Julien Royer (born 1 September 1982) is a French chef and restaurant owner. He is the Chef-owner of Odette in Singapore and Louise in Hong Kong. in 2019, Odette was awarded the highest distinction of 3 Michelin stars by the Michelin guide. Royer was born in Cantal, Central France to fourth-generation farmers. [2]

Early career

As a teenager, Royer's first job in the food industry was working for Michel Bras at Restaurant Bras in Laguiole, France. [3] Later on, he moved to Durtol, a commune in Auvergne, Central France, where he worked for Les Maîtres Cuisiniers de France association member, Bernard Andrieux. [4] In 2008, Royer moved to Singapore, where he served as Chef de cuisine at Brasserie Les Saveurs at the St Regis Hotel. In 2011, Royer served as Chef de cuisine at JAAN at Swissôtel The Stamford for 4 years before leaving to becoming Chef-owner of Odette in 2015. [5]

Odette

Odette is a three Michelin star modern French restaurant [6] owned and operated by Royer in collaboration with The Lo & Behold Group. [7] The restaurant is located within the National Gallery Singapore. It opened in 2015 and was Royer's first solo restaurant. [8]

Louise

Louise is a Michelin star restaurant owned and operated by Royer, in collaboration with JIA Group and The Lo & Behold Group, located at PMQ, Hong Kong. It was opened in 2019 and received its first Michelin star in 2020. [9]

Claudine

Claudine is a French neo-brasserie that opened on November 16, 2021. [10] [11] Located on Harding Road in an old chapel, Claudine is the successor to The White Rabbit, a restaurant opened by the Lo & Behold Group in 2008 [12] that closed after April 30, 2021. [13] [14]

In 2017, his Michelin 2-star eponymous Restaurant André was named the Best Restaurant in Singapore, and the second-best in Asia by Restaurant magazine.

David Muñoz Rosillo is a Spanish chef who is internationally recognised for his cooking and famous restaurants. He currently has four Michelin stars. His passion for cooking started when he was a child and his parents didn't let him play basketball due his short height so instead they used to take him frequently to the famous Madrid restaurant Viridiana. He soon became fascinated by the owner, Abraham García, a chef whose cooking reflects many of his personal interests, including literature, photography, minery, travel and art. These visits to the famous restaurant led David to go to catering college, where he began his further academic training. He combined his nursery studies with gaining experience by working in Spain and abroad, where he had the chance to develop further experience. His work led him to live in London, working in top restaurants such as Nobu or Hakkasan restaurant. He spent nearly two years at each.

Restaurant André was a fine-dining restaurant in Singapore that served French Nouvelle cuisine. The restaurant was opened on 10 October 2010 by André Chiang, who also served as the head chef. The restaurant had since closed on 15 February 2018.

Les Amis is a fine-dining restaurant in Singapore serving French cuisine. The restaurant opened in 1994 as the flagship of the Les Amis Group. It received its third Michelin star in 2019.

Odette is a Singaporean restaurant. Founded in 2015 by chef Julien Royer in collaboration with the local Lo & Behold Group, Odette features a fusion of French cuisine with Asian influences, including of Singapore's.

Peter Cuong Franklin is a Vietnamese American chef and founder of Anan Saigon in Ho Chi Minh City, Vietnam, and Chôm Chôm in Hong Kong, specializing in "Cuisine Mới". Born in Da Lat, Vietnam, Franklin's mother Nguyễn Thị Như Thừa operated a noodle shop. Franklin fled Ho Chi Minh City as a child refugee on April 29, 1975 during the Fall of Saigon. He was later adopted by an American family, attending Fairfield College Preparatory School and Yale University.

Nahm is a Thai restaurant in Bangkok, Thailand. Originally opened by Australian chef David Thompson in London in 2001, Nahm became the first Thai restaurant to receive a Michelin Star in 2002. Thompson opened Nahm Bangkok in September 2010, closing the flagship London location in December 2012. In April 2018, Thompson left Nahm, and was replaced by Thai-American chef Pim Techamuanvivit.
