El Bulli held three Michelin stars and was described as "the most imaginative generator of haute cuisine on the planet" in 2006. The restaurant closed 30 July 2011 and relaunched as El Bulli Foundation, a center for culinary creativity.

Santamaria has been the president of Relais Gourmands and vice president of Relais & Chateaux (2003-2006). Can Fabes was a member of Relais & Châteaux starting in 1989. The premises have belonged to Santamaria's family for 200 years, and he himself was born there.

It was first located next to their parents' restaurant Can Roca, but moved to its current purpose-built building in 2007. It has been received warmly by critics, and holds three Michelin stars. El Celler de Can Roca was ranked the best restaurant in the world by the magazine Restaurant in 2013 and 2015, and was ranked second in 2011, 2012, 2014, and 2018.

Asador Etxebarri is a Spanish restaurant in Atxondo, Spain. It was voted 3rd best of the World's 101 Best Steak Restaurants as well as 3rd best in the world in Restaurant (magazine) Top 50 Awards in 2019 and 2021, 4th in 2023, and 6th in 2015. The owner and chef is Victor Arguinzoniz, who cooks everything over a grill. Thus, all courses, even dessert, have the taste of fire. Arguinzoniz was born in the same village, next to the restaurant, and worked in a flag factory for many years before buying the restaurant with his father and uncle. He taught himself to cook and built his own kitchen full of manual grilling contraptions using multiple types of wood. Wines are chosen by Mohamed Benabdallah who was previously at Mugaritz.

Its chef is Carme Ruscalleda, and the dining room was directed by Toni Balam. In 2006 Sant Pau opened a branch in Chuo-ku, Tokyo which currently has 2 Michelin stars.

Ultraviolet by Paul Pairet is a single-table restaurant in Shanghai, China, opened in May 2012 by French chef Paul Pairet and the VOL Group. In October 2014, Ultraviolet became one of the restaurant members of Les Grandes Tables du Monde, the first restaurant in this organization from China. In September 2017, the second edition of Michelin Guide Shanghai released the results for 2018, and Ultraviolet received 3 Michelin stars.
