Sack is an antiquated wine term referring to white fortified wine imported from mainland Spain or the Canary Islands. [1] There was sack of different origins such as:

The term Sherris sack later gave way to sherry as the English term for fortified wine from Jerez. Since sherry is practically the only one of these wines still widely exported and consumed, "sack" (by itself, without qualifier) is commonly but not quite correctly quoted as an old synonym for sherry.

Most sack was probably sweet, and matured in wooden barrels for a limited time. In modern terms, typical sack may have resembled cheaper versions of medium Oloroso sherry. [1]

Today, sack is sometimes seen included in the name of some sherries, such as the Williams & Humbert brand "Dry Sack". [2]

Etymology

The Collins English Dictionary , the Chambers Dictionary , and the Oxford English Dictionary all derive the word "sack" from the French sec, meaning "dry". However, the OED cannot explain the change in the vowel, and it has been suggested by others that the term is actually from the Spanish word sacar, [1] meaning "to withdraw", as in withdrawing wine from a solera, [3] which led to sacas. [1] The word "sack" is not attested before 1530. [4]

Julian Jeffs writes: "The word sack (there are several spellings) probably originated at the end of the fifteenth century, and is almost certainly derived from the Spanish verb sacar ("to withdraw"). In the minutes of the Jerez town council for 1435, exports of wine were referred to as sacas." [3]

Historical background

The Duke of Medina Sidonia abolished taxes on export of wine from Sanlúcar de Barrameda in 1491, allowing both Spanish and foreign ships. English merchants were given preferential treatment in 1517, and distinction was upheld between second-rate wines, so-called "Bastards", and first-rate wines which were known as "Rumneys" and "Sacks". Málaga, formerly in the Kingdom of Granada, also took to using the name sack for its wines, which were previously sold as "Garnacha". [4]

This wine was similar to another wine known as malmsey, made from Malvasia grapes.

Literary references

Sack appears in several of Shakespeare's plays. John Falstaff, introduced in 1597, was fond of sack, and sometimes refers specifically to Sherris sack. [5] In act 2, scene 2, of The Tempest , Stephano, Trinculo, and Caliban get drunk on sack, a barrel of which had provided Stephano's escape from the shipwreck ("I escaped upon a butt of sack, which the sailors heaved o'erboard ..."). [6] Shakespeare's minor character Christopher Sly, a drunkard and an object of a jest in The Taming of the Shrew , declares that he has "ne'er drunk sack in his life". [7]

Robert Herrick wrote two comic poems in praise of sack, "His Farewell to Sack" [8] and "The Welcome to Sack". [9]

Ben Jonson's Inviting a Friend to Supper refers to "A pure cup of rich Canary wine, / Which is the Mermaid's now, but shall be mine".

The early Poets Laureate of England and the UK, such as Jonson and Dryden, received their salary, in part or in whole, in sack. Later laureates, including Pye and Tennyson, took cash in lieu of sack.

Samuel Pepys thought "Malago Sack ... was excellent wine, like a spirit rather than wine." [10]

In the English fairy tale The Three Heads of the Well, upon leaving the kingdom the antagonist is given "sweetmeats, sugar, almonds, &c., in great quantities, and a large bottle of Malaga sack", in contrast to bread, hard cheese, and a bottle of beer given to the protagonist. [11]

Malvasia, also known as Malvazia, is a group of wine grape varieties grown historically in the Mediterranean region, Balearic Islands, Canary Islands and the island of Madeira, but now grown in many of the winemaking regions of the world. In the past, the names Malvasia, Malvazia, and Malmsey have been used interchangeably for Malvasia-based wines; however, in modern oenology, "Malmsey" is now used almost exclusively for a sweet variety of Madeira wine made from the Malvasia grape. Grape varieties in this family include Malvasia bianca, Malvasia di Schierano, Malvasia negra, Malvasia nera, Malvasia nera di Brindisi, Malvasia di Candia aromatica, Malvasia odorosissima, and a number of other varieties.

Sherry is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries.

Jerez de la Frontera or simply Jerez, also cited in old English-language sources as Xeres, is a city and municipality in the province of Cádiz in the autonomous community of Andalusia, Spain. Located in southwestern Iberia, it lies on the Campiña de Jerez, an inland low-land plain crossed by the Guadalete river, midway the Atlantic Ocean, the Guadalquivir river and the western reaches of the Subbaetic System.

