Vino Greco

Vino Greco is the name of a wine style which originated, at least 2,150 years ago, as an Italian imitation of the sweet, strong Greek wines that were exported to Italy at the period of the Roman Republic and Roman Empire. Its names in other languages were: Latin vinum graecum; English Greek, greke, wine greke; French vin grec. The earliest recipe for vinum Graecum is in Cato the Elder's manual of farming, De agri cultura , compiled around 150 BC. Salt is added to the must. Once sealed in amphoras, vinum graecum is matured under the sun for two years before sale. [1] Incidentally, the name did not necessarily cause confusion with real exported Greek wine, which was called vinum transmarinum ("overseas wine") in classical Latin. Methods have changed totally over the long history of vino greco, but the name still survives in a few Italian wines, notably the sweet white Greco di Bianco and Greco di Gerace from southern Calabria (they both can be only produced in Reggio Calabria area).

Middles Ages to modern day

Vino greco reappears in late medieval and early modern texts from Italy, France, Catalonia, [2] Germany and England. Curiously, the 14th century Florentine merchant Francesco Pegolotti records in Pratica della mercatura (c. 1340) that vino greco was exported from Italy to Constantinople, the Byzantine Greek capital. Again, there was not necessarily any confusion, since wine exported from Greece was at that period usually called vino di Romania (Rumney wine in English).

The Italian gastronome Platina, in De honesta voluptate et valetudine (1475), says that the best vino greco was made at San Gimignano (Non improbatur et graecum, maxime vero quod in oppidum Geminianum in Hetruria nascitur), but he is careful to distinguish it from the still-famous Vernaccia di San Gimignano. Vino greco or wine Greek is described by several authors as being made on the slopes of Mount Vesuvius; one such traveller is the scientist John Ray, writing in 1673. Ray distinguishes this Greco from another Vesuvian type, Lagrime, which is evidently the wine now called Lacryma Christi.

Marcus Porcius Cato, also known as Cato the Censor, the Elder and the Wise, was a Roman soldier, senator, and historian known for his conservatism and opposition to Hellenization. He was the first to write history in Latin with his Origines, a now fragmentary work on the history of Rome. His work De agri cultura, a rambling work on agriculture, farming, rituals, and recipes, is the oldest extant prose written in the Latin language. His epithet "Elder" distinguishes him from his great-grandson Cato the Younger, who opposed Julius Caesar.

In Spain, the denominación de origen is part of a regulatory geographical indication system used primarily for foodstuffs such as cheeses, condiments, honey, and meats, among others. In wines, it parallels the hierarchical systems of France (1935) and Italy (1963), although Rioja (1925) and Jerez (1933) preceded the full system. In foods, it performs a similar role, regulation of quality and geographical origin of products from Spain. There are five other designated categories solely for wine and a further three specifically covering food and condiments, all recognised by the European Union (EU). In Catalonia, two further categories – labelled A and Q – cover traditional Catalan artisan food products, but were not recognised by the EU as of 2007. In recent decades, the concept of the denominación de origen has been adopted by other countries, primarily in Latin America. In 2016, the use of the Denominación de Origen (DO) for wines was registered as a European Union Protected Designations of Origin/Denominación de Origen Protegida (PDO/DOP), but the traditional Portuguese term of DO can still be used legally on labels.

Prosecco is an Italian DOC or DOCG white wine produced in a large area spanning nine provinces in the Veneto and Friuli Venezia Giulia regions, and named after the village of Prosecco, which is in the province of Trieste, Italy. It is made from the Prosecco grape but denomination rules allow up to 15% of the wine to be other permitted varieties. Prosecco is almost always made in sparkling or semi-sparkling style, but a still wine is also permitted. Within the larger designation are two small DOCG areas, Conegliano Valdobbiadene Prosecco in the hills between the towns of Conegliano and Valdobbiadene, and Asolo Prosecco around the nearby town of Asolo. Prosecco Superiore is always spumante and comes only from these DOCG areas.

Roman agriculture describes the farming practices of ancient Rome, during a period of over 1000 years. From humble beginnings, the Roman Republic and the Roman Empire expanded to rule much of Europe, northern Africa, and the Middle East and thus comprised many agricultural environments of which the Mediterranean climate of dry, hot summers and cool, rainy winter was the most common. Frascati, an Italian white wine, takes its name from the town of Frascati, located 25 km southeast of Rome, in Lazio, Italy. Archeological discoveries from the ancient town of Tusculum, now Frascati, demonstrate the cultivation of grapes for wine since the 5th century BC. Frascati was one of the preferred wines of ancient Rome, of Renaissance popes, of poets and artists visiting in the Grand Tour, and of the La Dolce Vita generation in the 1960s. Made from Malvasia di Candia, Malvasia del Lazio, Grechetto, Bombino bianco, and Trebbiano grapes, Frascati gained denominazione di origine controllata (DOC) status in 1966 and DOCG status in 2011, making it one of Italy's first DOC wines. The Frascati DOC/DOCG area is located in the heart of the Roman Castles, Tusculum and Albani Hills south of Rome, and north of Lake Albano. The vineyards range from 200 to 1,000 feet in altitude. The soils are well drained and volcanic. The DOC allows for a minimum of 70% Malvasia and/or Malvasia del Lazio and a 30% maximum of Trebbiano and/or Greco and a maximum of 10% other white grapes. Many of the vineyards' cellars have ancient Roman caves. Modern cellars and techniques are now leading the way to an ever-growing reputation of a fine quality wine, with many award-winning labels. Frascati wine is an ingredient in the Frascati Frizz aperitif.

