Buknu is a powdered mixture of several spices popular in parts of Uttar Pradesh, India.

Spice mix Blend of spices or herbs

Spice mixes are blended spices or herbs. When a certain combination of herbs or spices is called for in many different recipes, it is convenient to blend these ingredients beforehand. Blends such as chili powder, curry powder, herbes de Provence, garlic salt, and other seasoned salts are traditionally sold pre-made by grocers, and sometimes baking blends such as pumpkin pie spice are also available. These spice mixes are also easily made by the home cook for later use.

Uttar Pradesh State in India

Uttar Pradesh is a state in northern India. With roughly 200 million inhabitants, it is the most populous state in India as well as the most populous country subdivision in the world. It was created on 1 April 1937 as the United Provinces of Agra and Oudh during British rule, and was renamed Uttar Pradesh in 1950. The state is divided into 18 divisions and 75 districts with the capital being Lucknow. The main ethnic group is the Hindavi people, forming the demographic plurality. On 9 November 2000, a new state, Uttarakhand, was carved out from the state's Himalayan hill region. The two major rivers of the state, the Ganga and Yamuna, join at Allahabad (Prayagraj) and then flow as the Ganga further east. Hindi is the most widely spoken language and is also the official language of the state, along with Urdu.

Buknu is a very ancient recipe and is claimed to have medicinal values. It is used as both a spice and a condiment. Buknu's main ingredients include amchoor, salt, turmeric, cumin seeds, asafoetida, black cumin, black cardamom, and oil. [1] [2] [3]

Amchoor or aamchur or amchur, also referred to as mango powder, is a fruity spice powder made from dried unripe green mangoes and is used as a citrusy seasoning. It is mostly produced in India, and is used to flavor foods and add the nutritional benefits of mangoes when the fresh fruit is out of season.

Turmeric is a flowering plant, Curcuma longa of the ginger family, Zingiberaceae, the roots of which are used in cooking. The plant is a perennial, rhizomatous, herbaceous plant native to the Indian subcontinent and Southeast Asia, that requires temperatures between 20 and 30 °C and a considerable amount of annual rainfall to thrive. Plants are gathered each year for their rhizomes, some for propagation in the following season and some for consumption.

Rasam

Rasam, chaaru, saaru or kabir is a South Indian dish, traditionally prepared using kokum or tamarind juice as a base, with the addition of tomato, chili pepper, pepper, cumin and other spices as seasonings. Steamed lentils can be added along with any preferred vegetables. Nowadays, all the seasonings required are combined and ground beforehand into rasam powder, which is available commercially. Chilled prepared versions are also marketed commercially.

Baati is a hard, unleavened bread cooked in most of areas of Rajasthan, and in some parts of Madhya Pradesh and Gujarat states of India. It is prized for its long shelf life and high nutritional content, and, in desert areas, for the minimal quantity of water required for its preparation. Baati is commonly eaten with dal, hence also referred to as dal baati. In some regions, especially Madhya Pradesh, it is also paired with a roasted aubergine mash called bharta. Baingan bharta is a dish from the Indian subcontinent that originated in the Punjab region. 'Baingan ka bharta' is a part of the national cuisines of all nation states of the Indian subcontinent.
