Karyn Calabrese (born April 20, 1947) is an American raw foodist and restaurateur. [1] [2] Her first restaurant, Karyn's Raw Bistro, is the longest-standing gourmet raw food restaurant in the United States.[ citation needed ]
Calabrese grew up in Hyde Park, a South Side neighborhood of Chicago. [1] Calabrese worked as a professional model in her teens and into her twenties, and was featured in national magazine and television commercials. [1]
Calabrese became a raw foodist with the impression that eating uncooked foods improves health. In the early 1980s, she hosted a support group at her home. Calabrese decided to transition careers from modeling to cooking and consulting about the raw and vegan lifestyle.[ citation needed ]
Calabrese has opened three restaurants (Karyn's Raw Bistro, Karyn's Cooked, and Karyn's On Green), a market (Karyn's Fresh Corner), a meal program (Karyn's At Home), a holistic therapy center (Karyn's Inner Beauty Center and O2 Day Spa), a branded line of food, a cookbook, a cleanse guide, and a natural make-up and skin care line. [1] Karyn also teaches workshops and promotes raw foodism, holistic therapies, and natural longevity. [1] [2]
Calabrese began having financial problems in 2012 after her restaurant in Lincoln Park burned down and business at her other locations stifled; in 2015 and 2016 she had been sued four times, for failing to meet accessibility standards for disabled persons at her restaurants, not paying rent for the spaces of her restaurants, and not paying condominium fees where she lived. [3] [4] She started a GoFundMe campaign to help keep her business afloat, but faced accusations of fraud and unsanitary practices. [5] [6]
In 2017, her flagship restaurant in Lincoln Park also closed down. [7]

According to the 2014 Zagat Survey, Karyn's On Green was the top-rated vegan restaurant in Chicago and the most formal of Karyn's restaurants. [8] Karyn's On Green is located in Chicago's West Loop. The restaurant closed in 2015. [9]

Raw foodism, also known as rawism or a raw food diet, is the dietary practice of eating only or mostly food that is uncooked and unprocessed. Depending on the philosophy, or type of lifestyle and results desired, raw food diets may include a selection of fruits, vegetables, nuts, seeds, eggs, fish, meat, and dairy products. The diet may also include simply processed foods, such as various types of sprouted seeds, cheese, and fermented foods such as yogurts, kefir, kombucha, or sauerkraut, but generally not foods that have been pasteurized, homogenized, or produced with the use of synthetic pesticides, fertilizers, solvents, and food additives.

Melngailis' restaurant appeared in New York Magazine's Top 100 Restaurants round up, and made it into Forbes' list of All Star New York Eateries for five consecutive years. Both businesses closed in 2016 after staff walked out over unpaid wages. After fleeing New York, Melngailis was tracked down in Tennessee and arrested for fraud in 2016. She was convicted in 2017.

"Make It Better Magazine" deemed it the best fine dining restaurant in 2014 and awarded them with the "Best of the North Shore" prize. It opened in 1989 and has been in business for 25 years. Mark Grosz is the head chef as well as the owner of the establishment. It is located at 505 Main Street, two blocks from the Main St. 'L' Station. Oceanique has an adjoining outdoor patio that customers can use, weather permitting.
Little Pine was a fine-dining vegan bistro located in the Silver Lake neighborhood of Los Angeles, California. It was founded by electronic musician and animal rights activist Moby. In July 2020, local plant-based investors took over operations of the restaurant. The restaurant served organic, vegan, Mediterranean-inspired dishes and has a retail section with art and books, curated by Moby himself. Moby's vision was to create a space that includes various aspects of society that he cares about. The restaurant closed down in December 2022.
