This is an incomplete list of chicken breeds considered in Italy to be wholly or partly of Italian origin. Some may have complex or obscure histories, so inclusion here does not necessarily imply that a breed is predominantly or exclusively Italian. [1]

Millefiori is a glasswork technique which produces distinctive decorative patterns on glassware. The term millefiori is a combination of the Italian words "mille" (thousand) and "fiori" (flowers). Apsley Pellatt in his book Curiosities of Glass Making was the first to use the term "millefiori", which appeared in the Oxford English Dictionary in 1849; prior to that, the beads were called mosaic beads. While the use of this technique long precedes the term "millefiori", it is now most frequently associated with Venetian glassware.

The Piedmontese is a breed of domestic cattle that originated in the region of Piedmont, in north-west Italy. The calves are born fawn coloured, and turn grey-white as they mature. Piedmontese cattle carry a unique gene mutation identified as an inactive myostatin allele that causes hypertrophic muscle growth, or double muscling. Purebred Piedmontese cattle are homozygous, meaning they have two identical alleles present for this unique gene. They have garnered attention from breeders of beef cattle in other parts of the world, including North and South America. A small group of select Piedmontese bulls and cows were imported into Canada in the late 1970s, and into the United States in the early 1980s, and were used as the foundation breeding stock to develop a new breed of beef cattle known as North American Piedmontese cattle.

The Biellese is a breed of large domestic sheep indigenous to the province of Biella, in Piedmont in north-western Italy, from which it takes its name. It may also be known as the Razza d'Ivrea, after the town of Ivrea, or as the Piemontese Alpina. The Biellese is one of the seventeen autochthonous Italian sheep breeds for which a genealogical herdbook is kept by the Associazione Nazionale della Pastorizia, the Italian national association of sheep-breeders.

The Braunes Bergschaf is a breed of domestic sheep from the Tyrol area of Austria and Italy. It derives from cross-breeding of the Tiroler Steinschaf of the Tyrol with the Italian Bergamasca and Padovana breeds. It is raised in the Austrian states of Lower Austria, Salzburg, Styria and Tyrol; in the Vinschgau, Ultental, Passeiertal and Schnalstal in the autonomous province of Bolzano in Italy; in the Swiss Engadine; and in Baden-Württemberg, Bavaria, Lower Saxony and Mecklenburg-Vorpommern in Germany.

The Bianca di Saluzzo is a traditional breed of chicken originating in the Piedmont region of north-western Italy. It takes its name either from the town of Saluzzo, in the province of Cuneo, or from the former Marquisate of Saluzzo, which approximately coincides with its area of distribution. It may also be called the Bianca di Cavour, after the nearby town of Cavour, in the province of Turin.

The Polverara, also known as Schiatta (Italian) or S'ciata (Venetian), is an ancient breed of crested chicken from the area of Polverara in the province of Padua, in the Veneto region of north-eastern Italy.

The Lamon or Lamonese is a breed of sheep from the comuni of Lamon and Sovramonte in the province of Belluno, in the Veneto in north-east Italy. The area is known as the Feltrino, from the town of Feltre, and the breed may also be referred to as the Feltrina. It was formerly widely distributed in the Veneto and the Trentino, and as far as the province of Mantova in Lombardy. In the 1950s there was an attempt to increase the size by cross-breeding with the Bergamasca; there was also some cross-breeding with the Padovana and the now extinct Trentina. The Lamon is one of the forty-two autochthonous local sheep breeds of limited distribution for which a herdbook is kept by the Associazione Nazionale della Pastorizia, the Italian national association of sheep-breeders.
