Mary-Ellen McTague is a Manchester chef who has run two successful restaurants in the city; Aumbry and 4244.
Mary-Ellen McTague attended St Gabriel's RC High School and Holy Cross College in Bury but gave up studying languages at university after deciding that she wanted to become a chef. [1]
Having previously spent time working in the kitchen of the Manchester Roadhouse making food for touring bands who played at the venue [2] it was at the Roadhouse that McTague decided she wanted to cook for a living. She wrote to a number of restaurants and received responses from Heston Blumenthal, who wanted her to get some experience, and the Michelin starred Sharrow Bay Country House in Ullswater in the Lake District, which gave her a job cleaning rooms until an opportunity in the kitchens arose. Starting off as a Commis Chef and working her way up to Chef de Partie, it was at Sharrow Bay that McTague became the hotel’s first female chef and where she also met her husband, chef Laurence Tottingham. Following their time at Sharrow Bay, McTague and Tottingham went to America, working for a period in the Big Cedar Lodge in Missouri. On returning to England McTague wrote again to Heston Blumenthal at The Fat Duck and was given a role compiling historical research and developing dishes for Blumenthal's pub The Hind's Head. [3] McTague remained there for four years before opening her own restaurant Aumbry in Prestwich, Greater Manchester with Tottingham in 2009. [4]
Despite being set in an intimately small location Aumbry quickly became a much loved and critically acclaimed restaurant with Simon Hattenstone describing it in The Guardian as a "miracle of Lilliputian industry." [5] and The Telegraph's Zoe Williams declaring that "From a fancy cheese puff to a potty-yet-perfect pudding, the menu at Aumbry blew my mind." [6]
In the autumn of 2014 Aumbry closed for refurbishment and a temporary pop up restaurant called 4244 was set up in Manchester’s Northern Quarter. [7] 4244's run was initially planned for only a few weeks but was quickly extended until the end of the year [8] and in January 2015 McTague ended speculation about the future of Aumbry by confirming that it would not reopen. [9]
Later that month McTague announced that she would be working in collaboration with Prestwich bar Cuckoo to run a three-month residency in the venue, offering bistro food with a focus on locally sourced produce. [10]
In March 2015 McTague’s business partner and co-owner of the Manchester Roadhouse Kate Mountain, announced that she had decided to close the Roadhouse after it had been a music venue for 22 years. [11] Days later a further announcement revealed that McTague and Mountain would be turning the site into a new city centre restaurant. [2]
McTague has appeared on two series of the BBC series Great British Menu , in 2013 [12] and 2014. [13] She is also regularly interviewed on BBC television and radio and has written a food column for The Guardian newspaper. [14]
McTague and her restaurants have won a number of awards. In 2012 Aumbry won Restaurant of the Year at the Manchester Food and Drink Awards [15] and the following year she was named Chef of the Year. [16] In 2014 McTague won the Cheshire Life and Lancashire Life Chef of the Year. [17]
Through her culinary work McTague has taken part in a range of creative collaborations. In 2012 Aumbry worked with Prestwich Book Festival to create a menu based on food featured in author Emma Jane Unsworth's book Hungry, The Stars and Everything. A one off menu was created and Unsworth read extracts of her book to diners at points throughout the meal. [18] The following year the restaurant devised another menu for the book festival, this time based on Sybille Bedford's work A Legacy with readings provided by actress Julie Hesmondhalgh. [19]
In 2015 the Manchester International Festival commissioned McTague to create a magical food event to celebrate the 150th anniversary of the publication of Alice's Adventures in Wonderland, with tickets selling out in minutes. Participants were given a behind-the-scenes visit of Manchester Museum with culinary adventures in each room. [20]

Raymond Blanc OBE is a French chef. Blanc is the chef patron at Le Manoir aux Quat' Saisons, a hotel-restaurant in Great Milton, Oxfordshire, England. The restaurant has two Michelin stars and scored 9/10 in the Good Food Guide. He is entirely self-taught, but has himself taught or employed other chefs including Heston Blumenthal, John Burton-Race, Michael Caines, Paul Liebrandt, and Marco Pierre White.

He has advocated a scientific approach to cooking, for which he has been awarded honorary degrees from Reading, Bristol and London universities and made an honorary Fellow of the Royal Society of Chemistry.
The Fat Duck is a fine dining restaurant in Bray, Berkshire, England. It is run by celebrity chef proprietor Heston Blumenthal. Housed in a 16th-century building that had previously been the site of The Bell pub, The Fat Duck opened on 16 August 1995. Although it originally served food similar to that of a French bistro, it soon acquired a reputation for precision and invention, and has been at the forefront of many modern culinary developments, such as food pairing, flavour encapsulation and multi-sensory cooking.

