Tiswin (also known as Tesgüino and Tejuino in Mexico) is an alcoholic beverage brewed from corn. Tiswin is also the sacred saguaro wine of the Tohono O'odham, a group of aboriginal Americans who reside primarily in the Sonoran Desert of the southeastern Arizona and northwest Mexico.
The saguaro, the largest cactus in the world, is in many respects the sacred tree of the Tohono O'odham, who reside in the Sonoran Desert of southeastern Arizona and northwest Mexico. From the fruit of the saguaro they make a sacred fermentation called tiswin or sometimes nawai.
The old Apache recipe for making tiswin called for soaking the kernels of maize ( Zea mays subsp. mays ) until they would sprout and reach a size of 1⁄2-inch, at which time they are removed from the water and ground into a pulp-like mash. They are then boiled (for several hours) in hot water and strained. The resulting mash was then sweetened with either mesquite flour or saguaro syrup, and allowed to ferment in an earthenware brewing jar that was never washed in order to retain the organisms' efficacy needed for fermentation. The finished product had to be drunk within a few hours after it was prepared, or the alcohol would become acetic, making it taste sour. [1]
The Native American Indians of New Mexico preserved a different practice when making tiswin (which they called tesquino). There, they would take 10 pounds of maize which they would roast in an oven until light-brown. After roasting, the corn would then be coarsely ground and put inside a large, earthenware crock, where 4 gallons of water were added. To this, 8 pre-packaged cones of piloncillo (whole cane sugar) were added, along with 6 cinnamon sticks and 3 orange peels for flavoring. The brew was allowed to sit 4 or 5 days, in places where the weather was warm, or longer in places where there was cold weather. Afterwards, the liquid was strained and served. [1]
An alternative Native American recipe, made by the Tohono Oʼodham, was to take the fruit of the saguaro cactus in June, and to spread the fruit on a thatch in a tree, so as to allow it to dry. The cactus fruit was then taken up and boiled in water and then strained through a mat of grass or branches to remove the seeds. The juice was boiled down to a syrup and placed hot in an earthenware vessel (olla), the top of which vessel then covered and tied with a cloth followed by sealing with a bit of broken pottery, covered with mud and wet clay. When the saguaro festival arrived, these earthenware vessels were opened and the syrup mixed with water and allowed to ferment, making tiswin. [2]
An inability to obtain tiswin was one of the reasons Geronimo and others left their reservation and attempted to return to the land of their ancestors. [3] [4]
The Tohono Oʼodham are a Native American people of the Sonoran Desert, residing primarily in the U.S. state of Arizona and the northern Mexican state of Sonora. The federally recognized tribe is known in the United States as the Tohono Oʼodham Nation.

In both the pre- and post-Spanish conquest periods, corn beer made from a variety of maize landraces has been the most common form of chicha. However, chicha is also made from a variety of other cultigens and wild plants, including, among others, quinoa, kañiwa, peanut, manioc, palm fruit, rice, potato, oca, and chañar. There are many regional variations of chicha. In the Inca Empire, chicha had ceremonial and ritual uses.
Organ Pipe Cactus National Monument is a U.S. national monument and UNESCO biosphere reserve located in extreme southern Arizona that shares a border with the Mexican state of Sonora. The park is the only place in the United States where the senita and organ pipe cactus grow wild. Along with this species, many other types of cacti and other desert flora native to the Yuma Desert section of the Sonoran Desert region grow in the park. Organ Pipe Cactus National Monument is 517 sq mi (1,340 km2) in size. In 1976 the monument was declared a Biosphere Reserve by UNESCO, and in 1977 95% of Organ Pipe Cactus was declared a wilderness area.
In brewing, adjuncts are unmalted grains or grain products used in brewing beer which supplement the main mash ingredient. This is often done with the intention of cutting costs, but sometimes also to create an additional feature, such as better foam retention, flavours or nutritional value or additives. Both solid and liquid adjuncts are commonly used.

Tesgüino is an artisanal corn beer produced by several Yuto-Aztec people. The Tarahumara people regard the beer as sacred, and it forms a significant part of their society. Anthropologist John Kennedy reports that "the average Tarahumaras spends at least 100 days per year directly concerned with tesgüino and much of this time under its influence or aftereffects."
The Tohono Oʼodham Nation is the collective government body of the Tohono Oʼodham tribe in the United States. The Tohono Oʼodham Nation governs four separate pieces of land with a combined area of 2.8 million acres (11,330 km2), approximately the size of Connecticut and the second largest Indigenous land holding in the United States. These lands are located within the Sonoran Desert of south central Arizona and border the Mexico–United States border for 74 miles (119 km) along its southern border. The Nation is organized into 11 local districts and employs a tripartite system of government. Sells is the Nation's largest community and functions as its capital. The Nation has approximately 34,000 enrolled members, the majority of whom live off of the reservations.
The saguaro is a tree-like cactus species in the monotypic genus Carnegiea that can grow to be over 12 meters tall. It is native to the Sonoran Desert in Arizona, the Mexican state of Sonora, and the Whipple Mountains and Imperial County areas of California. The saguaro blossom is the state wildflower of Arizona. Its scientific name is given in honor of Andrew Carnegie. In 1994, Saguaro National Park, near Tucson, Arizona, was designated to help protect this species and its habitat.
Tejuino is a cold fermented beverage made from corn and popularly consumed in the Mexican states of Jalisco and Chihuahua. Tejuino is usually made from corn dough, the same kind used for tortillas and tamales. The dough is mixed with water and piloncillo and boiled until the liquid is very thick. The liquid is then allowed to ferment very slightly. The resulting drink is generally served cold, with lime juice, a pinch of salt and a scoop of shaved ice or lime sorbet.
Chicha de jora is a corn beer or chicha prepared by germinating maize, extracting the malt sugars, boiling the wort, and fermenting it in large vessels for several days. The process is essentially similar to the process for the production of European-style beer. Some add quinoa or other adjuncts to give it consistency before it is boiled down. Chancaca, a hard raw form of cane sugar, helps with the fermentation process.

The Indigenous peoples of the North American Southwest are those in the current states of Colorado, Arizona, New Mexico, Utah, and Nevada in the western United States, and the states of Sonora and Chihuahua in northern Mexico. An often quoted statement from Erik Reed (1964) defined the Greater Southwest culture area as extending north to south from Durango, Mexico to Durango, Colorado and east to west from Las Vegas, Nevada to Las Vegas, New Mexico. Other names sometimes used to define the region include "American Southwest", "Northern Mexico", "Chichimeca", and "Oasisamerica/Aridoamerica". This region has long been occupied by hunter-gatherers and agricultural people.
