Mashed Potatoes was Steve Alaimo's second album for Checker Records. Like his previous album, it capitalizes on a dance craze, only this time, the Mashed Potato.
The Mashed Potato is a dance move which was a popular dance craze of 1962. The dance move and mashed potato song was first made famous by James Brown in 1959 and used in his concerts regularly. It was also danced to songs such as Dee Dee Sharp's "Mashed Potato Time". The move vaguely resembles that of the twist, by Sharp's fellow Philadelphian Chubby Checker. The dance was first popularized internationally after being named in the lyrics of Motown's first mega-hit in the song "Do You Love Me" written by Berry Gordy, Jr. and performed by The Contours in 1962.

"Mashed Potato Time" is a single written and composed by Kal Mann and Bernie Lowe, and performed by Dee Dee Sharp on her debut album It's Mashed Potato Time. The song refers to the Mashed Potato dance move which was a fad at the time. It was one of several that came out at that time, for example, "(Do the) Mashed Potatoes" in 1960. The Marvelettes song "Please Mr. Postman" is mentioned in the lyrics and is copied in the arrangement. Also mentioned in the lyrics, are the songs "Lion Sleeps Tonight" by the Tokens, and "Dear Lady Twist", by Gary US Bonds. Dee Dee Sharp did a follow up sequel to "Mashed Potato Time", with "Gravy". In 1996 the Campbell Soup Company used the song in a $30 million advertising campaign, and commissioned a new, more upbeat recording from Dee Dee Sharp.

Expanding on the 1984 double LP compilation of the same name it covers 1956 to 1963, but omits some of Brown's big hits from that time period, which can be found on Star Time.