Rumney wine was a popular form of Greek wine in England and Europe during the 14th to 16th centuries. Its name was derived from its exporter Romania, which was at that time a common name for Greece and the southern Balkans as the lands of the Eastern Roman Empire. The wine was called Rumney or Romney in English, Romenier or Rumenier in German, vino di Romania in Italian.

<i>De agri cultura</i> Book by Marcus Porcius Cato Censorius maior

De agri cultura, also known as On Farming or On Agriculture, is a treatise on Roman agriculture by Cato the Elder. It is the oldest surviving work of Latin prose. Alexander Hugh McDonald, in his article for the Oxford Classical Dictionary, dated this essay's composition to about 160 BC and noted that "for all of its lack of form, its details of old custom and superstition, and its archaic tone, it was an up-to-date "treatise" constructed from his own knowledge and experience to the new capitalistic farming." Cato was revered by many later authors for his practical attitudes, his natural stoicism and his tight, lucid prose. He is much quoted by Pliny the Elder, for example, in his Naturalis Historia.

Wines from Crete are not listed among those specially prized in classical Greece, but under the Roman Empire in the 2nd century AD Crete was known for a sweet wine, protropos, which was exported to Italy.

Vincotto is a dark, sweet, thick paste produced in rural areas of Italy. It is made by the slow cooking and reduction over many hours of non-fermented grape must until it has been reduced to about one-fifth of its original volume and the sugars present have caramelized. It can be made from a number of varieties of local red wine grapes, including Primitivo, Negroamaro and Malvasia Nera, and before the grapes are picked they are allowed to wither naturally on the vine for about thirty days. In Roman times it was known as sapa in Latin and epsima in Greek, the same names that are often used for it in Italy and Cyprus, respectively, today.

Tuscan wine is Italian wine from the Tuscany region. Located in central Italy along the Tyrrhenian coast, Tuscany is home to some of the world's most notable wine regions. Chianti, Brunello di Montalcino and Vino Nobile di Montepulciano are primarily made with Sangiovese grape whereas the Vernaccia grape is the basis of the white Vernaccia di San Gimignano. Tuscany is also known for the dessert wine Vin Santo, made from a variety of the region's grapes. Tuscany has forty-one Denominazioni di origine controllata (DOC) and eleven Denominazioni di Origine Controllata e Garantita (DOCG). In the 1970s a new class of wines known in the trade as "Super Tuscans" emerged. These wines were made outside DOC/DOCG regulations but were considered of high quality and commanded high prices. Many of these wines became cult wines. In the reformation of the Italian classification system many of the original Super Tuscans now qualify as DOC or DOCG wines but some producers still prefer the declassified rankings or to use the Indicazione Geografica Tipica (IGT) classification of Toscana. Tuscany has six sub-categories of IGT wines today.

Greco is an Italian wine grape that may be of Greek origin. The name relates to both white and black grape varieties. While there is more land area dedicated to Greco nero, the Greco bianco is the grape most commonly referred to by "Greco". In the Campania region it is used to produce the denominazione di origine controllata e garantita (DOCG) wine Greco di Tufo. In Calabria, it is used to make the denominazione di origine controllata (DOC) wine Greco di Bianco. The name "Greco" is sometimes used as a synonym for several varieties of supposed Greek origins-most notably Trebbiano.

Calabrian wine is Italian wine from the Calabria region of southern Italy. Over 90% of the region's wine production is red wine, with a large portion made from the Gaglioppo grape. Calabria has 12 denominazione di origine controllata (DOC) regions, but only 4% of the yearly production is classified as DOC wine. The region is one of Italy's most rural and least industrialized with per capita income less than half of the national average. Following World War II, many of Calabria's inhabitants emigrated to Northern Italy, the United States, Australia and Argentina. Those left behind have been slow to develop a vibrant wine industry with only the red wines of Cirò garnering much international attention. Today Calabrian wines are mostly produced to high alcohol levels and sold to co-operatives who transfer the wines to the northern Italian wine regions to use as blending component. Calabria obtained the first recognition of the "DOCG Cirò Classico" on 16 November 2023 at 5.00 pm in Cirò Marina at the "Borgo Saverona" hall. Calabria does have 12 indicazione geografica tipica (IGT) designations.

Est! Est!! Est!!! di Montefiascone is an Italian wine region centered on the commune of Montefiascone in the province of Viterbo in Lazio. Since 1966, the white Trebbiano and Malvasia bianca-based wines produced within the 1,000 acres (400 ha) of the region can qualify for Denominazione di origine controllata (DOC) designation under Italian wine laws.

Grape syrup is a condiment made with concentrated grape juice. It is thick and sweet because of its high ratio of sugar to water. Grape syrup is made by boiling grapes, removing their skins, squeezing them through a sieve to extract the juice. Like other fruit syrups, a common use of grape syrup is as a topping to sweet cakes, such as pancakes or waffles.
