Richard Chen is the former executive chef of Wing Lei, a Chinese restaurant inside Wynn Las Vegas. [1]
Chen was introduced to catering at the age of seven by his parents who ran a restaurant in Taiwan. The family moved to the United States and re-established a new restaurant in suburban Chicago where Richard continued assisting them.[ citation needed ] Chen graduated at the Culinary Institute of America in Hyde Park, New York. [2]
In 1986 he was appointed chef at the La Vista International Hotel (which was in December 1995 renamed as Marriott World Trade Center [3] ).
He then returned to Chicago to become a chef in Euro-French cuisine at the Ritz-Carlton Chicago.
In 2002, Chen became Chef de Cuisine and manager of the fusion restaurant Shanghai Terrace at The Peninsula Chicago. Chicago magazine named it as one of its "Best New Restaurants" in 2002 and Zagat listed it in the "Top Food, Service and Décor" category.
While at the Shanghai Terrace, Chen also became executive chef of Wing Lei [4] starting April 28, 2005 after an extensive recruitment campaign by Steve Wynn himself. [5] The 2008 Las Vegas Michelin Guide awarded it one star, making it the only Chinese restaurant in North America to have earned the honor. It has also received the 2008 AAA Four Diamond award. [6] The name Wing Lei is derived from the translation of the Chinese character for Wynn and means "forever prosperous".
Chen married Cathy Yee in the summer of 2006. Cathy owns the Chinese restaurant Ya Fei [7] [8] [9] in the Robinson neighborhood in Pittsburgh. Kathy herself was named Pittsburgh Magazine's Restaurateur of the Year. [8]
Chen then opened his contemporary Chinese restaurant, Richard Chen Pan Asian Cuisine, on August 1, 2008, in the recently re-identified Eastside development in East Liberty neighborhood of Pittsburgh [10] with executive chef Simon Lewis and general manager Alec Chipman and co-owner and wife Cathy Chen. It featured upscale dining for Pan-Asian cuisine in a fusion-inspired interior. [11] EDGEstudio from Pittsburgh's Garfield neighborhood designed the 120 seat, 4,600-square-foot (430 m2) interior. [12] In its short 9 months of operations, it became locally favoured [13] and was a semi-finalist for best new restaurant for the 2009 James Beard Foundation Award. [14] It temporarily closed April 29, 2009 [15] and permanently closed on April 30, 2009, citing economic concerns. [16] A pan-Asian restaurant has opened in the space. [17] Pittsburgh Magazine readers voted it the 2009 "Worst Loss to the Local Dining Scene". [18]
In May 2011, Chen left Wing Lei to start Kushi Yama in Amarillo, Texas. [19]
Chen has repeatedly explained to various interviewers how his French influenced light Chinese plates, which require impeccable technique in the making, differ so evidently from popular Chinese take-out food. [20]
Bellagio is a resort, luxury hotel, and casino on the Las Vegas Strip in Paradise, Nevada. It is owned by Blackstone Inc. and operated by MGM Resorts International. Bellagio was conceived by casino owner Steve Wynn, and was built on the former site of the Dunes hotel-casino. Wynn's company, Mirage Resorts, purchased the Dunes in 1992. Plans were announced in 1994 to replace it with Beau Rivage, a French-themed resort. In 1995, Wynn changed the project plans to instead theme it after the village of Bellagio, near Lake Como. The resort was designed by Jon Jerde. Construction began on November 1, 1995, with Marnell Corrao Associates as general contractor.
The MGM Grand Las Vegas is a hotel and casino located on the Las Vegas Strip in Paradise, Nevada. It is owned by Vici Properties and operated by MGM Resorts International. The resort was developed by Kirk Kerkorian through his company, MGM Grand, Inc. Kerkorian had previously developed another MGM Grand, opened on the Strip in 1973 and renamed Bally's in 1986.
Wynn Las Vegas, often simply referred to as Wynn, is a luxury resort and casino located on the Las Vegas Strip in Paradise, Nevada, United States. It is owned and operated by Wynn Resorts, and was built on the former site of the Desert Inn resort, which opened in 1950. Casino developer Steve Wynn purchased and closed the Desert Inn during 2000, with plans to build a new resort on the site. The design phase lasted two and a half years, and construction began on October 31, 2002, with Marnell Corrao Associates as general contractor. At a cost of $2.7 billion, Wynn Las Vegas was the most expensive resort ever built, beating Wynn's $1.6 billion Bellagio, which opened on the Strip in 1998.

