World Young Chef Young Waiter and Young Mixologist is a global hospitality competition for chefs, waiters, and mixologist 28 and under. [1]

Contents

History

Since the launch in 1979, the competition ran continuously until a hiatus from 2012 until 2019. [2] The competition was designed to promote hospitality as a career, a profession and a vocation. [3]

Past winners and judges include Theo Randall, Mark Sargeant, Marcus Wareing, Simon King, John Torode, Raymond Blanc, Heston Blumenthal and Charles Forte. [4] [5] [6] [7]

Relaunch

The competition returned in 2019, in partnership with The Nth Degree Global, UKHospitality and the Restaurant Association, with Robert Walton MBE as chairman and Sean Valentine FIH as Managing Director. Adam Handling is the current Head Judge Chef whilst Simon King is the Head Judge Waiter. [8]

2019 Competition

The 2019 Young Chef Young Waiter finals were held on 28 and 29 October. The judging panel included Emily Roux, Tom Kerridge and Claude Bosi among others. [9]

16 chefs and 16 waiters formed the group of 32 finalists. Within the 32 finalists were three apiece from The Fat Duck, The Hand & Flowers and Hide. [10]

Richard Henderson from the Restaurant Hywel Jones, Lucknam Park was crowned the winning Young Chef, whilst Alessandro Calzavacca representing the Jean-Georges at The Connaught was named the Young Waiter. [10] The winners were announced at Quaglino's restaurant in an event presented by John Torode. [11]

2020 Competition

2020 saw the introduction of the Young Chef Young Waiter China & South East Asia competition, led by chairwoman Ching He Huang. [12]

The 2020 finals were held at The Dorchester. Having originally been scheduled for late 2020, the competition was rescheduled to May 2021 as a result of the COVID-19 pandemic. [13]

Theo Randall was the Head Chef Judge, Simon King the Head Waiter Judge with Ching He Huang announcing the winners of the China & South East Asia competition.

The main sponsors for the 2020 competition were the Mercedes Benz Fleet & Business department, who presented the winners with a complimentary Mercedes Benz A Class for a year. [14]

Florian David, representing The Waterside Inn won the Young Waiter category, with Peter Meechan from Gleneagles crowned the Young Chef. [15] In the China & South East Asia competition, Marie Bouquet from Tíng, Shangri-La Hotel at The Shard was crowned the Young Waiter whilst Tibor Palast from the Sushi Bar, Harrods won the Young Chef. [16]

2021 Competition

In 2021, Young Chef Young Waiter partnered with the Department for International Trade. The semi-finals and finals took place at the Marriott Aloft Creek Hotel in Dubai, with the winners announced at the UK Pavilion at the Expo 2020 Dubai. [17] [18]

Adam Handling replaced Theo Randall as the Head Chef Judge, whilst Simon King remained as Head Waiter Judge. [8]

Sophie Heyer, representing The Promenade at The Dorchester was crowned the Young Waiter, with Connor Blades from Ugly Butterfly being crowned Young Chef. [17]

2022 Competition

The finals for the Young Chef Young Waiter England took place on 18–19 July 2022, [19] whilst the World Young Chef Young Waiter final was held on 16 November 2022. The world final, which took place in Monaco, saw the champions of eight countries competing against each other, including the Cayman Islands. [20] [21]

Miltan Masha from the Monarch Theatre was the winning chef in the England 2022 competition, whilst Elisa Doisneau from the Kitchen Table won the waiter competition. [22]

The winners of the World Young Chef Young Waiter competition were both from Wales. Ali Halbert from Heaney's Cardiff won the Young Chef category, whilst Tilly Morris representing Grove of Narberth won the Young Waiter award. [23]

The Prince Albert of Monaco was the guest of honour at the event. [24]

Jason Atherton is an English chef and restaurateur. His flagship restaurant Pollen Street Social gained a Michelin Star in 2011, its opening year. He was the Executive Chef at Gordon Ramsay's Michelin starred Maze in London until 30 April 2010. In 2014 he co-hosted the Sky Living TV series My Kitchen Rules.

