Grape-stomping (also known as pigeage [1] [2] [3] ) is part of method of maceration used in traditional winemaking. Rather than using a wine press or other mechanized method, grapes were crushed by having barefoot participants repeatedly stomp on them in vats to release their juices and begin fermentation. Stomping was widespread in the history of winemaking, but with the introduction of industrial methods, it now survives mostly as a recreational or competitive activity at cultural festivals.

Maceration is the winemaking process where the phenolic materials of the grape—tannins, coloring agents (anthocyanins) and flavor compounds—are leached from the grape skins, seeds and stems into the must. To macerate is to soften by soaking, and maceration is the process by which the red wine receives its red color, since raw grape juice is clear-grayish in color. In the production of white wines, maceration is either avoided or allowed only in very limited manner in the form of a short amount of skin contact with the juice prior to pressing. This is more common in the production of varietals with less natural flavor and body structure like Sauvignon blanc and Sémillon. For Rosé, red wine grapes are allowed some maceration between the skins and must, but not to the extent of red wine production.

The history of wine-making stretches over millennia. The science of wine and winemaking is known as oenology. A winemaker may also be called a vintner. The growing of grapes is viticulture and there are many varieties of grapes.

A wine press is a device used to extract juice from crushed grapes during wine making. There are a number of different styles of presses that are used by wine makers but their overall functionality is the same. Each style of press exerts controlled pressure in order to free the juice from the fruit. The pressure must be controlled, especially with grapes, in order to avoid crushing the seeds and releasing a great deal of undesirable tannins into the wine. Wine was being made at least as long ago as 4000 BC; in 2011, a wine press was unearthed in Armenia with red wine dated 6,000 years old.

History

One of the earliest extant visual representations of the practice appears on a Roman Empire sarcophagus from the 3rd century AD, which depicts an idealized pastoral scene with a group of Erotes harvesting and stomping grapes at Vindemia, a rural festival. [4]

The Roman Empire was the post-Roman Republic period of the ancient Roman civilization. Ruled by emperors, it had large territorial holdings around the Mediterranean Sea in Europe, North Africa, the Middle East, and the Caucasus. From the constitutional reforms of Augustus to the military anarchy of the third century, the Empire was a principate ruled from the city of Rome. The Roman Empire was then divided between a Western Roman Empire, based in Milan and later Ravenna, and an Eastern Roman Empire, based in Nicomedia and later Constantinople, and it was ruled by multiple emperors.

A sarcophagus is a box-like funeral receptacle for a corpse, most commonly carved in stone, and usually displayed above ground, though it may also be buried. The word "sarcophagus" comes from the Greek σάρξ sarx meaning "flesh", and φαγεῖν phagein meaning "to eat"; hence sarcophagus means "flesh-eating", from the phrase lithos sarkophagos, "flesh-eating stone". The word also came to refer to a particular kind of limestone that was thought to rapidly facilitate the decomposition of the flesh of corpses contained within it due to the chemical properties of the limestone itself.

A pastoral lifestyle is that of shepherds herding livestock around open areas of land according to seasons and the changing availability of water and pasture. It lends its name to a genre of literature, art, and music that depicts such life in an idealized manner, typically for urban audiences. A pastoral is a work of this genre, also known as bucolic, from the Greek βουκολικόν, from βουκόλος, meaning a cowherd.

Many contemporary wineries hold grape-stomping contests to attract visitors. The practice is also the subject of many depictions in contemporary media, including the 1974 Mel Tillis song "Stomp Them Grapes," the I Love Lucy episode "Lucy's Italian Movie," and The Littlest Grape Stomper, [5] a children's book by Alan Madison. It followed the life of Lucy Ricardo (Ball), a middle class housewife in New York City, who either concocted plans with her best friends to appear alongside her bandleader husband Ricky Ricardo (Arnaz) in his nightclub, or tried numerous schemes to mingle with, or be a part of show business. After the series ended in 1957, a modified version continued for three more seasons with 13 one-hour specials; it ran from 1957 to 1960. It was first known as The Lucille Ball-Desi Arnaz Show and later in reruns as The Lucy–Desi Comedy Hour. Following the end of that, Ball divorced Arnaz and appeared in three other sitcoms into 1986.

