Hamilton Distillers, Inc. is a private family-owned and operated distillery company, founded by Stephen Paul in 2006, headquartered in Tucson, Arizona. [1] The company produces and markets three Single Malt Whiskey Del Bac labels. [2] Its current distillery facility, called Hamilton Distillers, is located in west Tucson, Arizona. Hamilton is the first craft distillery established in Southern Arizona since prohibition and the largest whiskey producer in the Tucson metro region. [3]

History

The Hamilton Distillers concept was developed by American wood worker Stephen Paul and his daughter Amanda Paul in 2006. [4] In the mid 1980s the Paul's opened a boutique furniture company Arroyo Design. [5] The Hamilton Distillers product grew out of the use of mesquite and was developed to capture the unique taste of this arid climate tree and the Sonoran desert. Each of the three inaugural Hamilton Whiskey products share the name Del Bac with the Spanish Colonial Mission San Xavier del Bac founded in 1692 by Padre Eusebio Kino, outside of current day Tucson. Del Bac is the physical location near Tucson. In 2015 Hamilton Distillers was named by Playboy Magazine as Arizona's best spirit. [6]

The Master Distillers of Hamilton since its founding have been Paul joined in 2013 by Nathan Thompson-Avolino. [7]

Product description

Distillation and aging

Del Bac is a single malt whiskey, aged in charred new American oak barrels. [8] Unlike traditional peated Scotch, the Sonoran desert product is malted over mesquite instead of peat. [9]

Packaging

Each bottle is bottled by hand, with each label hand-signed by the distiller. The bottling process is done by volunteers, who receive a free bottle of Whiskey Del Bac upon completion of the bottling crew. Requests to volunteer are available on Whiskey Del Bac's website. The bottle features hand letterpress label printed on a Chandler & Price press with gold foil and features a 19th century etching of a giant saguaro cactus. [10]

Irish whiskey was once the most popular spirit in the world, though a long period of decline from the late 19th century onwards greatly damaged the industry, so much so that although Ireland boasted at least 28 distilleries in the 1890s, by 1966 this number had fallen to just two, and by 1972 the remaining distilleries, Bushmills Distillery and Old Midleton Distillery, were owned by just one company, Irish Distillers.

Jim Beam Brand of bourbon whiskey

Jim Beam is an American brand of bourbon whiskey produced in Clermont, Kentucky, by Beam Suntory. It is one of the best-selling brands of bourbon in the world. Since 1795, seven generations of the Beam family have been involved in whiskey production for the company that produces the brand. The brand name became "Jim Beam" in 1943 in honor of James B. Beam, who rebuilt the business after Prohibition ended. Previously produced by the Beam family and later owned by the Fortune Brands holding company, the brand was purchased by Suntory Holdings in 2014.

Heaven Hill American distillery company

Heaven Hill Distilleries, Inc. is a private, American family-owned and operated distillery founded in 1935 and headquartered in Bardstown, Kentucky, that produces and markets the Heaven Hill brand of Kentucky Straight Bourbon Whiskey and a variety of other distilled spirits. Its current distillery facility, called the Heaven Hill Bernheim distillery, is in Louisville, Kentucky. It is the seventh-largest alcohol supplier in the United States, the second-largest holder of bourbon whiskey inventory in the world, the largest, independent, family-owned and operated producer and marketer of distilled spirits in the United States, and the only large family-owned distillery company headquartered in Kentucky.

Old Bushmills Distillery

The Old Bushmills Distillery is an alcohol distillery in Bushmills, County Antrim, Northern Ireland, owned by Casa Cuervo. Bushmills Distillery uses water drawn from Saint Columb's Rill, which is a tributary of the River Bush. The distillery is a popular tourist attraction, with around 120,000 visitors per year.

Bottled in bond

Bottled in bond is a label for an American-made distilled beverage that has been aged and bottled according to a set of legal regulations contained in the United States government's Standards of Identity for Distilled Spirits, as originally laid out in the Bottled-in-Bond Act of 1897. As a reaction to widespread adulteration in American whiskey, the act made the federal government the guarantor of a spirit's authenticity, gave producers a tax incentive for participating, and helped ensure proper accounting and the eventual collection of the tax that was due. Although the regulations apply to all spirits, most bonded spirits are whiskeys in practice.

