Spanish olive jars are ceramic containers produced in the 15th through the 19th centuries and used for transporting various products to Spanish colonies. Olive jars are commonly found in archaeological sites throughout the former Spanish Empire, including shipwrecks, and have also been found at sites that were never under Spanish control. Variations in the form of individual olive jars have been used by archaeologists to date sites in which olive jars and sherds have been found.
The term "Spanish Olive Jar" was introduced by William Henry Holmes in 1903, as he believed a specific type of sherd found in archaeological sites in America came from jars that had been used to ship olives to America. [1] American archaeologists have since then often called Spanish-produced ceramic containers found at archaeological sites "olive jars" or "Spanish olive jars". They have been inconsistent in their use of "olive jar", varying between "olive jar" as a name for all Spanish ceramics, and as a name for the most common type, the botija , which has a distinctive form and paste. Other types of Spanish ceramics that are sometimes called "olive jars", and sometimes "Spanish storage jars" include the cantimplora , tinaja , and orza . [2] American archaeologists recognize that olive jars were used to transport and store many products other than olives, but the term is in wide-spread use, and not easily replaced. [3] Spanish records also refer to botijas peruleras, botijas medias, botijuela, [4] botijuelas peruleras, botixuelas, anforas, and anforetas as alternate names for botijas. [5]
The production of botijas was concentrated in Andalusia, with Seville being the most important center of ceramic production in the Iberian Peninsula during the Early modern period. The Casa de Contratación de Indias (the institution that controlled trade with the New World) was established in Seville in 1503, where it remained until it was transferred to Cádiz in 1717. The need for ceramic containers to hold merchandise sent to the New World led to development of potters' neighborhoods in Seville and Cádiz. [6] Some jars with a distinctive red paste and a different style of rim marks may have been produced in Cazalla de la Sierra, 75 km north-northeast of Seville. Cazalla was an important wine-producing area, and botijas of wine from Cazalla were listed on several manifests of shipments to the New World. [7]
While the term "olive jar" was used in archaeology from early in the 20th century, John Mann Goggin created the first typology for olive jars in the mid-20th century. He recognized Early, Middle, and Late styles based primarily on the stratigraphic sequence of styles and of the paste used in jars found at several archaeological sites. Goggin's Early Style, produced from about 1500 to 1580, which is approximately globular with handles flanking the rim, has since been recognized as the cantimplora. His Middle and Late styles, which are generally egg-shaped, or less often, globular or carrot-shaped, [8] with rounded bottoms and without handles, are now recognized as botijas. [9] [10] Other authors have refined and expanded Goggin's typology. [6] [11] Botijas were unglazed, glazed only on the interior, or glazed on the interior and exterior. [12]
Olive jars were the primary shipping containers in the Spanish Empire, but were also used in wider trade networks. [11] Olive jars were used to transport and store solid and liquid goods. Lists of contents of botijas shipped from Seville to the New World included wine, olive oil, olives, vinegar, chickpeas, capers, beans, honey, fish, rice, flour, and soap. [13] Pitch has been found in intact jars, [14] and records from the early 1590s in St. Augustine show that turpentine, almonds, capers, honey, medicinals, lard, hazelnuts, syrup, and salt pork were stored in olive jars. [15] . Olive jars have been found in shipwrecks that still contained olive pits, pitch, and soap. [4]
Goods were shipped on Spanish ships in crates, barrels, bundles, baskets, other containers, but in the 16th-century, the most common types of shipping containers on Spanish ships were botijas. Other types of containers generally had larger capacities than did botijas. For instance, a pipa (a wooden cask equivalent to the English pipe) held 480 litres, equivalent to 22 large botijas. Botijas were wrapped with wicker or matting, which cushioned the jars and gave a means of handing the jars with attached handles of rope. They could be transported on land in carts, on horses, or by human porters. [16]
Jars found on shipwrecks of known date help establish a time line for changes in jar styles. The form of the rim around the mouth of botijas changed gradually from triangular in cross-section in the late 16th- and early 17th-centuries to more rounded in the mid-17th century to very rounded with a protruding lip by the early 18th-century. The changes can help date sites, although not precisely. [17]
Identifying marks have been found on the rims of botijas produced late in the 16th-century and the first half of the 17th-century. The marks appear to represent the merchant shipping the jars or the intended recipient of the jar. Some ship manifests have been found on which the merchant or purchaser and the mark on the jars are listed. The rim marks (as well as the shape of the rims) changed over time, and those changes can be used for approximately date jars. No marked rims have been reliably dated to before 1583 or after 1641. [18]