Viognier varietal

Viognier is a white wine grape variety. It is the only permitted grape for the French wine Condrieu in the Rhône Valley. Outside of the Rhône, Viognier can be found in regions of North and South America as well as Australia, New Zealand, the Cape Winelands in South Africa and Israel. In some wine regions, the variety is co-fermented with the red wine grape Syrah where it can contribute to the color and bouquet of the wine.

German wine is primarily produced in the west of Germany, along the river Rhine and its tributaries, with the oldest plantations going back to the Roman era. Approximately 60 percent of the German wine production is situated in the federal state of Rhineland-Palatinate, where 6 of the 13 regions (Anbaugebiete) for quality wine are situated. Germany has about 102,000 hectares of vineyard, which is around one tenth of the vineyard surface in Spain, France or Italy. The total wine production is usually around 9 million hectoliters annually, corresponding to 1.2 billion bottles, which places Germany as the eighth largest wine-producing country in the world. White wine accounts for almost two thirds of the total production.

Verdelho varietal

Verdelho is a white wine grape grown throughout Portugal, though most associated with the island of Madeira, and also gives its name to one of the four main types of Madeira wine. At the turn of the 20th century it was the most widely planted white grape in Madeira.

Agiorgitiko varietal

Agiorgitiko is a red Greek wine grape variety that, as of 2012, was the most widely planted red grape variety in Greece, ahead of Xynomavro. The grape has traditionally been grown in the Nemea region of the Peloponnese but can be found throughout the country including Attikí (Attica) and Makedonía (Macedonia).

Trollinger varietal

Trollinger is a red German/Italian wine grape variety that was likely first originally cultivated in the wine regions of South Tyrol and Trentino, but today is almost exclusively cultivated on steep, sunny locations in the Württemberg wine region of Baden-Württemberg. It is primarily known under the synonyms Trollinger in Germany, Vernatsch in South Tyrol and Schiava in other Italian regions. As a table grape the variety is sometimes known as Black Hamburg, which is commonly confused with the similar synonym for Black Muscat—a variety that is actually a cross of Trollinger and Muscat of Alexandria.

It is the principal grape variety used in the production of the Appellation d'Origine Contrôlée AOC red wine Patrimonio, where it must by law make up 95% of the blend. An early budding vine, Nielluccio produces wines lacking in color and with high alcohol levels. It is commonly used to make rosé wine.

Although the state extends across the western third of the continent, its wine regions are almost entirely situated in the cooler climate of its south-western tip. Western Australia produces less than 5% of the country's wine output, but in quality terms it is very much near the top.

The use of vine training systems in viticulture is aimed primarily to assist in canopy management with finding the balance in enough foliage to facilitate photosynthesis without excessive shading that could impede grape ripening or promote grape diseases. Additional benefits of utilizing particular training systems could be to control potential yields and to facilitate mechanization of certain vineyard tasks such as pruning, irrigation, applying pesticide or fertilizing sprays as well as harvesting the grapes.

History of the wine press

The history of the wine press and of pressing is nearly as old as the history of wine itself with the remains of wine presses providing some of the longest-serving evidence of organised viticulture and winemaking in the ancient world. The earliest wine press was probably the human foot or hand, crushing and squeezing grapes into a bag or container where the contents would ferment.

Ortrugo is a white Italian wine grape variety that is grown in the Piacenza hills of the Emilia-Romagna region of north central Italy. Here the grape is often blended with Malvasia in the DOC white wines of the area. According to wine expert Oz Clarke, the grape has moderate acidity with high alcohol potential and often contributes a deep yellow color to the wine. In some regions the grape is used in slightly sparkling frizzante and fully sparkling spumante wines.
