Rose Knox (néeMarkward; November 18, 1857 – September 27, 1950) was an American businesswoman, who ran the Kind and Knox Gelatin Factory in Camden, New Jersey after her husband died. She won wide respect as one of the leading businesswomen of her time.
Knox was one of three girls born to David and Amanda Markward of Mansfield, Ohio. In the late 1870s, Rose and her family moved to Gloversville, New York, where she lived until 1896. Rose met her husband, Charles Briggs Knox, in 1881, and they married on February 15, 1883. Together, Rose and Charles had three children: a girl who died in childhood, and two sons, one of whom died in early adulthood. In 1896, the family moved to Johnstown to set up a gelatin business, after Charles Knox watched Rose making gelatin in her kitchen. The Charles B. Knox Gelatin Company was located in a large four-story factory building. Mr. and Mrs. Knox were very close: Charles shared all his business affairs with his wife, making them partners in the business. Rose wrote recipe booklets promoting Knox's gelatin product, over a million of which were distributed each year. [1] Progressive for his time, Charles also allocated his wife a weekly allowance which she could do with as she pleased. That taught Rose how to handle and budget money, which came in handy when she was running the gelatin business herself.
Knox became a businesswoman when her husband died in 1908, taking over his Knox Gelatin Factory. She made notable changes in the business. The first day she was there she permanently closed the back door of the factory, stating that all men and women were equal and that was the way she was going to be treating them: there was no need to have two separate doors. She also requested one of her husband's top executives to resign after he was overheard saying he would not work for a woman. Throughout the years to come, Mrs. Knox made many other changes. One of the most famous things she did was to create a five-day work week for her workers, and she also gave them two weeks of paid vacation, something that was unheard of before. [2] Mrs. Knox survived the Depression without having to release any of her workers. She was a Presbyterian in religion and a Republican in politics. [3] She died aged 93, in 1950.
Rose Knox, as one of the first business women in New York State, received many honors in her lifetime. In 1918, it was said that Rose Knox was one of the country's "most successful business women." She became the first woman on the board of directors of the American Grocery Manufacturers Association in 1929. In 1937, Mrs. Knox was voted as the woman who had contributed the most to American business by the New York State Federation of Business and Professional Women. And in 1950, the story of her life was told on "Cavalcade of America" which was broadcast from New York. Recently, in March 2007, she was honored during Women's History Month as a New York State Woman of Distinction. [4]
Gelatin or gelatine is a translucent, colorless, flavorless food ingredient, commonly derived from collagen taken from animal body parts. It is brittle when dry and rubbery when moist. It may also be referred to as hydrolyzed collagen, collagen hydrolysate, gelatine hydrolysate, hydrolyzed gelatine, and collagen peptides after it has undergone hydrolysis. It is commonly used as a gelling agent in food, beverages, medications, drug or vitamin capsules, photographic films, papers, and cosmetics.
Gelatin desserts are desserts made with a sweetened and flavoured processed collagen product (gelatin), which makes the dessert "set" from a liquid to a soft elastic solid gel. This kind of dessert was first recorded as "jelly" by Hannah Glasse in her 18th-century book The Art of Cookery, appearing in a layer of trifle. Jelly recipes are included in the 19th-century cookbooks of English food writers Eliza Acton and Mrs Beeton.

Jello salad is an American salad made with flavored gelatin, fruit, and sometimes grated carrots or other vegetables. Other ingredients may include cottage cheese, cream cheese, marshmallows, nuts, or pretzels. Jello salads were popular in the early 20th century and are now considered retro.
Bavarian cream, crème bavaroise or simply bavarois is a French dessert consisting of an egg-based cooked custard and gelatin or isinglass, into which whipped cream is folded. The mixture sets up in a cold mold and is unmolded for serving. Earlier versions, sometimes called fromage bavarois, did not include eggs or any actual cheese. One recipe using isinglass also calls for crumbled amaretto cookies, chocolate and other flavorings. One contemporary French recipe for "bavarois" is a savory preparation with a neufchâtel-type cheese and leeks, and is not a sweet dessert.
Miriam Leslie was an American publisher and author. She was the wife of Frank Leslie and the heir to his publishing business, which she developed into a paying concern from a state of precarious indebtedness. After her husband's death, she changed her own name to his, Frank Leslie. She made Carrie Chapman Catt a residuary legatee of her estate, to support enfranchising women. The activist established the Leslie Woman Suffrage Commission for this purpose.

Businessman Warren Buffett said of her, "One question I always ask myself in appraising a business is how I would like, assuming I had ample capital and skilled personnel, to compete with it. I’d rather wrestle grizzlies than compete with Mrs. B and her progeny. They buy brilliantly, they operate at expense ratios competitors don’t even dream about, and they then pass on to their customers much of the savings.
Ellen Louise Demorest was an American businesswoman, fashion arbiter and milliner, widely credited for inventing mass-produced tissue-paper dressmaking patterns. With her husband, William Jennings Demorest, she established a company to sell the patterns, which were adaptations of the latest French fashions, and a magazine to promote them in 1860. Her dressmaking patterns made French styles accessible to ordinary women, thus greatly influencing US fashion.

Martha Matilda Harper was an American businesswoman, entrepreneur, and inventor who launched modern retail franchising and then built an international network of 500 franchised hair salons that emphasized healthy hair care. Born in Canada, Harper was sent away by her father when she was seven to work as a domestic servant. She worked in that profession for 25 years before she saved enough money to start working full-time producing a hair tonic she invented. The product, and the creation of special hair salons that utilized it, was successful. Harper began franchising the salon model to low-income women, and by its peak the company included more than 500 franchises and an entire line of hair care products.
Agnes Bertha Marshall was an English culinary entrepreneur, inventor, and celebrity chef. An unusually prominent businesswoman for her time, Marshall was particularly known for her work on ice cream and other frozen desserts, which in Victorian England earned her the moniker "Queen of Ices". Marshall popularised ice cream in England and elsewhere at a time when it was still a novelty and is often regarded as the inventor of the modern ice cream cone. Through her work, Marshall may be largely responsible for both the look and popularity of ice cream today.
Sarah L. Knox-Goodrich was a women's rights activist who worked for women's suffrage in California in the late nineteenth century. Her first husband, William Knox, was a business man, banker, and state politician. Her second husband, Levi Goodrich, was an architect in Southern California. Knox-Goodrich used her wealth and her social position to push for equal employment, school suffrage, and voting rights.
Bromangelon was a gelatin dessert popular in the late 19th century and early 20th century. It was invented around 1895 by Leo Hirschfeld, who would later invent the Tootsie Roll. Bromangelon is regarded as the first commercially successful gelatin dessert powder, having been mass-marketed several years before Jell-O, which would eventually drive Bromangelon off the market.

Mary H. Dickerson was an African American businesswoman and clubwoman. Dickerson founded several women's groups in the New England area and in Newport, Rhode Island. Her dress shop catered to prominent clients in Newport and she was the first Black woman to open a shop on her block on Bellevue Avenue.
Sir George Francis Davis was a New Zealand born industrialist. He is notable mainly for his association with Davis Gelatine, Cockatoo Island Dockyard, and the Glen Davis Shale Oil Works, in Australia. Glen Davis, New South Wales is named after him.
