Winter cereals, also called winter grains, fall cereals, fallgrains, or autumn-sown grains, are biennial cereal crops sown in the autumn. They germinate before winter comes, may partially grow during mild winters or simply persevere under a sufficiently thick snow cover to continue their life cycle in spring.
They are harvested earlier than grains of the same type sown in springtime. In general, winter cereals have a much higher yield than spring cereals because they can use snow as moisture for growth.
Winter strains are available for rye (winter or fall rye), wheat (winter or fall wheat), barley (winter or fall barley) and triticale (winter triticale).
A cereal is any grass cultivated for its edible grain, which is composed of an endosperm, a germ, and a bran. Cereal grain crops are grown in greater quantities and provide more food energy worldwide than any other type of crop and are therefore staple crops. They include rice, wheat, rye, oats, barley, millet, and maize. Edible grains from other plant families, such as buckwheat, quinoa, and chia, are referred to as pseudocereals.

Rye is a grass grown extensively as a grain, a cover crop and a forage crop. It is a member of the wheat tribe (Triticeae) and is closely related to both wheat and barley. Rye grain is used for flour, bread, beer, crispbread, some whiskeys, some vodkas, and animal fodder. It can also be eaten whole, either as boiled rye berries or by being rolled, similar to rolled oats.
Triticale is a hybrid of wheat (Triticum) and rye (Secale) first bred in laboratories during the late 19th century in Scotland and Germany. Commercially available triticale is almost always a second-generation hybrid, i.e., a cross between two kinds of primary (first-cross) triticales. As a rule, triticale combines the yield potential and grain quality of wheat with the disease and environmental tolerance of rye. Only recently has it been developed into a commercially viable crop. Depending on the cultivar, triticale can more or less resemble either of its parents. It is grown mostly for forage or fodder, although some triticale-based foods can be purchased at health food stores and can be found in some breakfast cereals.
The Irish Famine of 1740–1741 in the Kingdom of Ireland, is estimated to have killed between 13% and 20% of the 1740 population of 2.4 million people, which was a proportionately greater loss than during the Great Famine of 1845–1852.

This is often done with the intention of cutting costs, but sometimes also to create an additional feature, such as better foam retention, flavours or nutritional value or additives. Domestically and internationally, some commodities have faced increased scrutiny from disease and the ensuing marketing issues.
Ascochyta is a genus of ascomycete fungi, containing several species that are pathogenic to plants, particularly cereal crops. The taxonomy of this genus is still incomplete. The genus was first described in 1830 by Marie-Anne Libert, who regarded the spores as minute asci and the cell contents as spherical spores. Numerous revisions to the members of the genus and its description were made for the next several years. Species that are plant pathogenic on cereals include, A. hordei, A. graminea, A. sorghi, A. tritici. Symptoms are usually elliptical spots that are initially chlorotic and later become a necrotic brown. Management includes fungicide applications and sanitation of diseased plant tissue debris.
Barley, a member of the grass family, is a major cereal grain grown in temperate climates globally. It was one of the first cultivated grains, particularly in Eurasia as early as 10,000 years ago. Globally 70% of barley production is used as animal fodder, while 30% as a source of fermentable material for beer and certain distilled beverages, and as a component of various foods. It is used in soups and stews, and in barley bread of various cultures. Barley grains are commonly made into malt in a traditional and ancient method of preparation.
The Falling Number (FN), also referred to as the Hagberg number or Hagberg–Perten number, is the internationally standardized and most popular method for determining sprout damage. With the Falling Number test, so-called weather or sprout damaged wheat or rye, which adversely affects bread-making quality, could be detected at the grain silo intake within a few minutes.

Metopolophium dirhodum, the rose-grain aphid or rose-grass aphid, is a species of sap-sucking insect in the family Aphididae found worldwide. Its primary host is rose, and its secondary host is a grass, including cereals such as wheat, barley, oats and rye. It is an important vector of the barley yellow dwarf virus (BYDV) which causes serious reductions in yields of affected crops.