MasterChef: The Professionals is a BBC television competitive cooking show which aired on BBC Two from 2008 to 2019, and on BBC One since 2020. It is a spin-off from the main MasterChef series, for professional working chefs. Introduced in 2008, Gregg Wallace and India Fisher reprised their roles as co-judge and voiceover respectively. Michel Roux Jr., a two-Michelin-star chef, assisted, from 2009, by his sous-chef Monica Galetti. Since 2011, Sean Pertwee has taken over Fisher's role as voiceover.

Clare Smyth is a Northern Irish chef. She is the Chef Patron of three Michelin starred Core by Clare Smyth which opened in 2017. Previously she was Chef Patron at Restaurant Gordon Ramsay from 2012 to 2016, won the Chef of the Year award in 2013, and achieved a perfect score in the 2015 edition of the Good Food Guide. Smyth has also appeared on television shows such as Masterchef and Saturday Kitchen. Smyth also notably catered at Prince Harry and Meghan Markle's 2018 wedding.

The British Hospitality Association (BHA), incorporating The Restaurant Association (RA), was a non-government representative body for hotels, clubs, restaurants, leisure outlets and other hospitality-related organisations nationwide headquartered in London, UK. In 2019 it merged with the Association of Licensed Multiple Retailers (ALMR) to form UKHospitality. The association promotes the interests of the hospitality industry to the Government Ministers, Members of Parliament (MPs), Members of the Scottish Parliament (MSPs), Members of the Senedd (MSs), MEPs, the EU Commission, the City and the Media. The association operates by membership-based system.

The Roux Scholarship is a cooking competition for young chefs in the UK. Set up by the brothers Michel and Albert Roux, and now run by their sons Alain Roux and Michel Roux Jr. It was first run in 1984 with Andrew Fairlie being named the first winner. It has since been run on an annual basis, with winners undertaking a three-month placement in a Michelin-starred restaurant.

Joel Kissin, originally from New Zealand, is a restaurateur who was the co-founder, managing director, and shareholder of Conran Restaurants. Kissin has been involved in opening a dozen restaurants in London and New York.

Quaglino's is a restaurant in central London which was founded in 1929, closed in 1977, and revived in 1993. From the 1930s through the 1950s, it was popular among the British aristocracy, including the royal family, many of whom were regulars, and was a haunt of London's café society. It offered dinner, music and dancing. In the 1960s, it was sold to a succession of hotel companies, and its reputation faded; it closed in 1977.

Adam Peter Ritchie Handling is a British chef and restaurateur. He is the owner of the Adam Handling Restaurant Group which encompasses four food and drink venues across United Kingdom.

<i>Bake Off: The Professionals</i> British TV series or program

Bake Off: The Professionals is a British television baking competition featuring teams of professional pastry chefs pitted against one another over two challenges. The series is a spin-off from The Great British Bake Off, and originally titled Bake Off: Crème de la Crème on the BBC. Its first episode was screened on BBC Two on 29 March 2016. The third series moved to Channel 4 and renamed Bake Off: The Professionals to join The Great British Bake Off after the BBC failed to renew the series.

Bertus Hendrik Basson is a South African chef, restaurateur, entrepreneur and TV personality best known for his work as head chef of Overture in Stellenbosch, Western Cape.

Ping Coombes is a British cook and winner of 2014's MasterChef competition broadcast on BBC One.

Philip Howard is a South African-British chef, chef patron, and restaurateur. He gained cooking skills while working under Marco Pierre White at Harveys and Simon Hopkinson at Bibendum. Howard and White's then-business partner Nigel Platts-Martin opened London restaurant The Square in December 1991, despite both of their inexperience in operating a restaurant at the time.

Tom Aikens, also named Tom Aitkens, is an English Michelin-starred chef. Aikens briefly worked for chefs in London and Paris restaurants. Under his tenure from 1996 to 1999 as head chef and then chef patron, Pied à Terre earned its two Michelin stars in January 1997.

Robert Walton MBE is a British restaurateur who is currently serving as the president of the Restaurant Association.