Jameson is a blended Irish whiskey produced by the Irish Distillers subsidiary of Pernod Ricard. Originally one of the six main Dublin Whiskeys at the Jameson Distillery Bow St., Jameson is now distilled at the New Midleton Distillery in County Cork. It is by far the best-selling Irish whiskey in the world; in 2019, annual sales passed 8 million cases. It has been sold internationally since the early 19th century, and is available to buy in over 130 countries.

Stranahans Colorado Whiskey

Stranahan's Colorado Whiskey is a 94 proof, small batch whiskey distilled in Denver, Colorado. Stranahan's was the first modern microdistillery to legally make whiskey in Colorado, and an early craft whiskey distiller in the United States.

Willett Distillery

Willett Distillery, also known as Kentucky Bourbon Distillers (KBD), Ltd., is a private family-owned and -operated company that produces bourbon and rye whiskey. Over the years the company has bottled whiskeys that range from 2 years of aging maturity up to 28 years.

It has been common practice in the whisky industry for more than a century for distilleries to sell barrels of whisky to blenders and independent bottlers as a means of making additional income. In fact, some distilleries exist solely to serve independent bottlers, and do not market any brands themselves.

Willett Pot Still Reserve

Willett Pot Still Reserve Bourbon is brand of a bourbon whiskey produced in Bardstown, Kentucky by the Willett Distillery. It is a Kentucky straight bourbon whiskey brand introduced in 2008 and bottled at 47% abv, with 8–10 year aging. It is sold in glass 750 ml and 1.75 liter bottles. The company is identified on the product label as the Willett Distilling Company, which was the original name of the company until its name was changed in 1984 to Kentucky Bourbon Distillers, Ltd. (KBD). In October 2012, the company announced that it would return to using the Willett name as its primary business name. Recent bottlings are identified on the labels as a small batch bourbon, whereas it was originally released as a single barrel bourbon.

Copper Fox Distillery

Copper Fox Distillery is a distillery that produces American whiskey in Sperryville, Virginia and Williamsburg, VA. The owner and operator of Copper Fox Distillery is Rick Wasmund.

MGP of Indiana, formerly known as LDI, is a distillery in Lawrenceburg, Indiana, producing spirits for private label sale. These are sold under about 50 different brand names by various bottling companies, with a recent addition of their own products, Till Vodka, George Remus Bourbon, and Rossville Union Straight Rye Whiskey. The facility's largest customer is the London-based multinational beverage giant Diageo.

Knappogue Castle Irish Whiskey is a brand of premium single malt Irish whiskey produced by Castle Brands Inc. It is one of the few independent bottlings of Irish whiskey currently available on the market. The brand is named for historic Knappogue Castle in County Clare, Ireland, originally built by Clan MacNamara in 1467. Knappogue Castle is known for bottling one of the oldest and rarest known Irish whiskies, Knappogue Castle 1951, a pot still whiskey produced at the now-defunct B. Daly Distillery.

Stephen Paul is American woodworker and craft distiller from the state of Arizona. Paul founded furniture company Arroyo Design known for the production of fine mesquite furniture and has been featured in national and regional magazines including: Old House Interiors, House Beautiful, Metropolitan Home, and Phoenix Home and Garden. In 2006, Paul founded Hamilton Distillers, the largest Whiskey Distillery in Southern Arizona.

Stark Spirits Distillery is an artisan distillery in Pasadena, California, that produces a range of alcoholic beverages under the direction of Head Distiller Greg Stark. The micro-distillery is owned by husband and wife, Greg Stark and Karen Robinson-Stark. Stark Spirits is located just blocks from the Pasadena Rose Bowl. It is Pasadena's first micro-distillery, currently its only distillery, and one of two distilleries operating in Los Angeles County. Stark Spirits is a Certified Craft Distillery, certified by the American Distilling Institute. The Pasadena micro-distillery is known for producing hand crafted small batches of these spirits currently: whiskey, rum, gin, brandy.
