La Liste which initially was a list of the 1,000 best restaurants in the world is privately owned and was launched in Paris in December 2015. This French ranking and restaurants guide nowadays lists 20,000 restaurants in 195 countries by aggregating over 700 guides and publication and is often cited as the reply to British published gastronomic guide World’s 50 Best Restaurants. La Liste guide and results are available on laliste.com and through La Liste app (iOS and Android)

Founder of La Liste, Ambassador Philippe Faure, was previously CEO of Gault & Millau, and former Head of the French Tourist Board,^[1] and served as Ambassador of France to Japan from 2007 to 2011, to Mexico and to Morocco. Corporate sponsors of La Liste include Moët Hennessy, American Express, ABInbev, Marché International de Rungis and Accor Hotels.^[2]

Methodology

La Liste is compiled using a data processing algorithm. The list factors in more than 700 international dining guides, crowd-sourced sites (such as Yelp and TripAdvisor) or press reviews (New York Times, Washington Post...). Among those sources, La Liste also takes into consideration Zagat, Michelin, the James Beard Award, Gault & Millau, OpenTable.

LA LISTE 2017

The 2017 ranking was released on December 5, 2016 in Paris. Restaurants are now rated on a Parker-style scale ranging from 80 to 100, with 0,25 increments. Japan is still in the lead with 116 restaurants in the top 1000, followed by France with 113 and China with 100. Actual number of restaurants listed is 1,076 because the score 83.25 is shared by 87 restaurants from rank 990 to 1,076.^[6]

Gault et Millau is a French restaurant guide. It was founded by two restaurant critics, Henri Gault and Christian Millau in 1965.

Joël Robuchon was a French chef and restaurateur. He was named "Chef of the Century" by the guide Gault Millau in 1989, and awarded the Meilleur Ouvrier de France in cuisine in 1976. He published several cookbooks, two of which have been translated into English, chaired the committee for the Larousse Gastronomique, and hosted culinary television shows in France. He operated more than a dozen restaurants across Bangkok, Bordeaux, Hong Kong, Las Vegas, London, Macau, Madrid, Monaco, Montreal, Paris, Shanghai, Singapore, Taipei, Tokyo, and New York City. His restaurants have been acclaimed, and in 2016 he held 31 Michelin Guide stars among them, the most any restaurateur has ever held. He is considered to be one of the greatest chefs of all time.

Bernard Daniel Jacques Loiseau was a French chef at Le Relais Bernard Loiseau in Saulieu, Côte-d'Or. He obtained three stars in the Michelin Guide and had a peak rating of 19.5/20 in the Gault Millau restaurant guide. He was one of the most mediatised French chefs between the 1980s and 1990s.

The Michelin Guides are a series of guide books that have been published by the French tyre company Michelin since 1900. The Guide awards up to three Michelin stars for excellence to a select few restaurants in certain geographic areas. Michelin also publishes the Green Guides, a series of general guides to cities, regions, and countries.

Hof van Cleve is a restaurant based in Kruisem, Belgium. The chef is Peter Goossens.

Le Bernardin is a three-Michelin star French seafood restaurant in Midtown Manhattan, New York City. Eric Ripert is the executive chef, and he is co-owner along with Maguy Le Coze.

Oud Sluis is a defunct restaurant in Sluis, Netherlands. It was a fine dining restaurant that had been awarded one or more Michelin stars since 1995. It carried one star in the period 1995–1998, two stars in the period 1999–2005 and three stars from 2006.

De Librije is a restaurant in Zwolle, Netherlands. It is a fine dining restaurant that has been awarded one or more Michelin stars since 1993. It carried one star in the period 1993–1998, two stars in the period 1999-2003 and three stars since 2004. In 2007 and 2008, the restaurant received a score of 19.5 and became Restaurant of the Year in the Dutch edition of Gault Millau.

Marc Veyrat is a French chef from the Haute-Savoie region, who specialises in molecular gastronomy and the use of mountain plants and herbs.

Thierry Marx is a French chef, specialised in molecular gastronomy.

Mauro Colagreco is an Argentine chef at the three-Michelin stars restaurant Mirazur in Menton, France.

Philippe Conticini is a French chef and pastry chef. Philippe Conticini has been described by the French press as "a pastry genius" and "one of the greatest pastry chefs of his time".

Jean-François Piège is a French chef, two stars at the Guide Michelin.

Christian Le Squer is a French three-star Michelin chef at Restaurant Le Cinq, Paris.

Tim Raue is a German chef. He is currently head chef at Tim Raue, a Michelin two-star restaurant in Berlin.

Arnaud Lallement is a French chef. He is the owner of the gastronomic restaurant L'Assiette Champenoise in Tinqueux near Reims. The restaurant obtained its third Michelin star in 2014.

Peter Goossens, is a Belgian chef, Michelin-starred for his restaurant Hof van Cleve. He is known as the "Godfather of Belgian Gastronomy".
