Polysorbates are a class of emulsifiers used in some pharmaceuticals and food preparation. They are commonly used in oral and topical pharmaceutical dosage forms. They are also often used in cosmetics to solubilize essential oils into water-based products. Polysorbates are oily liquids derived from ethoxylated sorbitan (a derivative of sorbitol) esterified with fatty acids. Common brand names for polysorbates include Kolliphor, [1] Scattics, Alkest, Canarcel, Tween, [2] and Kotilen.

Examples

The number following the 'polysorbate' part is related to the type of major fatty acid associated with the molecule. Monolaurate is indicated by 20, monopalmitate is indicated by 40, monostearate by 60, and monooleate by 80. The number 20 following the 'polyoxyethylene' part refers to the total number of oxyethylene (–CH2CH2O–) groups found in the molecule.

Polysorbate 20 is a polysorbate-type nonionic surfactant formed by the ethoxylation of sorbitan monolaurate. Its stability and relative nontoxicity allows it to be used as a detergent and emulsifier in a number of domestic, scientific, and pharmacological applications. As the name implies, the ethoxylation process leaves the molecule with 20 repeat units of polyethylene glycol; in practice these are distributed across 4 different chains, leading to a commercial product containing a range of chemical species.

Sorbitan monostearate is an ester of sorbitan and stearic acid and is sometimes referred to as a synthetic wax.

The INCI names ceteareth-n (where n is a number) refer to polyoxyethylene ethers of a mixture of high molecular mass saturated fatty alcohols, mainly cetyl alcohol (m = 15) and stearyl alcohol (m = 17). Omega-3-acid ethyl esters are a mixture of ethyl eicosapentaenoic acid and ethyl docosahexaenoic acid, which are ethyl esters of the omega-3 fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) found in fish oil. Together with dietary changes, they are used to treat high blood triglycerides which may reduce the risk of pancreatitis. They are generally less preferred than statins, and use is not recommended by NHS Scotland as the evidence does not support a decreased risk of heart disease. Omega-3-acid ethyl esters are taken by mouth.

MimicCreme was a brand of vegan imitation cream based on nuts and made without lactose, soy, or gluten. It was certified as pareve kosher. First produced commercially in January 2007 in Albany, New York, by Green Rabbit LLC, MimicCreme was primarily marketed toward vegans as an alternative to dairy products. The company website indicates that the company closed in November 2013 due to no longer having access to an appropriate production facility.

<span class="mw-page-title-main">Sucrose esters</span> Class of chemical compounds

Sucrose esters or sucrose fatty acid esters are a group of non-naturally occurring surfactants chemically synthesized from the esterification of sucrose and fatty acids. This group of substances is remarkable for the wide range of hydrophilic-lipophilic balance (HLB) that it covers. The polar sucrose moiety serves as a hydrophilic end of the molecule, while the long fatty acid chain serves as a lipophilic end of the molecule. Due to this amphipathic property, sucrose esters act as emulsifiers; i.e., they have the ability to bind both water and oil simultaneously. Depending on the HLB value, some can be used as water-in-oil emulsifiers, and some as oil-in-water emulsifiers. Sucrose esters are used in cosmetics, food preservatives, food additives, and other products. A class of sucrose esters with highly substituted hydroxyl groups, olestra, is also used as a fat replacer in food.

Sorbitan monopalmitate (SMP) is a food additive, permitted by the EU. It is entry E495 in the E number list of permitted food additives. It is also known under the trade name Span 40.
