Simon Mahoney is a former Royal Marines young officer, social work team leader, freelance artist and author.
He initially pursued his career as a junior officer with the Royal Marines in 1960s. [1] He was diagnosed with uveitis in 2010 and had partially lost his eye sight at the age of 66. He lost his eye sight completely in 2018. [2]
He wrote his first book as an autobiography titled A Descent into Darkness which is based on his life story and elaborates about how he overcame the challenges after losing his eye sight completely. [3] [4] He later pursued his career as a writer and developed an interest in cooking soon after the death of his wife who died due to the stroke during lockdown which was imposed as a result of the COVID-19 pandemic. [4]
In 2020, he wrote his second book titled First Catch Your Rabbit which offers useful cooking tips for visually impaired and partially sighted people and blind, also to be found useful by widowers and students. [5] [6] [7] The book was published as an e-book in the latter part of 2020. Simon wrote the book with the help of using a specially adapted PC and word-processing software which was provided by the Blind Veterans UK organisation. [1]

Action for Blind People was a national sight loss charity in the United Kingdom, that provided help and support to blind and partially sighted people of all ages. In 2017 the organisation merged with the Royal National Institute of Blind People (RNIB) with which it had been in a partnership since 2009.
Heston Marc Blumenthal is an English celebrity chef, TV personality and food writer. Blumenthal is regarded as a pioneer of multi-sensory cooking, food pairing and flavour encapsulation. He came to public attention with unusual recipes, such as bacon-and-egg ice cream and snail porridge. His recipes for triple-cooked chips and soft-centred Scotch eggs have been widely imitated. He has advocated a scientific approach to cooking, for which he has been awarded honorary degrees from the universities of Reading, Bristol and London and made an honorary Fellow of the Royal Society of Chemistry.

In the absence of treatment such as corrective eyewear, assistive devices, and medical treatment – visual impairment may cause the individual difficulties with normal daily tasks including reading and walking. The terms low vision and blindness are often used for levels of impairment which are difficult or impossible to correct and significantly impact daily life. In addition to the various permanent conditions, fleeting temporary vision impairment, amaurosis fugax, may occur, and may indicate serious medical problems.

Blind artists are people who are physically unable to see normally, yet work in the visual arts. This seeming contradiction is overcome when one understands that only around 10% of all people with blindness can see absolutely nothing at all. As such most blind people can in fact perceive some level of light and form, and it is by applying this limited vision that many blind artists create intelligible art. Also, a blind person may once have been fully sighted and yet simply lost part of their vision through injury or illness. Blind artists are able to offer insight into the study of blindness and the ways in which art can be perceived by the blind, in order to better improve art education for the visually impaired.

Blind in Business is a British charity that helps blind and partially sighted students into employment following graduation by providing a free training and employment service. The charity offers technical help and training courses for schoolchildren with a visual impairment, while also supporting graduates and potential employers with training and technical help. It was founded in 1992 by three visually impaired graduates in order to help others in the same situation. The founders – Neil Heslop, a business planning manager with Northern Telecom who had recently experienced sight loss, Simon Meredith, a blind solicitor with Slaughter and May and Richard Hanson, a partially sighted solicitor with Cameron Markby Hewitt – were surprised to discover as many as 80 percent of people with a visual impairment were unemployed at that time, with very few in work able to pursue a career. Blind in Business was established as a charitable trust with the backing of the Royal National Institute for the Blind and with several high-profile supporters serving as its trustees, including Bank of England associate director Pen Kent, Standard Chartered chairman Rodney Galpin and Conservative MP Emma Nicholson. The organisation's head offices are based in London, but Blind in Business operates on a United Kingdom wide basis.

Michael Solomonov is an Israeli chef known for his restaurants in Center City, Philadelphia. His first restaurant Zahav, founded in 2008, has received national recognition including the James Beard Foundation "Outstanding Restaurant" in 2019. Solomonov was also awarded Best Chef: Mid-Atlantic in 2011, Cookbook of the Year in 2016, and Outstanding Chef in 2017 from the James Beard Foundation.