Bryn Dwyfor Williams is a chef originally from Denbigh, Wales. He is the head chef and sole proprietor of Odette's Restaurant, Primrose Hill, London. He shot to fame as merely a sous chef in 2006 by beating established and well-known chefs to cook the fish course for the Queen's 80th birthday celebrations on the television programme Great British Menu. He is now widely regarded as one of Wales' best chefs and one of Britain's new crop of "celebrity" chefs. In June 2015 he opened his new bistro, Bryn@Porth Eirias, on the sea shore in the north Wales town of Colwyn Bay.
Stephanie Izard is an American chef and television personality residing in Chicago, Illinois, best known as the first female chef to win Bravo's Top Chef, taking the title during its fourth season. She is the co-owner and executive chef of three award-winning Chicago restaurants, Girl and the Goat, Little Goat, and Duck Duck Goat, and opened her first restaurant, Scylla as chef-owner at the age of 27. Izard received a James Beard Foundation Award for "Best Chef: Great Lakes" in 2013 for her work at Girl and the Goat. She has made a number of appearances on Top Chef since her win, both as a guest judge on subsequent seasons and as a participant in Top Chef Duels. In 2017, Izard competed in the Food Network series Iron Chef Gauntlet, where she overall defeated chefs Bobby Flay, Michael Symon, and Masaharu Morimoto to obtain the title of Iron Chef.
Little Chef was a chain of restaurants in the United Kingdom, founded in 1958 by entrepreneur Sam Alper, who was inspired by American diners. The chain was famous for their "Olympic Breakfast" – its version of a full English – and "Jubilee Pancakes". The restaurants were mostly located on the roadside near A roads, often paired with a Travelodge motel and a petrol station, as well as on motorways in Moto Services.
Bacon ice cream is an ice cream generally created by adding bacon to egg custard and freezing the mixture. The concept of bacon ice cream originated in a 1973 sketch on the British comedy series The Two Ronnies as a joke; however, it was eventually created for April Fools' Day. Heston Blumenthal experimented with the creation of ice cream, making a custard similar to scrambled eggs then adding bacon to create one of his signature dishes. It now appears on dessert menus in other restaurants.
Dinner by Heston Blumenthal is a restaurant in London, England. Opened in January 2011, it gained a Michelin star within a year, and in April 2014 was listed fifth on The World's 50 Best Restaurants in Restaurant magazine. It received a second star in 2014. The restaurant was headed by former Fat Duck head chef Ashley Palmer-Watts, but after leaving in December 2019, Jon Miles-Bowring is now Head Chef at the restaurant. Menu items are based on historical British dishes, which were researched by food historians and through the British Library. The restaurant's opening drew interest within the industry, and reviews have been positive. Particular dishes have received praise, including the "meat fruit", a chicken liver mousse created to look like a mandarin orange.

Vikram Vij is an Indian-born Canadian chef, cookbook author, and television personality. He is co-owner, with his ex-wife Meeru Dhalwala, of the Indian cuisine restaurants Vij's Restaurant and Rangoli Restaurant in Vancouver, British Columbia. He also owns My Shanti, a restaurant in South Surrey, BC. In 2014, Vij was announced as a new "dragon" investor on the Canadian reality show Dragons' Den for its ninth season and departed at the end of the season.
The Hind's Head, also called The Hinds Head, is a gastropub in Bray, Berkshire. The pub dates from the 15th century, and was converted into a restaurant in the 1920s. It was awarded a single Michelin star in the 2013 edition of the Michelin Guide. It has been owned by chef Heston Blumenthal since 2004.

Pollen Street Social is a restaurant in London, England, run by chef Jason Atherton. It was Atherton's first UK solo restaurant, and in 2011 was named the best new UK restaurant by the Good Food Guide, and the best new fine-dining restaurant in London by Time Out. It currently holds one Michelin star, which it gained within a year of opening. Elements in the restaurant such as the dessert bar have been subsequently included in Atherton's other restaurants.
Angela Hartnett at The Connaught, also known as MENU, was a restaurant owned by Gordon Ramsay Holdings and run by chef Angela Hartnett. It was located within The Connaught in Mayfair, London. The restaurant was opened following Ramsay's successful opening of Gordon Ramsay at Claridge's, within the Claridge's hotel, which is owned by the same equity group. Ramsay had originally been asked to move Restaurant Gordon Ramsay into the space, but suggested that Hartnett should run a new operation there instead. The restaurant was awarded a Michelin star in the 2004 guide and held it until it closed in 2007.
Union Street Café is a restaurant, owned by chef Gordon Ramsay, in Southwark, London. It was the first of Ramsay's restaurants to be opened without the involvement of Chris Hutchinson, and at one point was backed by footballer David Beckham. The Café serves Mediterranean cuisine, with mostly Italian dishes. The head chef, Davide Degiovanni, designs the menu, which is changed daily. Before the Café was opened, it received more than 10,000 booking requests, with seating filled to the end of the year. Food critics' reviews have been mixed, with differing opinions of the veal saltimbocca but agreement in dislike of a dish of octopus, borlotti bean, and 'nduja sausage.
The Manchester Roadhouse was a basement music club based at number 8 Newton Street in Manchester’s Northern Quarter. In March 2015 it was announced that it was to close for business later that year.

Her prizes included $250,000, an Alfa Romeo Giulietta, and a monthly column in Delicious., an Australian food magazine. Following the final, guest judge Heston Blumenthal offered her a job at his restaurant The Fat Duck, which she accepted.
