Michelin stars are a rating system used by the red Michelin Guide to grade restaurants on their quality. The guide was originally developed in 1900 to show French drivers where local amenities such as restaurants and mechanics were. The rating system was first introduced in 1926 as a single star, with the second and third stars introduced in 1933. [1] According to the Guide, one star signifies "a very good restaurant", two stars are "excellent cooking that is worth a detour", and three stars mean "exceptional cuisine that is worth a special journey". [2] The listing of starred restaurants is updated once per year.
The 2024 Michelin Guides list 145 restaurants with 3 Michelin stars. [3]

Joël Robuchon was a French chef and restaurateur. He was named "Chef of the Century" by the guide Gault Millau in 1989, and awarded the Meilleur Ouvrier de France in cuisine in 1976. He published several cookbooks, two of which have been translated into English, chaired the committee for the Larousse Gastronomique, and hosted culinary television shows in France. He operated more than a dozen restaurants across Bangkok, Bordeaux, Hong Kong, Las Vegas, London, Macau, Madrid, Monaco, Montreal, Paris, Shanghai, Singapore, Taipei, Tokyo, and New York City. His restaurants have been acclaimed, and in 2016 he held 31 Michelin Guide stars among them, the most any restaurateur has ever held. He is considered to be one of the greatest chefs of all time.
Alain Ducasse is a French-born Monégasque chef. He operates a number of restaurants including Alain Ducasse at The Dorchester which holds three stars in the Michelin Guide.

Lung King Heen is a fine dining Cantonese restaurant in the Four Seasons Hotel Hong Kong. Its kitchen is run by chef de cuisine Chan Yan-tak, who came out of early retirement in 2002 for the Hotel.
David Kinch is an American chef and restaurateur. He owned and operated Manresa, a restaurant in Los Gatos, California, which was awarded three Michelin stars in 2016. Kinch's California cuisine has strong French, Catalan and Japanese influences. Kinch opened a second restaurant in Los Gatos, called The Bywater, on January 12, 2016.
8+1⁄2 Otto e Mezzo Bombana is an Italian restaurant at Shop 202, Alexandra House, Central, Hong Kong. It is the only Italian restaurant outside of Italy to have received 3 stars from the Michelin Guide, having been awarded 3 stars by the 2012 Michelin Guide Hong Kong and Macau. Its head chef is Umberto Bombana.
Alvin Leung King-Lon, is a Canadian chef and television personality. He holds two Michelin stars at his restaurant Bo Innovation and one Michelin star at Bo London. Nicknamed The Demon Chef, he invented his own cuisine named X-Treme Chinese, which includes meals such as an edible condom on a mushroom beach.
Sushi Yoshitake is a Michelin 2-star sushi restaurant in Ginza, Chūō, Tokyo, Japan. It is owned and operated by sushi chef Masahiro Yoshitake.

Maguy Le Coze is a restaurateur and the co-owner of Le Bernardin in New York City.
Olivier Elzer is a French chef. He was named one of the top 22 best young chefs in France by the guide Gault Millau in 2007. He was awarded a total of 25 Michelin stars for 16 consecutive years working in France and Hong Kong. Elzer is recognised for his work as head chef of Pierre at Mandarin Oriental Hotel Hong Kong, L'Atelier de Joël Robuchon and his own branding restaurant, Seasons, by Olivier E. In 2018, Elzer established L'Envol, a modern French fine dining restaurant at the St. Regis Hong Kong. L'Envol has two Michelin stars. In 2022, Elzer created his own casual dining concept in Hong Kong named Clarence. Chef Elzer was awarded the Knight in the Order of Agricultural Merit of the French Republic in 2022.