Some jars with a distinctive red paste and a different style of rim marks may have been produced in Cazalla de la Sierra, 75 km (47 mi) north-northeast of Seville. Cazalla was an important wine-producing area, and botijas of wine from Cazalla were listed on several manifests of shipments to the New World. Such jars have been found at the Santo Domingo Monastery in Antigua Guatemala, the Huaco Palomin site in Peru, and Santa Elena (in South Carolina), and in wrecks of ships in the Spanish Armada of 1588 and, possibly, in the Nuestra Señora de Atocha wreck in the Florida Keys. [7]
Olive jars found on shipwrecks of known date help establish a time line for changes in styles. [20] Botijas were important shipping containers in the Spanish Empire, but were also used in wider trade networks. They have been found in the British Isles, Brittany, the Netherlands, Poland, Sweden, Caribbean Islands, Mexico, Colombia, Ecuador, Argentina, Canada, the Phillipines, Australia, the Solomon Islands, [21] English settlements in North and South Carolina, [22] and at the site of a Native American camp in Nebraska. [23]
Olive jars probably were used extensively by the Spanish for travel by land or small water vessels, carrying wine, olive oil, and water. The presence of olive jar sherds at archaeological sites are a good indicator of Spanish presence that lasted long enough for one or more jars to break. On the other hand, the absence of such sherds at archaeological sites that do have other artifacts of Spanish provenance, which may have arrived through trade or as plunder, may indicate that there was no Spanish presence at the site. [24]
An amphora is a type of container with a pointed bottom and characteristic shape and size which fit tightly against each other in storage rooms and packages, tied together with rope and delivered by land or sea. The size and shape have been determined from at least as early as the Neolithic Period. Amphorae were used in vast numbers for the transport and storage of various products, both liquid and dry, but mostly for wine. They are most often ceramic, but examples in metals and other materials have been found. Versions of the amphorae were one of many shapes used in Ancient Greek vase painting.
The Uluburun Shipwreck is a Late Bronze Age shipwreck dated to the late 14th century BC, discovered close to the east shore of Uluburun, Turkey, in the Mediterranean Sea. The shipwreck was discovered in the summer of 1982 by Mehmed Çakir, a local sponge diver from Yalıkavak, a village near Bodrum.
DeSoto Site Historic State Park is a Florida state park located in Tallahassee, Florida. It consists of 5 acres (20,000 m2) of land near Apalachee Parkway, including the residence of former Governor John W. Martin. The site is intended to initiate research and education on nearly four centuries of recorded history beginning with Hernando de Soto's use of the site as a winter encampment in 1539. There is an exhibit of items found at the site in the Governor Martin House.
Monte Testaccio or Monte Testaceo, also known as Monte dei Cocci, is an artificial mound in Rome composed almost entirely of testae, fragments of broken ancient Roman pottery, nearly all discarded amphorae dating from the time of the Roman Empire, some of which were labelled with tituli picti. It is one of the largest spoil heaps found anywhere in the ancient world, covering an area of 2 hectares at its base and with a volume of approximately 580,000 cubic metres (760,000 cu yd), containing the remains of an estimated 53 million amphorae. It has a circumference of nearly a kilometre (0.6 mi) and stands 35 metres (115 ft) high, though it was probably considerably higher in ancient times. It stands a short distance away from the east bank of the River Tiber, near the Horrea Galbae where the state-controlled reserve of olive oil was stored in the late 2nd century AD. The mound later had both religious and military significance.

Notable dishes include gazpacho, fried fish, the jamones of Jabugo, Valle de los Pedroches and Trevélez, and the wines of Jerez, particularly sherry. A dolium is a large earthenware vase or vessel used in ancient Roman times for storage or transportation of goods. They are similar to kvevri, large Georgian vessels used to ferment wine.
Hajji Firuz Tepe is an archaeological site located in West Azarbaijan Province in north-western Iran and lies in the north-western part of the Zagros Mountains. The site was excavated between 1958 and 1968 by archaeologists from the University of Pennsylvania Museum of Archaeology and Anthropology. The excavations revealed a Neolithic village that was occupied in the second half of the sixth millennium BC where some of the oldest archaeological evidence of grape-based wine was discovered in the form of organic residue in a pottery jar.
The botija is a Caribbean musical instrument of the aerophone type. It is a potbellied earthenware jug or jar with two openings and was used in the early son sextetos in Cuba as a bass instrument.
