Peter Elwood (born 1930) is professor of epidemiology who for more than two decades led the Medical Research Council's Epidemiological Unit in South Wales. In 1979 he initiated the Caerphilly Heart Disease Study.
Elwood completed four house jobs and six months in general practice, before opting towards epidemiology and studying whether some lung diseases favoured Northern Irish flax workers. [1]
His work has included a 35 year study involving over 2,500 men, on the effects of aspirin on platelets and heart disease, carried out in Caerphilly, Wales. [2]
He showed that absorption of iron from iron salts added to bread was at "about 4 per cent" in women with low hemoglobin level, which was lower than the previously assumed amount of "about 30 per cent". [3] He showed that giving milk to vulnerable children at school was beneficial but was not re-implemented. [3]
Fructose, or fruit sugar, is a ketonic simple sugar found in many plants, where it is often bonded to glucose to form the disaccharide sucrose. It is one of the three dietary monosaccharides, along with glucose and galactose, that are absorbed by the gut directly into the blood of the portal vein during digestion. The liver then converts both fructose and galactose into glucose, so that dissolved glucose, known as blood sugar, is the only monosaccharide present in circulating blood.

Dietary fiber or roughage is the portion of plant-derived food that cannot be completely broken down by human digestive enzymes. Dietary fibers are diverse in chemical composition and can be grouped generally by their solubility, viscosity and fermentability which affect how fibers are processed in the body. Dietary fiber has two main subtypes: soluble fiber and insoluble fiber which are components of plant-based foods such as legumes, whole grains, cereals, vegetables, fruits, and nuts or seeds. A diet high in regular fiber consumption is generally associated with supporting health and lowering the risk of several diseases. Dietary fiber consists of non-starch polysaccharides and other plant components such as cellulose, resistant starch, resistant dextrins, inulin, lignins, chitins, pectins, beta-glucans, and oligosaccharides.
Archibald Leman Cochrane was a Scottish physician noted for his book, Effectiveness and Efficiency: Random Reflections on Health Services, which advocated the use of randomized controlled trials (RCTs) to improve clinical trials and medical interventions. His advocacy of RCTs eventually led to the creation of the Cochrane Library database of systematic reviews, the UK Cochrane Centre in Oxford and Cochrane, an international organization of review groups that are based at research institutions worldwide. He is known as one of the fathers of modern clinical epidemiology and is considered to be the originator of the idea of evidence-based medicine. A cohort study is a particular form of longitudinal study that samples a cohort, performing a cross-section at intervals through time. It is a type of panel study where the individuals in the panel share a common characteristic.
The Mediterranean diet is a concept first invented in 1975 by the American biologist Ancel Keys and chemist Margaret Keys. The diet took inspiration from the supposed eating habits and traditional food typical of Crete, much of the rest of Greece, and southern Italy, and formulated in the early 1960s. It is distinct from Mediterranean cuisine, which covers the actual cuisines of the Mediterranean countries, and from the Atlantic diet of northwestern Spain and Portugal. While inspired by a specific time and place, the "Mediterranean diet" was later refined based on the results of multiple scientific studies.
A multivitamin is a preparation intended to serve as a dietary supplement with vitamins, dietary minerals, and other nutritional elements. Such preparations are available in the form of tablets, capsules, pastilles, powders, liquids, or injectable formulations. Other than injectable formulations, which are only available and administered under medical supervision, multivitamins are recognized by the Codex Alimentarius Commission as a category of food.
The Framingham Heart Study is a long-term, ongoing cardiovascular cohort study of residents of the city of Framingham, Massachusetts. The study began in 1948 with 5,209 adult subjects from Framingham, and is now on its third generation of participants. Prior to the study almost nothing was known about the epidemiology of hypertensive or arteriosclerotic cardiovascular disease. Much of the now-common knowledge concerning heart disease, such as the effects of diet, exercise, and common medications such as aspirin, is based on this longitudinal study. It is a project of the National Heart, Lung, and Blood Institute, in collaboration with Boston University. Various health professionals from the hospitals and universities of Greater Boston staff the project.
Phytic acid is a six-fold dihydrogenphosphate ester of inositol, also called inositol hexaphosphate, inositol hexakisphosphate (IP6) or inositol polyphosphate. At physiological pH, the phosphates are partially ionized, resulting in the phytate anion.
A prospective cohort study is a longitudinal cohort study that follows over time a group of similar individuals (cohorts) who differ with respect to certain factors under study to determine how these factors affect rates of a certain outcome. For example, one might follow a cohort of middle-aged truck drivers who vary in terms of smoking habits to test the hypothesis that the 20-year incidence rate of lung cancer will be highest among heavy smokers, followed by moderate smokers, and then non–smokers.
Copper is an essential trace element that is vital to the health of all living things. In humans, copper is essential to the proper functioning of organs and metabolic processes. Also, in humans, copper helps maintain the nervous system, immune system, brain development, and activates genes, as well as assisting in the production of connective tissues, blood vessels, and energy. The human body has complex homeostatic mechanisms which attempt to ensure a constant supply of available copper, while eliminating excess copper whenever this occurs. However, like all essential elements and nutrients, too much or too little nutritional ingestion of copper can result in a corresponding condition of copper excess or deficiency in the body, each of which has its own unique set of adverse health effects.
Nutritional epidemiology examines dietary and nutritional factors in relation to disease occurrence at a population level. Nutritional epidemiology is a relatively new field of medical research that studies the relationship between nutrition and health. It is a young discipline in epidemiology that is continuing to grow in relevance to present-day health concerns. Diet and physical activity are difficult to measure accurately, which may partly explain why nutrition has received less attention than other risk factors for disease in epidemiology.

Frank B. Hu is a Chinese American nutrition and diabetes researcher. He is Chair of the Department of Nutrition and the Fredrick J. Stare Professor of Nutrition and Epidemiology at the Harvard T.H. Chan School of Public Health, and Professor of Medicine at the Harvard Medical School.

Virginia Minnich (1910–1996) was an American molecular biologist and hematology researcher known for discovering hemoglobin E, an abnormal form of hemoglobin that can cause blood disorders, and for working out the glutathione synthesis pathway. She was a noted blood morphologist and teacher and helped set up hematology laboratories around the world. She was the first person without a PhD or MD to be appointed a Professor of Medicine at Washington University School of Medicine.
Cuilin Zhang is a Chinese-American epidemiologist and physician-scientist researching the roles of genetic and environmental factors in the pathogenesis of gestational diabetes, type 2 diabetes, and obesity and health consequences of these complications. Zhang is a senior investigator and acting chief of the epidemiology branch at the Eunice Kennedy Shriver National Institute of Child Health and Human Development.
