of pre-packaged foods, refined grains, red meat, processed meat, high-sugar drinks, candy and sweets, fried foods, industrially produced animal products, butter and other high-fat dairy products, eggs, potatoes, corn, and low intakes of fruits, vegetables, whole grains, pasture-raised animal products, fish, nuts, and seeds.

Obesity in Mexico is a relatively recent phenomenon, having been widespread since the 1980s with the introduction of ultra-processed food into much of the Mexican food market. Prior to that, dietary issues were limited to under and malnutrition, which is still a problem in various parts of the country. Following trends already ongoing in other parts of the world, Mexicans have been foregoing the traditional Mexican diet high in whole grains, fruits, legumes and vegetables in favor of a diet with more animal products and ultra-processed foods. It has seen dietary energy intake and rates of overweight and obese people rise with seven out of ten at least overweight and a third clinically obese.

The process of conducting a dietary exposure assessment involves the determination of the chemical residues on a particular food or foods and the calculation of the dietary exposure to these chemicals based on consumption data for the specified food or foods. A dietary exposure assessment allows a comparison to a relevant health standard such as the acceptable daily intake(ADI), the acute reference dose.

Mexico has sought to ensure food security through its history. Yet, despite various efforts, Mexico continues to lack national food and nutrition strategies that secure food security for the people. As a large country of more than 100 million people, planning and executing social policies are complex tasks. Although Mexico has been expanding its food and nutrition programs that have been expected, and to some degree, have contributed to increases in health and nutrition, food security, particularly as it relates to obesity and malnutrition, still remains a relevant public health problem. Although food availability is not the issue, severe deficiencies in the accessibility of food contribute to insecurity.
