Boilery

A boilery or boiling house is a place of boiling, much as a bakery is a place of baking. Boilery can also mean the process and equipment for boiling. Although they are now generally confined to factories, and usually boil industrial products rather than food, historically they were more common in daily life. Boileries are typically for boiling large quantities of fluid. [1]

In the 17th to 19th centuries, boileries were used to convert sugarcane juice into raw sugar. These boileries were usually sturdy places, built from stone, and contained several copper kettles, each with a furnace beneath it., [2] Sugarcane juice was treated with lime in large clarifying vats, before it was heated in copper kettles over individual furnaces. Due to their importance, many Western sugar plantations had their own boileries on site. [3]

Soap would also be made in a boiling house.

Another use for a boilery is to make salt through the evaporation of brine water. [4] [5]

Jaggery is a traditional non-centrifugal cane sugar consumed in the Indian Subcontinent, Southeast Asia, Central América, Brazil and Africa. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It contains up to 50% sucrose, up to 20% invert sugars, and up to 20% moisture, with the remainder made up of other insoluble matter, such as wood ash, proteins, and bagasse fibres. Jaggery is very similar to muscovado, an important sweetener in Portuguese, British and French cuisine. The Kenyan Sukari ngutu/nguru has no fibre; it is dark and is made from sugar cane and also sometimes extracted from palm tree.

On August 28, 1973, the site was added to the United States National Register of Historic Places under the title of Dunlawton Plantation-Sugar Mill Ruins.

Betty's Hope was a sugarcane plantation in Antigua. It was established in 1650, shortly after the island had become an English colony, and flourished as a successful agricultural industrial enterprise during the centuries of slavery. It was the first large-scale sugar plantation to operate in Antigua and belonged to the Codrington family from 1674 until 1944. Christopher Codrington, later Captain General of the Leeward Islands, acquired the property in 1674 and named it Betty's Hope, after his daughter.

The history of sugar has five main phases:

  1. The extraction of sugar cane juice from the sugarcane plant, and the subsequent domestication of the plant in tropical India and Southeast Asia sometime around 4,000 BC.
  2. The invention of manufacture of cane sugar granules from sugarcane juice in India a little over two thousand years ago, followed by improvements in refining the crystal granules in India in the early centuries AD.
  3. The spread of cultivation and manufacture of cane sugar to the medieval Islamic world together with some improvements in production methods.
  4. The spread of cultivation and manufacture of cane sugar to the West Indies and tropical parts of the Americas beginning in the 16th century, followed by more intensive improvements in production in the 17th through 19th centuries in that part of the world.
  5. The development of beet sugar, high-fructose corn syrup and other sweeteners in the 19th and 20th centuries.
<i>Wasanbon</i>

Wasanbon (和三盆) is a fine-grained Japanese sugar, traditionally made in the Shikoku prefectures of Tokushima and Kagawa, centered to the towns of Kamiita-cho and Donari-cho in Tokushima, where it has been made since about the 1770s. The sugar is often used for Japanese sweets. The sugar is made from thin sugarcane plants grown locally in Shikoku, called taketō (竹糖) or chikusha (竹蔗).

<span class="mw-page-title-main">McIntosh Sugarworks</span> United States historic place

The McIntosh Sugarworks, near St. Marys, Georgia, was built in the late 1820s by John Houstoun McIntosh. They are a significant example of tabby concrete architecture and represent an industrial component of southeastern plantation agriculture. The Tabby Ruins, as they are also known, are at 3600 Charlie Smith Sr. Highway at Georgia Spur 40, six miles north of St. Marys. The entrance is approximately across the street from the entrance to the Naval Submarine Base Kings Bay, on Charlie Smith Highway, at 30.79310°N 81.57712°W.

Grape syrup is a condiment made with concentrated grape juice. It is thick and sweet because of its high ratio of sugar to water. Grape syrup is made by boiling grapes, removing their skins, squeezing them through a sieve to extract the juice. Like other fruit syrups, a common use of grape syrup is as a topping to sweet cakes, such as pancakes or waffles.

<span class="mw-page-title-main">Non-centrifugal cane sugar</span> Traditional raw sugar obtained by evaporating water from sugarcane juice

Non-centrifugal cane sugar (NCS) is the technical name given to traditional raw sugar obtained by evaporating water from sugarcane juice. NCS is internationally recognized as a discrete and unique product by the FAO since 1964 and by the World Customs Organization (WCO) since 2007. WCO defines NCS as "cane sugar obtained without centrifugation". It also states that "the product contains only natural anhedral micro-crystals, of irregular shape, not visible to the naked eye, which are surrounded by molasses' residues and other constituents of sugar cane". NCS is produced in most sugarcane-growing regions of the world, being known by many different names such as panela, jaggery, or gur. Some varieties of muscovado are non-centrifugal.
