Wisconsin cheese is cheese made in the U.S. state of Wisconsin. Wisconsin has a long tradition and history of cheese production and it is widely associated in popular culture with cheese and the dairy industry.

History

Wisconsin's cheesemaking tradition dates back to the 19th century. European immigrants who settled in Wisconsin were drawn to its fertile fields.

Soon, dairy farms sprang up around Wisconsin, and farmers began producing cheese to preserve excess milk. In 1841, Anne Pickett established Wisconsin's first commercial cheese factory, using milk from neighbors' cows. A century later, Wisconsin was home to more than 1,500 cheese factories, which produced more than 500 million pounds of cheese per year. [1]

Wisconsin has long been identified with cheese; in the words of a 2006 New York Times article, "Cheese is the state’s history, its pride, its self-deprecating, sometimes goofy, cheesehead approach to life." Wisconsin has claimed the title of the largest cheese-producing state in the United States since 1910. In 2006, Wisconsin produced 2.4 billion pounds of cheese and held onto its top ranking, despite concerns that California's faster-growing cheese industry would soon surpass Wisconsin's production. [2] In 2007, Wisconsin again held onto its lead, which had begun to grow slightly. [3] In 2010, Wisconsin's cheese production rose to 2.6 billion pounds (requiring the state cheese industry to import a substantial amount of milk from other states to meet production needs). [4] In 2014, Wisconsin produced 2.9 billion pounds of cheese, accounting for 25.4% of all cheese produced in the U.S. [5] [6]

As of 2013, Wisconsin continues to be the largest cheese producer in the United States, making over 600 different cheese varieties. [7] Wisconsin is the only U.S. state that requires that a licensed cheesemaker supervise the making of commercial cheese. [7] It is also the only state to offer a master cheesemaker program, which is patterned on the rigorous standards of similar programs in Europe. [8]

Some cheese makers even make Wisconsin-shaped cheeses, to represent the strong cultural heritage of Wisconsin cheese. [9]

Cheese is a dairy product produced in wide ranges of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk. During production, milk is usually acidified and either the enzymes of rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout.

Florence Lucy Appleby MBE was an English traditional cheesemaker. She created 'Mrs Appleby's Cheshire' which, by the time of her death, was the last remaining Cheshire cheese to observe the traditions of using unpasteurised milk from the farm herd, being bound in calico cloth and matured on-farm. Appleby co-founded the Specialist Cheesemakers Association to defend the use of unpasteurised milk in cheesemaking.

Beecher's Handmade Cheese is an artisan cheesemaker and retail shop with locations in the Pike Place Market, Seattle, Washington and New York City's Flatiron District. The company was founded by Kurt Beecher Dammeier in 2003 and opened in the Pike Place Market after Dammeier obtained a difficult to obtain storefront lease in the Market. Because Dammeier had never been a cheesemaker, he sought out the assistance of Brad Sinko, who helped run a family cheese-making business in Oregon. A second location was opened in 2011 in the Flatiron neighborhood of Manhattan in New York City.

Artisanal cheese refers to cheeses produced by hand using the traditional craftsmanship of skilled cheesemakers. As a result, the cheeses are often more complex in taste and variety. Many are aged and ripened to achieve certain aesthetics. This contrasts with the more mild flavors of mass-produced cheeses produced in large-scale operations, often shipped and sold right away.

Agriculture is a significant sector in Wisconsin's economy, producing nearly $104 billion in revenue annually. The significance of the state's agricultural production is exemplified by the depiction of a Holstein cow, an ear of corn, and a wheel of cheese on Wisconsin's state quarter design. In 2017 there were 64,800 farms in the state, operating across 14.3 million acres of land.

The dairy industry in the United States includes the farms, cooperatives, and companies that produce milk and cheese and related products, such as milking machines, and distribute them to the consumer. By 1925, the United States had 1.5-2 million dairy cows, each producing an average of 4200 lb of milk per year. By 2007, there were 9.1 million dairy cows but their average milk production was over 20,000 pounds per year, with eight pounds per gallon.

Dairy is a primary source of agricultural output in the state of Vermont. As of December 2021, the state had 568 dairy farms milking cattle, sheep, and/or goats which produced 2.5 billion pounds of milk annually. Vermont ranks 15th in the United States for raw milk production.

Commercial cheesemaking in Wisconsin dates back to the nineteenth century. Early cheesemaking operations began on farmsteads in the Michigan and Wisconsin territories, with large-scale production starting in the mid-1800s. Wisconsin became the largest producer of cheese in the United States in the early 1900s, and in 2019 produced over 3.36 billion pounds of cheese in more than 600 varieties, accounting for 26% of all cheese made in the country that year.
