Gustu is a restaurant and bar in La Paz, Bolivia. Its name comes from the quechua word for flavour. It was founded by Claus Meyer and opened in April 2012 under Head Chef Marsia Taha. [1] [2] It is considered among South America's 50 best restaurants.
Gustu opened its doors in April 2012 and soon was noticed by major international newspapers and magazines along with its founder Claus Meyer at the front. [3] [4] Most noteworthy is the appearances in The New York Times, [5] [6] [7] The Guardian, [8] [9] [10] Financial Times, [11] [12] [13] Food and Wine, [14] Bloomberg, [15] [16] [17] [18] Eater [19] [20] and CNN. [21]
Being part of Melting Pot Bolivia, an NGO endeavor by Claus Meyer in cooperation with IBIS Denmark, [22] Gustu's mission is both restaurant and cooking school. [23] [24] After they both experienced success, Gustu departed from Melting Pot Bolivia and IBIS Denmark. [25]
Melting Pot Bolivia and Gustu were the subject of the 2019 film A Taste of Sky, directed by Michael Lei. [26]
In October 2024, Marsia Taha resigned her position as Head Chef to open her first restaurant. Chefs Jairo Michel and Kenzo Hirose are now managing Gustu. [27]
The restaurant's motto and founding philosophy is: "We believe we can change the world through food." [28] This is something Claus Meyer implemented when he introduced the "Manifesto of the New Bolivian Cuisine". [29] Most of the students at Gustu are underprivileged Bolivian youngsters. [2] [30]
The restaurant also applies a "kilometer 0" philosophy, meaning that all products used in their dishes and drinks are exclusively born, planted, developed, and transformed in Bolivia. [23] [30]
In 2013, Gustu won Best New Restaurant in South America and Best Restaurant in South America, from "Como Sur – South American Gastronomy". [31] [32] [33]
In 2014, it placed 32nd on Latin America's 50 Best Restaurants in Restaurant Magazine, [34] [35] and won the S. Pellegrino Best Restaurant award in Bolivia. [35] It again won Best Restaurant in South America from Como Sur – South American Gastronomy, [36] and Kamilla Seidler again won the award for Best Chef in South America. [36]
In 2015, it climbed 15 spots on Latin America's 50 Best Restaurants and ranked 17th.
In 2017, it ranked 14th by British magazine Restaurant. [1]
In 2024, Gustu was ranked 38th on Latin America's 50 Best Restaurants. [27]
The World's 50 Best Restaurants is a list produced by the UK media company William Reed, which originally appeared in the British magazine Restaurant in 2002. The list and awards are no longer directly related to Restaurant, though they are owned by the same media company.
Noma is a three-Michelin-star restaurant run by chef René Redzepi, and co-founded by Claus Meyer, in Copenhagen, Denmark. The name is a syllabic abbreviation of the two Danish words "nordisk" (Nordic) and "mad" (food). Opened in 2003, the restaurant is known for its focus on foraging, invention and interpretation of New Nordic Cuisine. In 2010, 2011, 2012, 2014, and 2021 it was ranked as the Best Restaurant in the World by Restaurant magazine.
El Celler de Can Roca is a restaurant in Girona, Catalonia, Spain opened in 1986 by the Roca brothers, Joan, Josep and Jordi. It was first located next to their parents' restaurant Can Roca, but moved to its current purpose-built building in 2007. It has been received warmly by critics, and holds three Michelin stars. El Celler de Can Roca was ranked the best restaurant in the world by the magazine Restaurant in 2013 and 2015, and was ranked second in 2011, 2012, 2014, and 2018.

On April 29, 2013, his flagship restaurant, Central, entered as number 50 in The World's 50 Best Restaurants as awarded by the British magazine Restaurant. In 2014, Central jumped 35 places to number 15, winning the "Highest Climber" award, and later that year was named Best Restaurant in Latin America.
New Nordic Cuisine is a culinary movement which has been developed in the Nordic countries, and Scandinavia in particular, since the mid-2000s. New Nordic Cuisine was propelled and inspired by new ideas introduced in a manifesto written by food activist and entrepreneur Claus Meyer and a number of Scandinavian chefs in 2004 in Copenhagen. New Nordic Cuisine has been used to promote local, natural and seasonal produce as a foundation for new dishes both at restaurants and in the home. As a result, a number of restaurants, particularly restaurants in Denmark, have introduced local ingredients, some often new to the usual palate, in combination with traditional foods prepared in new ways. One notable chef who helped popularize New Nordic cuisine is Rene Redzepi, the former head chef of Noma.

José de Avillez Burnay Ereira, known as José Avillez, is a Portuguese chef and restaurateur. He is one of the most renowned Portuguese chefs. In the beginning of 2012, José Avillez opened the fully renovated BelcantoArchived 2017-11-18 at the Wayback Machine winning a Michelin star that same year. In 2014, Belcanto earned its second Michelin star and in 2019 was considered one of the 50 best restaurants in the world by The World’s 50 Best Restaurants. Currently, he has several restaurants in Portugal, in Lisbon and Porto, and also in Dubai. His cooking style, contemporary and Portuguese-inspired, has earned him several national and international accolades, including 2015's “Chef of the Year” by WINE magazine.
