Kamilla Seidler (born 1983) is a Danish chef, who is the head chef at restaurant Gustu in La Paz, Bolivia. In 2016, she was named the Best Female chef Latin America's 50 Best Restaurants.

Career

Kamilla Seidler was born in Copenhagen, Denmark, in 1983, as the oldest of eight siblings. [1] [2] She began working in restaurants at 15, and at 21 underwent training at the Copenhagen Hospitality College. After graduating, she worked at several well known restaurants such as Belmond Le Manoir aux Quat'Saisons and Mugaritz. [1]

Seidler was invited to cook for Claus Meyer as part of an interview for a Bolivian food movement he was looking to set up. He was happy with the dishes she served, and offered her the position. Four months later, Seidler and her partner Michelangelo Cestari travelled to La Paz, Bolivia, where she became head chef of the restaurant Gustu. [3]

At the restaurant, she serves dishes which she bases on a new Bolivian cuisine which she says is similar to an early New Nordic movement. [3] In 2016, Seidler was named the Best Female Chef by Latin America's 50 Best Restaurants. [3] In the list that year, Gustu was placed 16th. [4] She took part in a project called the Kamilla Seidler expedition, where she travelled for four months to several countries, teaming with local food festivals and pop-ups. [2]

Chinese aristocrat cuisine traces its origin to the Ming and Qing dynasties when imperial officials stationed in Beijing brought their private chefs and such different varieties of culinary styles mixed and developed over time to form a unique breed of its own, and thus the Chinese aristocrat cuisine is often called private cuisine. The current Chinese aristocrat cuisine is a mixture of Shandong cuisine, Huaiyang cuisine and Cantonese cuisine. As Beijing was the capital of the last three Chinese dynasties, most of the Chinese aristocrat cuisine originated in Beijing. Noma (restaurant)

Noma is a two-Michelin-star restaurant run by chef René Redzepi in Copenhagen, Denmark. The name is a syllabic abbreviation of the two Danish words "nordisk" (Nordic) and "mad" (food). Opened in 2003, the restaurant is known for its reinvention and interpretation of the Nordic Cuisine. In 2010, 2011, 2012 and 2014, it was ranked as the Best Restaurant in the World by Restaurant magazine—as of 2019 it is ranked 2nd.

Stephanie Izard is an American chef and television personality residing in Chicago, Illinois, best known as the first female chef to win Bravo's Top Chef, taking the title during its fourth season. She is the co-owner and executive chef of three award-winning Chicago restaurants, Girl and the Goat, Little Goat, and Duck Duck Goat, and opened her first restaurant, Scylla as chef-owner at the age of 27. Izard received a James Beard Foundation Award for "Best Chef: Great Lakes" in 2013 for her work at Girl and the Goat. She has made a number of appearances on Top Chef since her win, both as a guest judge on subsequent seasons and as a participant in Top Chef Duels. In 2017, Izard competed in the Food Network series Iron Chef Gauntlet, where she overall defeated chefs Bobby Flay, Michael Symon, and Masaharu Morimoto to obtain the title of Iron Chef.

Susan Feniger is an American chef, restaurateur, cookbook author, and radio and TV personality. She is known for starring in the cooking show Too Hot Tamales on the Food Network and opening several influential restaurants in Los Angeles. She has been awarded a Lifetime Achievement Award by the California Restaurant Association.

René Redzepi Danish chef

René Redzepi is a Danish chef and co-owner of the two-Michelin star restaurant Noma in the Christianshavn neighborhood of Copenhagen, Denmark. His restaurant was voted the best restaurant in the world by Restaurant magazine's World's Best Restaurants in 2010, 2011, 2012 and 2014. Redzepi is noted for his work on the reinvention and refinement of a new Nordic cuisine and food that is characterized by inventiveness and clean flavours.

New Nordic Cuisine

New Nordic Cuisine is a culinary movement which has been developed in the Nordic countries and Scandinavia in particular since the 2000s. New Nordic Cuisine was propelled by and found inspiration in ideas and a manifesto written by food activist and entrepreneur Claus Meyer and a number of Scandinavian chefs in 2004 in Copenhagen. New Nordic Cuisine has been used to promote local, natural and seasonal produce as a basis for new dishes both in restaurants and in the home. As a result, a number of restaurants, in particular in Denmark, have introduced local ingredients, some often new to the usual palate, in combination with traditional foods prepared in new ways.

Eugénie Brazier French chef

Eugénie Brazier, known as "la Mère Brazier", was a French chef who, in 1933, became the first person awarded six Michelin stars, three each at two restaurants: La Mère Brazier in the rue Royale, one of the main streets of Lyon, and a second, also called La Mère Brazier, outside the city. This achievement was unmatched until Alain Ducasse was awarded six stars with the publication of the 1998 Michelin Guide.

Melissa Perello is an American chef best known for holding a Michelin star at her restaurant Frances. She had previously won a star at restaurant Fifth Floor, and has won awards from both Chronicles and Food & Wine magazines.

Magnus Nilsson (chef) Swedish chef

Magnus Nilsson is a Swedish chef who was head chef at the restaurant Fäviken in Sweden until it closed in December of 2019. He had previously worked at L'Astrance and L'Arpège in France, before moving onto Fäviken in 2008, which is currently ranked the 57th best restaurant in the world and won two Michelin stars in 2016.

Gustu

Gustu, the quechua word for flavour, is a restaurant and bar placed in La Paz, Bolivia, which opened in April 2012. Gustu is under the management of Head Chef Marsia Taha. It is considered among South America's 50 best restaurants, landing the number 32 spot on The Latin America’s 50 Best Restaurants 2014 and the number 14 spot in 2017 in list made by the British magazine Restaurant.

André Chiang is a Taiwanese chef and owner of five restaurants. He is the former head chef of the three Michelin star restaurant Le Jardin des Sens in France. He is known for his "Octo-philosophy" of eight elements which make up his dishes. In 2017, his Michelin 2-star eponymous Restaurant André was named the Best Restaurant in Singapore, and the second-best in Asia by Restaurant magazine.

María Marte is a Dominican chef who works in Spain. She is the only female chef in Madrid with two Michelin stars, as head chef of "El Club Allard".

Anita Klemensen is a Danish chef, who held a Michelin star at New Nordic cuisine restaurant Den Røde Cottage, which she also co-owned. She was the first female Danish chef to win a star. After eight years Klemensen closed the restaurant at the end of 2017. In 2018 the restaurant re-opened under new management.

Andrea Reusing is an American chef, best known for her restaurant Lantern in Chapel Hill, North Carolina. In 2011, she won the Best Chef Southeast award from the James Beard Foundation Awards.
