Julian Serrano Tapas is a tapas restaurant in Las Vegas, Nevada in the United States. Owned by Julian Serrano, it's located inside the Aria Resort and Casino and is Serrano's second restaurant in Las Vegas after Picasso.

History

Julian Serrano wanted to open a Spanish-style restaurant for over a decade. In 2009, MGM Resorts International offered Serrano a contract to open a restaurant at the new Aria Resort and Casino. Serrano agreed to the restaurant contract as long as he could have a tapas restaurant. Serrano traveled to Spain to find a designer for the restaurant. The design firm Gente de Valor was selected. Serrano traveled to DC to meet chef Jose Lopez Picazo, a fellow chef from Madrid. Lopez Picazo was hired as chef. [2]

MGM Resorts International is an American global hospitality and entertainment company operating destination resorts in Las Vegas, Detroit, Mississippi, Maryland, and New Jersey, including Bellagio, Mandalay Bay, MGM Grand, and Park MGM. In January 2019 the company took over Empire City Casino in Yonkers, NY and also recently opened MGM National Harbor in Maryland and MGM Springfield in Massachusetts. It has a majority interest in MGM China Holdings Limited, which owns the MGM Macau resort and casino, and is developing a gaming resort in Cotai. MGM Resorts owns 50 percent of CityCenter in Las Vegas, which features Aria Resort & Casino. It has a majority controlling interest in MGM Growth Properties, a real estate investment trust.

Aria Resort and Casino is a luxury resort and casino, part of the CityCenter complex on the Las Vegas Strip in Paradise, Nevada. Aria consists of two curved glass and steel highrise towers adjoined at the center. It opened on December 16, 2009 as a joint venture between MGM Resorts International and Infinity World Development. At 4,000,000 sq ft (370,000 m2) and 600 ft (180 m) in height, it is the largest and tallest structure at CityCenter.

The restaurant's first menu tasting took place before the kitchen was operational. Executives from MGM and Serrano tasted between 25 and 30 dishes in 40 minutes. The restaurant opened a few weeks later to 600 guests on the first day. [2]

Design and ambiance

The restaurant is located in the lobby of the Aria Resort and Casino. [3] Designed by Gente de Valor and Serrano, the restaurant represents "the vibrant culture of my country" and needed "a good sense of balance" according to Serrano.

Cuisine and beverages

The restaurant serves contemporary versions of Spanish-style tapas with occasional Asian fusion influences. Dishes include paella (including a vegan option); [4] ahi tuna tempura with seaweed salad and avocado-rocoto-mayo and ponzu sauce; marinated olives; stuffed piquillo peppers; grilled calamari; ribs made from Black Iberian pigs; salmon with truffle bechamel sauce and mushrooms; squid-ink rice with chicken and saffron, lobster with roasted red peppers; and empanadas. <i>Capsicum pubescens</i> species of plant

Capsicum pubescens is native to Bolivia and Peru and dates back to pre-Incan times, finding traces of its presence in the Guitarrero Caves. The existence of Capsicum pubescens was documented by ancient Peruvians of the Paracas, Nazca, Moche, and Chimu cultures, through textiles, ceramics, and domestic remains. This chili pepper is the most important ingredient of the Bolivian sauce llajwa. It is also considered the flagship of Peru and it is consumed fresh, paste, dried, or ground. It belongs to a species of the genus Capsicum (pepper), and is known in Peru and Ecuador as rocoto, locoto in Bolivia and Argentina and as the manzano pepper in Mexico which means 'apple' for its apple-shaped fruit. This species is found primarily in Central and South America, and is known only in cultivation. The species name, pubescens, means hairy, which refers to the hairy leaves of this pepper. The hairiness of the leaves, along with the black seeds, distinguish this species from others. As they reach a relatively advanced age and the roots lignify quickly, sometimes they are called tree chili. Of all the domesticated species of peppers, this is the least widespread and systematically furthest away from all others. It is reproductively isolated from other species of the genus Capsicum. A very notable feature of this species is its ability to withstand cooler temperatures than other cultivated pepper plants, although it cannot withstand frost.

The Iberian pig, whose origins can probably be traced back to the Neolithic, when animal domestication started, is currently found in herds clustered in the central and southern part of Portugal and Spain.

The dessert menu includes torrija with salted caramel and vanilla ice cream. [1]

The bar offers multiple types of sangria. [5] Cocktails include the Piña Smash, pineapple purée, simple syrup, mint and lime. The bar also serves carajillo, a Spanish after dinner drink made with xtabentún. The wine list comprises mainly Spanish wines. [1]

Zagat rates Julian Serrano Tapas as having a 4.5 out of 5 for food and 4.4 out of 5 for decor and service. [8] Time Out gives the restaurant 4 out of 5 stars. [9]
