Kunik cheese

Kunik is a brand of cow and goat milk cheese. It is described by the producer as a semi-aged, triple cream wheel cheese made from 25% Jersey cow cream and 75% goat's milk. It has an edible, bloomy white rind; a tangy, buttery flavor; and a thick, smooth, creamy texture. The addition of high-milkfat Jersey cow cream makes the cheese more rich and flavorful than a brie cheese, but less pungent than a pure goat cheese. [1] Anne Saxelby, reviewing the cheese for Esquire, stated "it may very well be the sexiest cheese in the U.S.A." [2]

Production

Kunik is produced at Nettle Meadow Goat Farm in Thurman, New York. [3] The farm is essentially an animal sanctuary, funded by the income from cheese sales. [4]

Goat milk is the milk of domestic goats. Goats produce about 2% of the world's total annual milk supply. Some goats are bred specifically for milk. Fivemiletown Creamery is based in Fivemiletown, County Tyrone, Northern Ireland, and is a producer of handmade speciality soft cheeses and cheddars The company is a farmers' co-operative, and employs around 40 people. The creamery draws its milk supplies mostly from over 60 dairy farmers from across Northern Ireland. The company was founded in 1898 and added cheese production in 1972. Fivemiletown Creamery is the only speciality cheese maker in Northern Ireland. In 2014 Fivemiletown Creamery was acquired by Dale Farm.