Hakkasan is a Chinese restaurant first opened in Fitzrovia in London, England but has since expanded to many cities worldwide. The restaurant was founded in 2001 by Alan Yau, who was also behind the Wagamama Japanese restaurants and later the Yauatcha restaurant, also in London. It serves modern Cantonese cuisine fused with Western upscale dining experience. The Hakkasan group has also branched into hospitality and entertainment including a nightclub opened in Las Vegas.
Jean-Georges Vongerichten is a French chef. Vongerichten owns restaurants in Miami Beach, Las Vegas, London, Paris, Shanghai, and Tokyo, as well as New York's Jean-Georges restaurant and Tangará Jean Georges in São Paulo's Palácio Tangará, by Oetker Collection. He is head chef of Eden Rock, St Barths. Vongerichten is the author of five cookbooks, two with Mark Bittman.
Kerry Glen Simon was an American celebrity chef and restaurateur based in Las Vegas. Simon was also known by the moniker "Rock n' Roll Chef", given to him by Rolling Stone. He was the executive chef and proprietor at his namesake restaurant "Simon" at Palms Place in Las Vegas. His other restaurants included Simon LA, in Los Angeles, Simon Prime in Atlantic City, New Jersey, along with KGB and Carson Kitchen in Las Vegas.
José Ramón Andrés Puerta is a Spanish-American chef and restaurateur. Born in Spain, he moved to the United States in the early 1990s and since then, he has opened restaurants in several American cities. He has won a number of awards, both for his cooking, and his humanitarian work. He is a professor as well as the founder of the Global Food Institute at George Washington University.
Michael Morton is an American restaurateur. He is the co-founder of Morton Group which operates La Cave Wine & Food Hideaway inside Wynn Las Vegas, CRUSH inside MGM Grand and La Comida in Downtown Las Vegas. He is also the former owner and co-founder of N9NE Group and the son of Arnie Morton, the founder of the Morton's Steakhouse.

Encore Las Vegas is a luxury resort, casino and hotel located on the Las Vegas Strip in Paradise, Nevada. The resort is connected to its sister resort, Wynn Las Vegas, located directly south. Both are owned by Wynn Resorts and located on the former site of the Desert Inn resort, which Steve Wynn purchased and closed in 2000. Encore took the place of two Desert Inn hotel structures, the Palms and St. Andrews towers, both demolished in 2004. Construction of Encore began on April 28, 2006, the first anniversary of Wynn Las Vegas' opening. The Encore project, built by Tutor Saliba, cost $2.3 billion. It opened on December 22, 2008.

The restaurant, located at the MGM Grand Las Vegas in Las Vegas, Nevada, was rated 3 stars in 2009 by the Michelin Guide, 5-stars by Forbes Travel Guide, and has been ranked by Wine Spectator and Travel and Leisure to be among the finest restaurants in the world. It was ranked as one of the Top 5 best restaurants in the United States by Gourmet magazine in 2011.
Sixteen was an American restaurant on the sixteenth floor of the Trump International Hotel and Tower in the Near North Side community area of Chicago. It was one of three food and dining options in the hotel's room service offering. Sixteen opened in early February 2008, and an adjoining outdoor patio terrace, named The Terrace at T, opened on June 25, 2009 following the completion of the hotel's construction.
Pok Pok was a group of Thai restaurants based in Portland, Oregon, founded and led by chef Andy Ricker. Pok Pok won both local recognition and major industry awards, with The Oregonian describing the restaurant as "one of those quintessentially Portland institutions, a sort of rags-to-riches story of the street cart that became a restaurant that became a legend."

The name is derived from the artist Pablo Picasso and features the artist's paintings throughout the restaurant. The cuisine of Picasso was French with a Spanish influence, and the restaurant was known for its reinvention and interpretation of these cuisines. Paul Bartolotta is an American chef and restaurateur. Most recently he is known for his authentic style and his innovative approach to importing fresh seafood from Mediterranean waters. Paul Bartolotta has won the James Beard Foundation Award twice—once for Best Chef: Midwest, and again for Best Chef: Southwest (2009), at Bartolotta, Ristorante di Mare at Wynn Las Vegas. He is a recipient of the Insegna del Ristorante Italiano del Mondo, which was awarded to him in 1997 by Oscar Luigi Scalfaro, the President of Italy at the time.
Resorts World Las Vegas is a resort and casino on the Las Vegas Strip in Winchester, Nevada, United States. It is owned and operated by Genting Group as part of the Resorts World brand. It had been the site of the Stardust Resort and Casino until 2007. The Stardust was to be replaced by Echelon Place, a mixed-use project that was halted during the 2008 economic downturn. Genting bought the unfinished project in 2013, with plans to redevelop it as Resorts World Las Vegas, incorporating some of the Echelon buildings.
