Ockenden Manor is located in Cuckfield, West Sussex, England. The building itself dates from 1520 and is operated as a hotel and restaurant by the Historic Sussex Hotels group.

History

Ockenden Manor has been operated by the Historic Sussex Hotels group since 1987. [1] [2] The building itself is a Grade II* listed Elizabethan era country manor, dating from 1520.[ citation needed ] It won a Michelin star in 2001 under Martin Hadden, who left shortly afterwards to set up his own restaurant called The Priory House. [3] [4] After losing its star the next year, the restaurant regained it in 2004 and kept it until 2016 [5] under chef Stephen Crane. [1] [6] [7]

The restaurant was used as a location in the 2009 series of the BBC Two show Put Your Money Where Your Mouth Is , where chefs Nick Nairn and Aldo Zilli competed against each other using local ingredients. [8]

Staff from the restaurant have been involved in the annual Roux Scholarship. Former head chef Martin Hadden was the winner of the scholarship in 1989, prior to coming to Ockenden Manor. [9] Matthew Tomkinson won the scholarship in 2005 whilst working at the restaurant, [10] [11] and Vincent Fayat in 2006 and Mark Charker in 2012 reached the regional finals of the competition. [12] [13]

As of June 2018 The Food Standards Agency rated the hotel and spa a hygiene rating of 4 out of 5 - Good. [14]

Reception

Harden's restaurant guide states that there have been "over a hundred visits in a decade, and never disappointed". [15] On a scale of one to five, with one being high, it gives Ockenden Manor a score of two for each of food, service and ambience, describing chef Crane's food as "excellent". [15] The restaurant has been awarded three AA Rosettes, meaning that "expectations of the kitchen are high: exact technique, flair and imagination must come through in every dish, and balance and depth of flavour are all-important". [16]

The Box Tree is a restaurant located in Ilkley, West Yorkshire, England. Owned by Adam Frontal, Yorkshire businessman, who is operating the restaurant with an emphasis of remaining very current within the fine dining offering and experience. Current Executive Chef, Brayden Davies, has been leading the kitchen since the beginning of 2023, having worked at multiple Michelin star restaurants, growing its ever strong reputation and now currently offers a new tasting menu on a monthly basis. The Box Tree was previously operated by chef Simon Gueller and his wife, Rena, from 2005 to late 2022. Under their management the restaurant has been redecorated, although elements from the original owners of the restaurant remain. Reception by food critics has improved over the years; the restaurant held a single Michelin star until 2019 and three AA rosettes. A sister company is also run by the chef, called Box Tree Events.

Alexis Pascal Gauthier is a French chef. He is the chef patron of the Gauthier Soho restaurant in Soho, London and was awarded a Michelin star in 2011. He previously held a Michelin star as head chef of the restaurant Roussillon in Pimlico, London, until 2010. He trained under Alain Ducasse at Le Louis XV in Monaco, and has appeared as a judge on two versions of the BBC One television show MasterChef. He became a vegan in 2016 and changed Gauthier Soho to a vegan menu in 2021 and opened 123 Vegan, a vegan cafeteria.

The Roux Scholarship is a cooking competition for young chefs in the UK. Set up by the brothers Michel and Albert Roux, and now run by their sons Alain Roux and Michel Roux Jr. It was first run in 1984 with Andrew Fairlie being named the first winner. It has since been run on an annual basis, with winners undertaking a three-month placement in a Michelin-starred restaurant.

Martin Hadden is a British chef, who won a Michelin star at both Ockenden Manor and The Priory House. He was the winner of the Roux Scholarship in 1989, and after leaving the kitchen at the Priory House in 2003 he went on to become Executive Chef for the Historic Sussex Hotels group.

Steve Drake is a British chef who has held a Michelin star at three restaurants, including his current establishment, Sorrel. He has previously worked under a number of chefs, including Nico Ladenis and Marco Pierre White.

<span class="mw-page-title-main">Hibiscus (restaurant)</span> Restaurant in London

Hibiscus was a London restaurant which was owned and run by French chef Claude Bosi. It was opened in 2000 in Ludlow, Shropshire, and won its first Michelin star within a year, and a second in the 2004 Guide. In July 2006, Bosi and his wife Claire announced that they were to sell the location in Ludlow and move closer to London. The property was sold to Alan Murchison, and Bosi purchased a new site on Maddox Street in London. The restaurant closed in 2016.

Nico Ladenis was a British self-taught chef who was the first to gain three Michelin Stars.

Aubergine was a restaurant in Chelsea, London. Owned by A-Z Restaurants, it was opened under chef Gordon Ramsay in 1993. Aubergine was awarded two Michelin stars in 1997, which it held until Ramsay left the restaurant in July 1998 following the sacking of Marcus Wareing from sister restaurant L'Oranger. It subsequently reopened and held a single Michelin star under William Drabble until he left the restaurant in 2009. Aubergine closed in 2010, pending a relaunch as an informal Italian restaurant.

Maison Novelli was a restaurant in Clerkenwell, Central London, located opposite the Old Session House. It was opened by chef proprietor Jean-Christophe Novelli, and held a single Michelin star in the 1997 Michelin Guide. The restaurant's holding company went into liquidation in 2000, and the restaurant was sold to JJ Restaurants with Novelli remaining on the staff as a consultant and advisor. Maison Novelli was closed in 2003.

Angela Hartnett at The Connaught, also known as MENU, was a restaurant owned by Gordon Ramsay Holdings and run by chef Angela Hartnett. It was located within The Connaught in Mayfair, London. The restaurant was opened following Ramsay's successful opening of Gordon Ramsay at Claridge's, within the Claridge's hotel, which is owned by the same equity group. Ramsay had originally been asked to move Restaurant Gordon Ramsay into the space, but suggested that Hartnett should run a new operation there instead. The restaurant was awarded a Michelin star in the 2004 guide and held it until it closed in 2007.

Lettonie was a restaurant owned and run by chef Martin Blunos; it was located in Bristol until 1998 when it relocated to Bath, Somerset. It was awarded a Michelin star in 1992, and a second in 1994; these were held until the restaurant was closed in 2001.

Restaurant Andrew Fairlie, also known as Andrew Fairlie at Gleneagles, is a restaurant serving British cuisine located within the Gleneagles Hotel near Auchterarder, Perth and Kinross, Scotland. In operation since 2001, it was run by chef Andrew Fairlie alongside his head chef Stephen McLaughlin who took over the kitchen after his death. It currently holds two Michelin stars, having been awarded them in 2006. It is the only restaurant in Scotland to hold two Michelin stars.

Philip Howard is a South African-British chef, chef patron, and restaurateur. He gained cooking skills while working under Marco Pierre White at Harveys and Simon Hopkinson at Bibendum. Howard and White's then-business partner Nigel Platts-Martin opened London restaurant The Square in December 1991, despite both of their inexperience in operating a restaurant at the time.