In Spain, the denominación de origen is part of a regulatory geographical indication system used primarily for foodstuffs such as cheeses, condiments, honey, and meats, among others. In wines, it parallels the hierarchical systems of France (1935) and Italy (1963), although Rioja (1925) and Jerez (1933) preceded the full system. In foods, it performs a similar role, regulation of quality and geographical origin of products from Spain. There are five other designated categories solely for wine and a further three specifically covering food and condiments, all recognised by the European Union (EU). In Catalonia, two further categories – labelled A and Q – cover traditional Catalan artisan food products, but were not recognised by the EU as of 2007. In recent decades, the concept of the denominación de origen has been adopted by other countries, primarily in Latin America. In 2016, the use of the Denominación de Origen (DO) for wines was registered as a European Union Protected Designations of Origin/Denominación de Origen Protegida (PDO/DOP), but the traditional Portuguese term of DO can still be used legally on labels.

Pedro Ximénez is the name of a white Spanish wine grape variety grown in several Spanish wine regions but most notably in the denominación de origen (DO) of Montilla-Moriles. Here it is used to produce a varietal wine, an intensely sweet, dark, dessert sherry. It is made by drying the grapes under the hot sun, concentrating the sweetness, which are then used to create a thick, black liquid with a strong taste of raisins and molasses that is fortified and aged in solera.

David Martin Bevington was an American literary scholar. He was the Phyllis Fay Horton Distinguished Service Professor Emeritus in the Humanities and in English Language & Literature, Comparative Literature, and the college at the University of Chicago, where he taught since 1967, as well as chair of Theatre and Performance Studies. "One of the most learned and devoted of Shakespeareans," so called by Harold Bloom, he specialized in British drama of the Renaissance, and edited and introduced the complete works of William Shakespeare in both the 29-volume, Bantam Classics paperback editions and the single-volume Longman edition. After accomplishing this feat, Bevington was often cited as the only living scholar to have personally edited Shakespeare's complete corpus.

The Mermaid Tavern was a tavern on Cheapside in London during the Elizabethan era, located east of St. Paul's Cathedral on the corner of Friday Street and Bread Street. It was the site of the so-called "Fraternity of Sireniacal Gentlemen", a drinking club that met on the first Friday of every month that included some of the Elizabethan era's leading literary figures, among them Ben Jonson, John Donne, John Fletcher and Francis Beaumont, Thomas Coryat, John Selden, Robert Bruce Cotton, Richard Carew, Richard Martin, and William Strachey. A popular tradition has grown up that the group included William Shakespeare, although most scholars think that was improbable.

Jonathan Goldberg was an American literary theorist who was the Sir William Osler Professor of English Literature at Johns Hopkins University, and Arts and Sciences Distinguished Professor Emeritus of English at Emory University where he directed Studies in Sexualities from 2008 to 2012. His work frequently deals with the connections between early modern literature and modern thought, particularly in issues of gender, sexuality, and materiality. He received his BA, MA, and PhD from Columbia University.

Spanish wine includes red, white, and sparkling wines produced throughout the country. Located on the Iberian Peninsula, Spain has over 1.2 million hectares planted in wine grapes, making it the most widely planted wine-producing nation, but the third largest producer of wine in the world, behind Italy and France and ahead of the United States; this is due, in part, to the very low yields and wide spacing of the old vines planted on the dry soils found in some of the Spanish wine regions. The Woman's Prize, or the Tamer Tamed is a Jacobean comedy written by John Fletcher. It was first published in the first Beaumont and Fletcher folio of 1647, though it was written several decades earlier. There is no doubt that the play is the work of Fletcher alone; his highly distinctive and characteristic pattern of linguistic preferences is continuous through the text.

<span class="mw-page-title-main">History of Sherry</span>

The history of Sherry is closely linked with that of Spanish wine production, particularly the political fortunes of the Cádiz region, where it originated with the early Phoenician settlement of the Iberian Peninsula. The triangular region between the towns of Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda still marks the limits of the modern denominación. One of the world's oldest wines, its considerable evolution has been marked by the influence of many of the world's greatest empires and civilizations: the Phoenicians, Greeks, Romans, Moors, Spanish and British. Today, while Sherry does not enjoy the level of popularity it once did, it remains one of the wine world's most unusual and historical expressions.

<i>The Tempest</i> Play by William Shakespeare

The Tempest is a play by William Shakespeare, probably written in 1610–1611, and thought to be one of the last plays that he wrote alone. After the first scene, which takes place on a ship at sea during a tempest, the rest of the story is set on a remote island, where Prospero, a wizard, lives with his daughter Miranda, and his two servants: Caliban, a savage monster figure, and Ariel, an airy spirit. The play contains music and songs that evoke the spirit of enchantment on the island. It explores many themes, including magic, betrayal, revenge, and family. In Act IV, a wedding masque serves as a play-within-a-play, and contributes spectacle, allegory, and elevated language.
