Cabalen is a Philippine buffet restaurant chain primarily serving traditional Filipino entrees heavy on influences from the Pampanga region of Central Luzon, ranging from Filipino, Thai, and even Japanese cuisines. [2] However, most of the meals are from Kapampangan cuisine. Most of the restaurants are located in Metro Manila with one restaurant located on Cebu and single international unit in the United States. Some of the locations are franchised operations. Many locations are situated within shopping malls.

Buffet restaurants normally offer all-you-can-eat food for a set price, but some measure prices by weight or by number of dishes. Buffets usually have some hot dishes, so the term cold buffet has been developed to describe formats lacking hot food. Hot or cold buffets usually involve dishware and utensils, but a finger buffet is an array of foods that are designed to be small and easily consumed only by hand, such as cupcakes, slices of pizza, foods on cocktail sticks, etc.

History

Cabalen, which literally translates to "a fellow Kapampangan", is a group of casual - fine dining restaurants known for authentic Kapampangan dishes and different Filipino specialties, originating from Pampanga, [2] such as Gatang Kohol (snails in coconut milk), betuteng tugak (stuffed frog), kamaru (crickets), adobong pugo (quail) and balut [2] (developing bird embryo). [3] [4] [5] These factors contributed to the eventual birth of Cabalen, the Kapampangan specialty restaurants. [2]

Kapampangan people ethnic group

The Kapampangan People, also known as Pampangueños or Pampangos, are the fifth largest ethnolinguistic group in the Philippines, numbering about 2.89 million. They live mainly in the provinces of Pampanga, Bataan and Tarlac, as well as Bulacan, Nueva Ecija and Zambales.

Cabalen family started in 1974 in San Fernando, Pampanga as a small Bahay Pasalubong Restaurant selling specialty food dishes, then grew into a restaurant called "Ituro Mo, Iluto Ko". In 1986, the first Cabalen Eat-all-you-Can, Eat-all-you-Want Restaurant was opened on West Avenue in Quezon City [6] that led to the expansion to more outlets. [7]

The first location outside of Luzon was opened in Cebu City on the island of Cebu in August 2009. This location also serves local Cebuano dishes. [8]

Cebuano people subgroup of the Visayan people

The Cebuano people are a subgroup of the Visayan people whose primary language is the Cebuano language. They originated in the province of Cebu in the region of Central Visayas, but then later spread out to other places in the Philippines, such as Siquijor, Bohol, Negros Oriental, southwestern Leyte, western Samar, Masbate, and large parts of Mindanao. It may also refer to the ethnic group who speak the same language as their native tongue in different parts of the archipelago.

In September 2010, Cabalen began to provide the Asian Buffet in addition to the Filipino Buffet at their three largest locations in the shopping malls at Glorietta, TriNoma, and SM Mall of Asia, all located in Metro Manila. [9]

Glorietta

Glorietta is a shopping mall complex in the Ayala Center, Makati, Metro Manila, Philippines. The mall is owned by Ayala Land and operated through its subsidiary, the Ayala Malls. The mall is divided into five sections and contains many shops and restaurants, as well as cinemas, a gym, arcades and a large central activity center, often used to stage events.

TriNoma

TriNoma is a large shopping mall in Quezon City, Philippines, owned by property development firm Ayala Land. Opened in 2007, the mall is located on the side of Epifanio de los Santos Avenue, east of the North Avenue MRT Station in Quezon City, giving significant market competition to the nearby SM City North EDSA as one of the largest malls in Metro Manila. It is also one of two malls that will be serving Ayala Land's Vertis North township, which is located beside the mall, along with a new lifestyle block mall Ayala Malls Vertis North, similar to Makati's Greenbelt, which was also developed by Ayala Malls.

SM Mall of Asia, also abbreviated as SM MoA or simply MoA, is a large shopping mall in Bay City, Pasay, Philippines, near the SM Central Business Park, the Manila Bay, and the southern end of Epifanio de los Santos Avenue (EDSA).

Fare

Typical dishes include bopis (lungs), Gatang Kohol (snails in coconut milk), Ensalata Ampalaya (a bitter gourd with garlic and ginger), and laing (a root vegetable in coconut milk). [5] There is also pork, beef, and fish stews, as well as Chinese influenced fried lumpia, pinakbet (noodles), and adobo (traditional barbeque). [12] [13] Cabalen is also known for purveying delicacies such as betuteng tugak (stuffed frog), kamaru (crickets), adobong pugo (quail) and balut [2] (developing bird embryo). [3] [4] [5]

Branch locations

Cabalen has a total of 17 branches in the Philippines and 1 branch internationally, in the United States. It is not so commonly known that there are two types of Cabalen restaurants, the All-Filipino Buffet (which has 15 locations) and the Asian Buffet (which has 3 locations).

In May 2013, the first and only overseas location was opened in San Bruno, California, in the United States. [14]

Sisig

Sisig is a Kapampangan dish made from parts of pig head and chicken liver, usually seasoned with calamansi, onions and chili peppers. Sisig was first mentioned in a Kapampangan dictionary in the 17th Century meaning "to snack on something sour" and "salad". It usually refers to fruits, often unripe or half-ripe, sometimes dipped in salt and vinegar. It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.

Dinuguan is a Filipino savory stew usually of pork offal and/or meat simmered in a rich, spicy dark gravy of pig blood, garlic, chili, and vinegar.

Kapampangan cuisine

Kapampangan cuisine differed noticeably from that of other groups in the Philippines. The Kapampangan kitchen is the biggest and widely used room in the traditional Kapampangan household. When the Philippines was under Spanish rule, Spanish friars and sailors taught Kapampangans the basics of Spanish cooking. The Kapampangans were able to produce a unique blend that surprised the Spanish palate. Soon Spanish friars and government officials were entertaining foreign guests at the expense of Kapampangan households. In the late 18th century, the Arnedo clan of Apalit were commissioned by the colonial government to entertain foreign dignitaries that included a Cambodian prince and a Russian archduke. Kapampangans were given the task of creating the meal and menu that was served in the proclamation of the First Philippine Republic in Malolos, Bulacan.

Paelya

Paelya, also spelled paella, is a Filipino rice dish adapted from the Valencian paella. However, it differs significantly in its use of native glutinous rice (malagkit), giving it a soft and sticky texture, unlike the al dente texture favored in original paella. It is also characteristically topped with sliced eggs. Filipino paelya also does not use saffron, but instead use achuete (anatto), luyang dilaw, (turmeric), or kasubha (safflower).

Ginataang kuhol

Ginataang kuhol is a Filipino snail stew made from apple snails in coconut milk with leafy vegetables, onion, garlic, ginger, siling haba chilis, bagoong alamang, and salt and pepper. Labuyo chilis are also commonly added for a spicier version. The leafy vegetables can includewater spinach, moringa leaves, and chili pepper leaves, among others.