Pottery was produced in enormous quantities in ancient Rome, mostly for utilitarian purposes. It is found all over the former Roman Empire and beyond. Monte Testaccio is a huge waste mound in Rome made almost entirely of broken amphorae used for transporting and storing liquids and other products – in this case probably mostly Spanish olive oil, which was landed nearby, and was the main fuel for lighting, as well as its use in the kitchen and washing in the baths.
The culture of the ancient Phoenicians was one of the first to have had a significant effect on the history of wine. Phoenicia was a civilization centered in current day Lebanon. Between 1550 BC and 300 BC, the Phoenicians developed a maritime trading culture that expanded their influence from the Levant to North Africa, the Greek Isles, Sicily, and the Iberian Peninsula. Through contact and trade, they spread not only their alphabet but also their knowledge of viticulture and winemaking, including the propagation of several ancestral varieties of the Vitis vinifera species of wine grapes.
The Molasses Reef Shipwreck is the site of a ship which wrecked in the Turks and Caicos Islands early in the 16th century. It is the oldest wreck of a European ship in the Americas to have been scientifically excavated.
The Brentwood Library Site (40WM210), also known as the Jarman Farm Site, is a Mississippian culture archaeological site located in the city of Brentwood, in Williamson County, Tennessee. The substantial town was occupied during Regional Period IV of the local Mississippian chronology, and there was an associated burial ground, where nearly 50 stone box graves have been found. Artifacts from the site have been radiocarbon dated to between 1298 and 1465 CE. These include several types of Mississippian pottery, with Beckwith Incised found in the highest number.
El Nuevo Constante was a Spanish merchant ship that was run aground on the coast of Louisiana, U.S., after serious leaks had been incurred during a hurricane in September 1766. Much of the cargo was salvaged at the time by the Spanish working into November after burning the part of the ship that was above the water line, but then the wreck was abandoned and forgotten. It was rediscovered in 1979, making it the first historic shipwreck found off that state's coast. Excavation of the wreck and its well-preserved artifacts has revealed details of the construction of this British-made vessel, and of life aboard ship and of the cargo carried. These details have been augmented by considerable documentary material such as the ship's manifest and cargo list. The excavation of the ship was concluded in 1981.

The basic chronology of the early town of Manda Island in the Lamu Archipelago of Kenya is divided into 6 different periods, based mostly on the types of imported pottery that has been found in different strata of the excavations. The first period, I, begins in the mid ninth century and is subdivided into four parts, a, b, c, and d, ending in the early eleventh century. Period II has two parts, A and B, though the divide between the two is rather vague and could be entirely arbitrary, and dates from the mid eleventh to the late twelfth for the former, and late twelfth to late thirteenth century for the latter. Period III runs from the late thirteenth century to the fourteenth when Period IV picks up and ends in the early Sixteenth. Period V covers the mid Sixteenth and all of the seventeenth, and the final period covers everything after the Seventeenth century.
Tur Shimon or Horvat Tura, the Hebraized form of Khirbet et-Tantura, so-called after the shape of the hill, is an archaeological site in Nahal Sorek, Israel. The mountain is built like a natural fortress. Below it to its southeast, in close proximity, is the ruin Khirbet Deir esh-Sheikh.
The Clampitt site (12Lr329) is a prehistoric archaeological site that sits on a sandy terrace along the East Fork of White River, southeast of Bedford in Lawrence County, Indiana. The site was excavated by the Indiana University archaeological field school in the summers of 1991 and 1992. The Clampitt site was added to the National Register of Historic Places in 2016. The site is located on private property. It is one of thirteen National Register of Historic Places listings in Lawrence County, Indiana.
The Carcajou Point site is located in Jefferson County, Wisconsin, on Lake Koshkonong. It is a multi-component site with prehistoric Upper Mississippian Oneota and Historic components.
Botija is a term used by archaeologists for a style of ceramic vessel produced in Seville, Spain from early in the 16th-century through the middle of the 19th-century. It was radially symmetrical, widest near the top, tapering down to a rounded or nearly pointed bottom. It had a fairly small mouth, and did not have any handles or protusions. While the measurements of individual botijas vary, they tend to cluster around roughly standard sizes. They were sealed with cork stoppers. Botijas were widely used for shipping and storing liquids and some solids, and whole or broken botijas are found almost everywhere the Spanish Empire reached, as well as areas that the Spanish never controlled. Changes to certain elements of botijas over time, documented from jars found in shipwrecks of known date, allow whole jars and sherds found in archaeological sites to be roughly dated.
