Alain Roux (born 27 March 1968), [1] is a British Michelin starred chef, and chef-patron of The Waterside Inn. He is one of the members of the Roux family, and son of Michel Roux.

Career

Roux first decided to be a chef at the age of 14, something which his chef father, Michel Roux described as being equally "over the moon" and "disturbed" about. [2] Alain spent eight years in France training at various restaurants. He was sent first to the Pâtisserie Millet in Paris in 1984 to undergo an apprenticeship as a pastry chef. He stayed there until 1986 when the apprenticeship was completed, and he moved around a number of different Michelin starred restaurants for the rest of his time in France, including three starred Restaurant Pic, Le Domaine d'Orvault, La Bonne Etape, Château de Montreuil and La Côte Saint-Jacques. [1] [3] Whilst in France, he served his period of military conscription as a chef at the Élysée Palace. [3]

Roux moved back to his family's Waterside Inn in Bray, Berkshire, at the age of 23 in 1992 where he became a demi-chef de partie. In 1995, he became sous chef and he took over from his father as chef-patron of the Waterside Inn in 2002. [1] [2] [4] Before this, in 2000, he joined Relais Desserts, an international society of pastry chefs. [3]

Roux was chef-patron in 2010 when the Waterside Inn celebrated becoming the first restaurant outside France to hold three Michelin stars for 25 years. [5] Alain is one of the judges of the Roux Scholarship, [6] [7] and has appeared as a celebrity chef judge on MasterChef: The Professionals . [8] In 2011, he developed new menus for the Business Premier class onboard Eurostar trains. [9]

Roux leads the 1-Michelin-starred French restaurant Le Normandie of the Mandarin Oriental in Bangkok, Thailand from 1 December 2021 onwards. [10]

Personal life

Alain is a member of the Roux family. He is the son of Michel Roux, nephew of Albert Roux and cousin to Albert's son, Michel Roux, Jr. [2]

The Roux Scholarship is a cooking competition for young chefs in the UK. Set up by the brothers Michel and Albert Roux, and now run by their sons Alain Roux and Michel Roux Jr. It was first run in 1984 with Andrew Fairlie being named the first winner. It has since been run on an annual basis, with winners undertaking a three-month placement in a Michelin-starred restaurant.

The Checkers, is a restaurant with rooms in Montgomery, Powys, Wales. Historically, the building was used as a coaching inn dating from the 17th century. Until the 2000s, it was used as a pub/hotel. It was converted into a French restaurant in 2012 and under chef Stephane Borie, it was awarded a Michelin star later that year. There are two main rooms in the restaurant, and three hotel rooms. It has received a mixed reception from critics, who have praised particular dishes but criticised the atmosphere. It serves both modern and classic French dishes, and in 2016, switched to only using set menus. In 2018, The Checkers moved away from their Michelin star and opened a breakfast and lunch restaurant renamed Checkers Pantry.

<span class="mw-page-title-main">Restaurant Andrew Fairlie</span> Restaurant in Scotland

Restaurant Andrew Fairlie, also known as Andrew Fairlie at Gleneagles, is a restaurant serving British cuisine located within the Gleneagles Hotel near Auchterarder, Perth and Kinross, Scotland. In operation since 2001, it was run by chef Andrew Fairlie alongside his head chef Stephen McLaughlin who took over the kitchen after his death. It currently holds two Michelin stars, having been awarded them in 2006. It is the only restaurant in Scotland to hold two Michelin stars.
