Roy's is an upscale American restaurant that specializes in Hawaiian and Japanese fusion cuisine, with a focus on sushi, seafood and steak. The chain was founded by James Beard Foundation Award Winner, Roy Yamaguchi in 1988 in Honolulu, Hawaii. [3] The concept was well received among critics upon inception. [4] The concept has grown to include 21 Roy's restaurants in the continental United States, six in Hawaii, one in Japan and one in Guam.
Roy's is known best for its eclectic blend of Hawaiian, Japanese, and Classic French cuisine created by founder Roy Yamaguchi who was born in Tokyo, Japan, and spent his childhood visiting his grandparents who owned a tavern in Wailuku, Maui. Yamaguchi then graduated from the Culinary Institute of America where he received his formal culinary training and credits these factors to inspiring his unique culinary vision that is brought to life at Roy's.
Twenty mainland locations were owned and operated by Bloomin' Brands, Inc., until December 2014 when they were sold to United Ohana, LLC. [5] The locations of Hawai'i and Pebble Beach, California, remain under original ownership.
In the last several years, multiple Roy's locations on the mainland have closed. Of the original 20 locations that United Ohana, LLC purchased, only three locations remain open: two in California, and one in Florida. [6]

Maui Tacos is a fast casual franchise restaurant that serves Maui-Mex food with a fusion of Hawaiian flavors. The first Maui Tacos was opened by Mark Ellman in 1993 in Nāpili, Maui, Hawaiʻi. Ellman opened six more locations in Hawaiʻi before opening his first store in the mainland in 1998. Maui Tacos now has 21 restaurants in 11 states and recently opened its sixth Maui location, in Kalama Village, Kihei. They came together to form an organization to create a new American regional cuisine, highlighting Hawaii's locally grown ingredients and diverse ethnic styles. In 1994 they all came together and compiled a cookbook, The New Cuisine of Hawaii, to be sold for charity. Wong and Choy are alumni of the Kapiolani Community College Culinary Arts program. Wong had several restaurants in Hawaii, as well as one in Japan.

Cheeseburger in Paradise was a casual dining theme restaurant chain in the United States that operated between 2002 and 2020. The chain started in 2002 as a partnership of American musician Jimmy Buffett's company, the Orlando, Florida-based Margaritaville Holdings LLC, and OSI Restaurant Partners, with Buffett licensing the name and Outback Steakhouse operating the franchising of restaurants. After a change of ownership in 2012, most of the restaurants were closed by 2014. The last location closed in September 2020.

Lee Roy Selmon's was an American casual dining restaurant chain located and founded in Florida by former NFL player Lee Roy Selmon. The concept was owned by OSI Restaurant Partners, LLC until 2008 when it was sold to MVP Holdings Tampa, Inc. owned by Outback Steakhouse founders Robert D. "Bob" Basham and Chris T. Sullivan. Lee Roy Selmon continued to work with the company through its transfer of ownership until his death in 2011. There are three locations, all of which are located in west-central Florida. It was announced on May 23, 2018, that the original location will be closing after 17 years.

Leonard's Bakery is a Portuguese bakery in Honolulu, Hawaii, known for popularizing the malasada. The fried pastry, slightly crispier and chewier than a doughnut and with no hole, is known as a cuisine of Hawaii. Though Portuguese immigrants brought the malasada to Hawaii at the turn of the 20th century, Leonard's opened in 1952 and brought it to a wider audience. Leonard's is a household name in Hawaii and is well known in the continental United States and internationally. A franchise location opened in Japan in 2008.
