Helen Tse MBE (born 1977) is a British author and restaurateur. Her most noted work has been Sweet Mandarin, a memoir of three generations of Chinese women, beginning with her grandmother, Lily Kwok, establishing themselves in the Manchester area.
Before becoming an author and restaurateur, Tse studied law at Cambridge University and then worked in finance and law for Clifford Chance and PricewaterhouseCoopers. In 2006, she won a Young Accountant of the Year award and in 2008 she was awarded an honorary doctorate from Staffordshire University for her "contribution to literature". [1] [2] [3] [4]
Tse is one of three granddaughters of Lily Kwok; the others are Lisa and Janet. All three have continued in the hospitality business with Sweet Mandarin, a Chinese restaurant they opened together in 2004 in Manchester's Northern Quarter, where "Lily Kwok's Chicken Curry" remains a menu item. [5] In 2007 Helen Tse published a family memoir, also called Sweet Mandarin, about her grandmother's life and career. Tse was appointed Member of the Order of the British Empire (MBE) in the 2014 New Year Honours for services to the food and drink sector. [9]
Dim sum is a large range of small Chinese dishes that are traditionally enjoyed in restaurants for brunch. Most modern dim sum dishes are commonly associated with Cantonese cuisine, although dim sum dishes also exist in other Chinese cuisines. In the tenth century, when the city of Canton (Guangzhou) began to experience an increase in commercial travel, many frequented teahouses for small-portion meals with tea called "yum cha" (brunch). "Yum cha" includes two related concepts. The first is "jat zung loeng gin", which translates literally as "one cup, two pieces". This refers to the custom of serving teahouse customers two delicately made food items, savory or sweet, to complement their tea. The second is dim sum, which translates literally to "touch the heart", the term used to designate the small food items that accompanied the tea.
Bok choy, pak choi or pok choi is a type of Chinese cabbage, used as food. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. Its flavour is described as being between spinach and water chestnuts but slightly sweeter, with a mildly peppery undertone. The green leaves have a stronger flavor than the white bulb.

Manti is a type of dumpling mainly found in Turkish cuisine, Armenian cuisine and Central Asian cuisine but also in West Asia, South Caucasus, and the Balkans. During her career, she operated China Moon restaurant in San Francisco and wrote cookbooks that popularized Chinese cuisine in America. China Moon's accompanying cookbook is credited with being one of the first fusion cuisine cookbooks. She was the 1989 recipient of the Who's Who of Food & Beverage in America James Beard Award. Tropp was called "the Julia Child of Chinese cooking."

Chinese chicken salad is a salad including chopped chicken and Chinese culinary ingredients that is common in parts of the United States. Though many variations exist, common features of Chinese chicken salads include lettuce, cabbage, carrots, cucumbers, chicken, deep-fried wonton skins or rice vermicelli and nuts.
